Daniel is the chef at Oak Hills Country Club in Ada, Oklahoma. He was born in 1965 in New York at West Point Mili-tary Academy and since then, has found himself peppered across the United States. To be closer to family, he wound up here in Ada in 2009. Now we get to enjoy his cooking expertise!

1 Pint of raspberries1 Pint of blackberries1 Qt of strawberries2 Tbsp aged balsamic vinegar (trust me)1/4 Cup granulated sugar1 Pint heavy whipping cream1/2 Cup granulated sugar1 12 Pack of 3 inch puff pastry squares

Slice strawberries then combine raspberries and blackberries in a glass bowl. Add the balsamic vinegar and sugar, and stir gently. Wrap and refrigerate for at least one hour.

In a stainless steel bowl add the cream, sugar and vanilla. Whip vigor-ously with a wire wisk until you get high peaks (you may also use a kitchen aid mixer on high, but do not whip too much or you will end up with sweet butter. If that happens, dont throw it away, it will be great on pancakes for breakfast!).When you finally get the whipped cream perfect, wrap and refriger-ate

Pre heat oven to 400. Place the pastry squares on a baking sheet and put in the oven for about 20 minutes. When the pastry is high and golden it is done . Let these cool before assembling.

Put just a smidge of the whipped cream on the center of the plate to anchor the first pastry. On top of that goes the first of the berries followed by a dollop of whipped cream. Stack one more pastry on top and repeat the berries and cream. Drizzle some of the juice from the berries on the top of the napoleon, plate and enjoy.

Use the leftover berries and whipped cream on those pancakes in the morning with some sweet butter .

from the computer and just focus on what he wants to do. I find myself to be much more pleasant when I am not trying to balance playing with my son and checking emails at the same time. Just the other day we were in the pool and most times I just like to swim around doing my own thing, but not this time. I completely forgot about myself and just asked this mind blowing question, “What do you want to do?” He told me what he wanted to do, and we did it. We laughed and had more fun that day simply because I made it all about him. However, we did end up attempting some advanced stunts and he ended up with a bloody nose and a scrape on his head, but we laughed it off with a juice box and a bag of Cheetos.

It’s not enough just to live in the same house. We need to engage with our children on a daily basis. They don’t ask much, that is unless they are about 4, then the questions never end. As fathers, we just need to be willing to listen and put away the distractions so we can have quality time with our kids. Remember the stats from earlier? What father ever says, “I just want my kids to be poor, use drugs and experience behavioral problems”? We need to choose to be present in our kids lives. We need to learn to make it all about them sometimes. We need to learn what is important to them and then act on it. There is no scientific approach or formula, just a simple choice to be there. Well dads, let’s do our best to live up to those words on the cards we receive each June, and let’s never forget that everyday is a father’s day to make a positive impact in the lives of his children. ■

Well men, if you have just one child, then everyday is a father’s day. A father-child relationship is as special as it is critical. According to 2009 U.S. Census Bureau data, over 24 million children live apart from their biological fathers. That is 1 out of every 3 (33%) children in America. In 1960, only 11% of children lived in father-absent homes. Children who live absent their biological fathers are, on average, at least two to three times more likely to be poor, to use drugs, to experience educational, health, emotional and behavioral problems, to be victims of child abuse, and to engage in criminal behavior than their peers who live with their married, biological (or adoptive) parents. Hopefully these stats haven’t pro-gressed like technology over the past three years, nonetheless, fathers should feel an urgency to be present in the lives of their children. With most men work-ing until 5:00 during the week, we only have a limited time to make an impact on the lives of our children. The sad news is we have often given our best up until the time card is punched and when we walk through the doors of our homes, we are running on fumes. It’s a shame we settle so often to give our children the leftovers of ourselves. So, are we to attempt to make it all up on the weekends or the chance we get to take a vacation? Not at all. We just need to choose to make the most of every opportunity we have...after all, we chose to give our best at work.

All of our lives have been touched, in some way, by cancer; we all know people who have perished and also those who currently fight to survive. It is a sad reality of our time. However, the American

Cancer Society, through their signature event, brings hope, camaraderie, and light to such a dark subject. Relay for Life is not just a fundraiser for research, education, and patient programs; it is a celebration of life and our very will to live.

By the time 7:00 pm on June 15th rolls around at the Ada High track and Relay for Life begins, all of the fundraising has been accomplished already. Any money they raise there, through their auction, food venders, and luminary bags, is extra (though still needed). Through the course of the year, teams of 8-15 people raise money. Some teams have yard sales, bake sales, sponsors—whatever they can

think of in order to help the cause. The hard work is done year round so that by the time Relay for Life arrives, the participants, as well as the larger community, can gather for a fun-filled celebration of life and memory.

The event lasts twelve hours, though the organizers and volunteers put in many more than that. At 7:00 pm the opening ceremonies begin and the corporate sponsors are introduced. Afterward, the survivors do a lap around the track, showing their solidarity to push forward through their struggles. Around 7:30, everyone starts playing games and cooking. The track transforms into a campsite, with the smell of food wafting through the air and laughter floating on the breeze. At 8:00 an auction will take place, giving people the opportunity to bid on items while also helping a very worthy cause. Once 9:30 arrives, things become a bit more solemn as luminary bags are placed

around the track. These are $5 each and are purchased in order to remember those who have passed. The bags are lit with candles and burn throughout the night—the glowing presence of those no longer with us. After the bags are placed, everyone does a silent lap around the track, walking with those who are gone, remembering them, and renewing their own will to survive. At midnight, a fight back ceremony takes place, giving further strength to the survivors, friends, and families.

Even though the fight back ceremony is the last event until closing ceremonies at 6:00 am the next morning, the night is only beginning. The participants stay up all night long, laughing, consoling, and strengthening each other with their own wisdom and experience. They play games and do Zumba. They listen to music—provided by both live bands and a dj. Though the money goes to cancer research, education, and patient care, this is not an event just for those who are currently fighting; it is for the entire community and the more people that come out to experience this celebration, the better for everyone.

The money that’s raised leading up to this event is used in amazing ways. Only 3% goes to management and administrative cost; this is thanks to the wonderful volunteers that make this possible. Of the remaining funds, 17% is put back into the fundraising program, trying to guarantee that each year is more successful than the previous. This leaves an astounding 80% of funds that goes directly into programs: 18% to prevention and detection, 29% to patient services, and 33% to national research, information centers, and other national activities. The goal for this year is $155,000 and this money will do a lot of good helping with everything from gas cards and rides to get to treatment to the Look Good, Feel Better program which brings in trained cosmetologists to show survivors how to wear and care for wigs and apply makeup effectively after their treatment has begun. These programs don’t just cater to the physical struggles of cancer, but the emotional ones as well—treating the whole person.

So, on Friday, June 15th, come to the Ada High track and help celebrate life and tenacity. Eat some good food, listen to music, play games, participate in the auction—enjoy every moment while you chat and laugh and love with both old friends and future friends. They are three of the most dreaded words in the English language: you have cancer. Unfortunately, over a million people a year in the US have to hear those words. For Stacey Stewart, they came in December of 2010. She had been sick for year, with all of the symptoms, but it was then that she was finally diagnosed with thyroid cancer. Though the news was devastating, she could find some relief in knowing why she had felt so bad for so long. She had a name for her enemy and prepared to fight it head on with all the gumption and tenacity within her.

She has had many partners in her battle, though. Family and friends have stood beside her and her faith has bolstered her spirit. She refuses to give up and is a self-proclaimed “cancer warrior.” Her facebook page, “Stacey Stewart Will Beat Cancer” not only provides updates on her progress, but also inspiration for those who also battle. She has managed to keep a tremendous sense of humor, taunting her disease with updates such as, “Hey cancer! You’re ugly and your momma dresses you funny!”

One of the things that has bolstered her spirit the most, though, has been the Relay for Life. Last year was Stacey’s first time to do a survivor lap, and, as she states, “It was a life event I will never forget. It made me realize that there are survivors of every age and every background…people who have been survivors for large portions of their lives, even. It filled me with renewed hope and determination to be there. It’s great to be able to bond with other survivors. Cancer doesn’t discriminate…it doesn’t care how young or old we are, how much money we make, or what we look like. I look forward to the day when we can all eradicate this disease together. The Relay for Life is a very big step in that direction. It impacted my life so positively to be there that I’ve looked forward to it all year. It’s really important to me, personally, to be there. It’s great to see the community celebrate the lives of those who are battling, have battled, and who battle no more.” Stacey continues to battle and to strengthen those around her, whether they have cancer or not, to battle with her.

We all look for inspiration in our day-to-day lives, in the people that we meet. Stacey Stewart is one of these true inspirations. She doesn’t let cancer beat her down; she doesn’t let it ruin her fun. And, thankfully, she’s making progress and is finally on the right dose of medicine. Friends, family, faith, fun, and the refusal to give up—these are the weapons in Stacey’s arsenal. And we could all learn a little something from her.

Saving on Wedding/Party Expenses

June is one of the most popular months to marry and with the average wedding in the United States costing over $27,000 getting married can be one of the most expensive events in your life. Weddings don’t have to cost you a fortune if you follow a few simple steps, and for those readers that are happily married or don’t foresee a wedding in your future, some of these tips can be helpful when planning a party as well.

�e average bride spends 12 months planning her wedding, but by shortening this time frame she can greatly reduce her costs. A 4-6 month time frame will give you plenty of time to plan the wedding of your dreams but won’t allow you to get distracted by pricey wedding novelties.

Another way to reduce expenses is to plan your wedding for an off-peak time or day. Weddings in November, January, and March are often less expensive because these months are during the downtime for the wedding industry. Saturday is the most popular day for a wedding, by having your wedding on another day, Friday or Sunday, costs can drop drastically. Brunch or daytime receptions can reduce your expenses significantly as well. A bride’s wedding dress is one the most important things to a bride, but the dream dress can exceed the entire wedding budget. I recommend purchasing a dress during a sale or if possible purchasing the store sample to help reduce your cost. If your dream dress is completely over budget you may be able to find the same dress or a similar dress for a lower cost by purchasing a previously worn dress, for example EBay has lots of dress listings. Vintage wedding dresses are becoming more popular as well so consider altering a dress that was worn by a family member in the past to fit your style.

$ No wedding reception would be complete without food and drinks, which can be quite expensive. Instead of offering guests a choice of their entrée consider a combination plate that utilizes smaller portions of two meats, which can reduce costs significantly. Another option is to serve the food buffet style because it cuts down on the number of wait staff needed. Some weddings receptions have gone to a strictly cocktail reception that serves drinks and appetizers instead of a full meal. If your wedding features a cocktail hour before the dinner, choose inexpensive appetizers and reduce the portion size of dinner because most guests will fill up on the appetizers before dinner. �e cost of the cake can be reduced by ordering a small decorative cake to be used for the cutting, but serving the guests from a sheet cake version. To reduce the cost of alcoholic beverages considering only serving beer, wine, and a signature cocktail at the reception, since a full bar will increase the cost considerably. �is same concept can be applied to any party you host with alcohol and it should be noted that keg beer is less expensive than bottles. Some venues may even allow you to provide your own bartender, which can allow you to purchase alcohol by the case thus reducing this cost. Increasing the size of the table, so fewer decorations are needed, can reduce the cost of decorations. Consider making your party favors the table decorations as an additional way to save. For example an engraved champagne glass filled with candy can serve as both the table decorations and party favors. Party decorations that can be reused at other events are also money-saving options. Seasonal flowers and greenery are cheaper than off-season flowers.

Emailing invitations or save the date cards is another way to save. Utilizing your own china will also reduce the cost of buying disposables or renting from the caterer, this works great for parties and I’ve even attended a few weddings where dinner was served on china the bride owned. Making the decorations yourself and purchasing discounted décor items off-season are other ways to save money.

Hopefully these tips will help you keep your dream wedding under the US average cost and you’ll be able to utilize these tips for parties you and your spouse host together in the future. Next month’s column will focus on how to reduce your utility costs.

You do need enough pro-tein, but the truth is, in order to build muscle, the right combination of exercise and nutrition is important. You aren’t go-ing to build muscle by eating more protein if you aren’t exercising properly. In addi-tion, if you shun carbohydrates and aren’t getting enough calories, your body might actually break down muscle for survival, even if you are eating a high amount of protein. You may lose weight, but what you are losing isn’t fat! So, getting enough carbs, enough protein, and enough exer-cise is important for health. Many times, women are scared about gaining muscle, but when I talk about building muscle, I’m not talking about body building. In order to have strong, healthy bodies, we must keep our muscles strong. Women, you are not going to “bulk” up by training to have strong muscles (you don’t have the right combination of hormones for this). At around the age of 45, muscle mass be-gins to decline by one percent each year. Muscle increases your metabolism, and when people don’t exercise and eat with the intention of building and maintaining

this muscle, muscle mass decreases, fat increases, and weight loss becomes very difficult. Like I said before, be sure you are getting enough carbs, protein, and exercise to maximize health.

A Zen master visiting New York City goes up to a hot dog vendor and says, “Make me one with everything.” The hot dog vendor fixes a hot dog and hands it to the Zen master, who pays with a $20 bill. The vendor puts the bill in the cash box and closes it. “Excuse me, but where’s my change?” asks the Zen master. The vendor responds, “Change must come from within.”

Changing our habits is probably the most difficult factor when we have the urge to do something about our health. We all have habits that contribute to our current health issues and sometimes it is just hard to break those habits. It can be done though! Our minds are very pow-erful and if we set them to it, we can ac-complish improving our overall health. Join us next month as Star shares some tips on how to make those adjustments. Like it or not, it is almost summer. With thoughts of perfecting our can-non balls for the pool, our minds are also pondering what size wave we will make this year. If we are honest, most of us have something we would like to change about our bodies. Maybe it’s losing a few pounds, building lean muscle mass or just trimming up a bit. Whatever your goal may be, we have some information that will help you make just the right splash at the pool this summer.

Star Edwards MS, RD/LD, would like everyone to know that proper nutrition and exercise are two essential factors for leading a healthy lifestyle. In order for your body to get the most of your exer-cise routine, the right combination of nutrients must be available for your body to use. For the healthy individual getting 30-60 minutes of exercise a day, the right combination of nutrients can be obtained by following the USDA’s ChooseMyPlate recommendations (ChooseMyPlate.gov). For example, a person needing 2,000 cal-ories a day should aim each day for 6 oz of grains (3 oz should be whole grains), 3 cups of vegetables, 2 cups of fruit, 3 cups of low-fat dairy, and about 5.5 oz of protein (although I personally recom-

thing out of a fairy tale, with it’s Tudor architecture and lush backyard. Coves of trees seem to hide secrets; stone paths beckon toward adventure. It wouldn’t be surprising to see fairy lights dancing around the cistern. It is a magical place, and this is something that the Brunks have continued to cultivate and are cul-tivating still.

It has no been an easy road, though. While they purchased the house in July of 2009, they did not start refurbishing until March of 2010, and the home is still a work in progress. They hope to be done by fall of this year, but they aren’t rushing; that’s not their style. Through the course of two years, they have made many improvements to the home, while also stopping from time to time to delib-erate, making sure that each decision is the best. Though the finished product is important, the process is equally so. This house has been a journey for them, mak-ing sure that every thing they do is done

exactly as the house calls for. They were used to living in the coun-

try, but this home offers something that the countryside cannot—commu-nity with proximity. Though they can get the illusion of seclusion in their backyard, there is something comfort-ing to Kathryn about the sounds of cars and lawnmowers in the distance. They are looking forward to starting a new chapter in their lives. Community is very important to the Brunks. This is evident with more than the location of their home. We can also see this in the

In July of 2009, Bill and Kath-ryn Brunk were considering the purchase an older home in Ada, in order to restore it and sell it. They already had one in

mind, yet were still looking at others; they knew they wanted to find a place to restore and the more places they saw, the more ideas they would have. Going into house-hunting with this mindset, it came as a surprise to both of them when they immediately fell in love with a house and made an offer that very day. They were going to move into town. The wild, spacious backyard appealed to Bill with his love of nature; the interior reminded Kathryn of a good, healthy life—solid, gracious, grand, yet humble. It had the same fragrance as her grand-mother’s home. And it spoke to both of them as magic.

Looking at the home, and walking the grounds, one can understand this thought completely. It seems like some-

refurbishing itself. The home had a small kitchen, secluded from the

rest of the home, so walls were torn down to make a larger space. Kathryn wanted the kitchen to be a pleas-ant, accessible place for children and grandchildren to make themselves at home. They tore down walls so that they could have a larger space for family—the microcosm of community. They added a second floor above the breezeway, truly connecting the house to the garage apartment, because that idea of connection and unity was important.

Some changes have been made simply to make the space more livable in a modern world. For instance, there were only 67 square feet of closet space (in-cluding the pantry) in a house of 4800 square feet. This might have worked in 1928 when the house was built, but it won’t work today. So, they re-organized the structure of the second story, once again moving walls, making it not just a place to sleep, but a place to live.

The Brunks have put their hard work into every cor-ner of the home, creating a future and excavating the past. They have sanded and re-sanded window seats, making sure that the woodwork in the children’s room is free of divots, while understanding that the children will probably create divots of their own. They discover artifacts of previous owners at every step. When they realized the house had zero insulation, and proceeded to fill the walls and replaster, they discovered newspa-pers from the 1920’s and 30’s stuffed in cracks within the walls to stop the drafts. They found a postcard from the 1950’s, an advertisement showing different dress styles, stuck behind a window seat; photographs are randomly found in the walls and crevices.

While the Brunks are still in the process of refur-bishing their 84 year old home, they do so with both a mind to the future and an eye on the past. New brick-work is done in an historically authentic style; wood to repair the floors is ordered from antique dealers. The windows in the living room, dining room, breezeway, and entry hall are made of the original wavy glass, while the new windows are an old style, yet energy ef-ficient. They have truly invested themselves in this project, caring for each and every step. And, in the end, they will have a home—complete with the magic of the past, and some that they’ve created as well. ■
