wonder that Italians Cristoforo and Emma Colombo created Escalon

That foundation begins with a group of dedicated growers who cultivate

select tomato varieties in the fertile soil of California’s San Joaquin Valley,

a region famous for its agriculture. These growers carefully nurture and

harvest their tomatoes to Escalon’s exacting standards. Escalon tomatoes are

always vine-ripened to a vibrant red, picked with the greatest of care, and

packed within hours of harvest. Unlike competitive fresh-packed tomato

products, citric acid is never added to Escalon tomatoes. As a result, the

Peeled Ground TomAToes

Another extremely versatile product, 6 in 1

Peeled Ground Tomatoes makes the perfect base

for recipes ranging from traditional red sauces

to today’s “cucina nuova” dishes. It contains

only vine-ripened peeled ground tomatoes,

extra-heavy purée

and a bit of salt. This

product is ideal for

Peeled Chunky Ground Tomatoes contains only

vine-ripened peeled coarsely ground tomatoes,

extra heavy tomato purée, and a pinch of salt.

The chunky texture of this product makes it

ideal for recipes that demand the consistency

and flavor of a ground tomato base with the

added benefit of larger tomato pieces. It’s

8 lbs. Italian sausage links, sweet or hot

3⁄4 cup olive oil

3 lbs. onions (about 12 med.) sliced into 1⁄4” strips

2 lbs. green peppers (about 8 med.) sliced into 1⁄4” strips

1⁄4 cup minced garlic

1 #10 can 6 in 1® All Purpose Ground Tomatoes

2 cups Bontá® Pizza Sauce with Basil

2 tsp. dried basil

2 tsp. dried oregano

1 tsp. salt

1 tsp. ground black pepper

Method: In a large roasting pan, brown sausage in oil. Add onions, green peppers and garlic; sauté until vegetables are limp. Add 6 in 1 Ground Tomatoes, Bontá Pizza Sauce and spices and stir until uniformly blended. Cover and bake in a preheated 350ºF oven for 45 minutes, or until sausages are completely cooked. Serve as a sandwich or main dish with pasta or polenta.

Yield: Approximately 32 sandwiches, or 20 main dish servings.

1 cup finely diced onions

2 Tbsp. minced garlic

3⁄4 cup extra virgin olive oil

1 1⁄2 tsp. salt

1 tsp. ground black pepper

1 2 ⁄3 cups heavy cream (heated to 165ºF)

1⁄2 cup grated Parmesan cheese

Method: In a 2-gallon sauce pot, sauté onions and garlic in oil until translucent. Add basil, tomato strips, tomato purée, salt and pepper; mix until blended. Heat to a simmer and cook for 10 minutes. Remove from heat and gradually blend in heated cream and Parmesan cheese. Serve with your choice of pasta.

2 quarts organic heavy cream

4 organic red onions (1/4-inch pieces)

1/4 cup organic fresh basil chopped

2 oz. organic butter

Procedure: In a heavy saucepan melt the butter and sweat the red onions. Sauté

Add Christina’s Diced Tomatoes in Juice and the heavy cream and reduce by 1/4 over low heat or until sauce achieves desired consistency.

Stir in the basil and let set for 5 minutes.

For Tomato cream Soup: Purée the tomato cream sauce in a food processor, pass through a tomato mill, or use a hand held sauce wand. Process the soup until it achieves a smooth consistency. Then add basil at the end.

1 #10 can (6 lb. 6 oz.) El Verano Sabroso Salsa Style Diced Tomatoes or Chopped Tomatoes in Purée

2 cups diced onions (1/4-inch pieces)

2 cups drained, canned green chilies or Jalapeno pepper rings, chopped into 1/4-inch pieces

1 cup diced green bell pepper (1/4-inch pieces) 1 cup thinly sliced green onions (tops only)

3/4 cup chopped fresh cilantro

1/4 cup lime juice, 2 tsp. salt, 1 tsp. dried oregano

1/2 tsp. hot pepper sauce (adjust heat level by adding more or less)

1/4 tsp. ground cumin

Procedure: Combine all ingredients in a 5-quart or larger container; mix well. Cover and refrigerate 2-3 hours before serving, to blend flavors. Serve as a dip for tortilla chips, or as a topping or condiment to Mexican foods. Cantina Salsa also complements the flavors of beef, chicken or seafood dishes.
