Queen of Hearts’ Jam Tarts

Ladies, gentlemen, eccentric monarchs with a penchant for croquet and beheadings - the humble jam tart is beloved of

all. It is simple, joyful, quintessentially British… and unlike a

perfectly brewed Earl Grey at Fortnum and Mason, Piccadilly - they’re simple to make at home.

Ingredients

- 85g / 3oz of unsalted bu4er or margarine

- 170g / 6oz of self-raising flour (plus extra for dusting)

- 20 tsp of jam

Method

Preheat the oven to: 200 Celcius

400 Fahrenheit Gas Mark 6

Rub the bu4er and flour together until it

resembles breadcrumbs - stir in some water to

create dough

Roll out on a lightly floured surface. Use a pastry cu4er to cut out twelve circular

shapes

Voila, Enjoy!

Place the tray of tarts into the oven, stove or Aga (depending on your social status) and cook

for thirty minutes or until the pastry achieves its illustrious

brown patina…

Put each pastry case into an individual cupcake tray. Add a teaspoon of jam to

each case - not too much or it will ooze everywhere.

If there is any left over pastry, re-roll it and create shapes of your choice to adorn your art.
