salt3 tsp baking
powder1 C (2 sticks) un-
salted butter, room tem-perature
4 Tbl vegetableshortening (butter-fla-vored if available)
1 1/2 C packedlight brown sugar
¼ C light cornsyrup
2 Tbl vanilla ex-tract
2 eggs2 C (12 ounces)
chocolate chips
1. Sift flour, saltand baking powder.
2. Combine but-ter, shortening and sugarin the bowl of a standmixer. Beat on medium-high speed until light andfluffy.
Scrape downsides of bowl with a spat-ula, then add corn syrupand vanilla and beat 15seconds more. Beat ineggs, one at a time, untilincorporated.
3. Reduce speedto low and gradually addflour mixture until thor-oughly combined. Addchocolate chips and mix
10 seconds. Scrapedown sides of bowl with aspatula to catch any hid-den flour pockets orclumps of chocolatechips.
4. Divide doughinto 4 pieces and rolltightly into logs about 3-inches thick. Wrap inplastic wrap. Refrigerateat least 8 hours or up to 1week, or freeze up to 6weeks. (If frozen, thawdough in the refrigeratorabout 8 hours to makeslicing easier.)
5. To bake, pre-heat oven to 375F.
6. Slice logs into3/4-inch-thick disks andplace 2 inches apart on
parchment- or waxpaper-lined bakingsheets. Bake about 10minutes, until edges andcenters just begin tobrown. The cookies willstill look a bit under-cooked.
7. Remove fromoven and let cool on bak-ing sheet to allow thecookies to finish cooking.(Cooling on the bakingsheets also keeps thecookies more moist thancooling on wire racks.)Store in an airtight con-tainer at room tempera-ture up to 4 days. Makesabout 60 cookies.

California Avocado and Tomato Salad with
Crispy Crumbs and Bacon Vinaigrette
Serves: 4Ingredients
8 (1/8-in. thick)slices country bread
2 Tbsp. extra vir-gin olive oil
½ tsp. sea salt4 grinds fresh
pepper
2 ripe Fresh Cal-ifornia Avocados, peeled,seeded and quartered
4 vine-ripenedtomatoes, sliced
4 Tbsp. BaconVinaigrette (see make-ahead recipe below)Instructions
1. Pre-heat ovento 350 degrees F.
2. Lay breadslices on a cookie sheet.
3. Mix togetherolive oil, pepper and halfthe salt. Brush this mix-ture evenly on breadslices and place in oven.Cook until evenly goldenbrown and crispy, about8-10 minutes.
4. Cool breadcompletely, then place ina resealable plastic bagand crush into irregularcroutons.
5. Mash six ofthe avocado quarterswith the remaining salt.
6. Dividedamong each servingplate, layer one slice oftomato and drizzle withsmall, equal amounts ofBacon Vinaigrette. Fol-low with avocado mashand sprinkles of crispycrumbs. Repeat in eachstack until all ingredients
are used.7. Slice the re-
maining avocado quarterinto six thin slices andplace two slices on top
each stack.8. Drizzle with
remaining bacon vinai-grette and serve immedi-ately.
Bacon Vinaigrette*
Ingredients4 thick slices
bacon, cut into short 1/1/16-in. thick pieces
2 Tbsp. extra vir-gin olive oil
3 Tbsp. applevinegar
½ Tbsp. honey½ Tbsp. Dijon
mustardSalt, to tasteFreshly ground
black pepper, to taste
Instructions1. Fry bacon in a
skillet until crisp thendrain on paper towels.
2. Transfer aspoonful of bacon fat to alarge mixing bowl andadd olive oil, vinegar,honey, mustard, salt andpepper.
3. Whisk to formvinaigrette.
*Note: Recipeyields about 1/3 cup ofBacon Vinaigrette. Therewill be some left over.
