    Spring is the perfect time to embark on an eating adventure. The seventh annual VERMONT RESTAURANT WEEK provides the ideal opportunity from April 22 to May 1, 2016. More than 100 restaurants across the state are involved. Check out vermontrestaurantweek.com for the $20, $30 or $40 prix-fixe menus of participating eateries, as well as a full roster of events. Theres something for every taste and budget. So hit the road, celebrate spring and fill up on our states incredible fare.

    W hat does it mean to eat in Vermont today? To many diners, it means demanding local, seasonal, responsibly raised food. Others crave meals with a story. Chefs and owners seem happy to oblige, serving farm-fresh fare that honors their own personal heritage and that of these rolling Green Mountains. Thanks to them and the farmers they work with our food scene gets more and more interesting every year. The 7 Nights dining guide offers a big helping of what they bring to the table.

    These days, heirloom refers to much more than pricy, funny-looking tomatoes. Across the state, researchers are finding, reclaiming and cultivating seeds that were planted for centuries by Vermonts Native American communities, while farmers are defaulting to non-GMO, open-pollinated varieties of squash, corn, cabbage and beans. These time-tested cultivars are given special attention at upscale restaurants such as Duo in Brattleboro and Stowes Edson Hill.

    In Reading and West Glover, respectively, Newhall Farm and Sweet Rowen Farmstead are two of several farms working to bring back Vermonts own Randall Lineback cattle from the brink of extinction and producing excellent cheeses and meats from these cold-hardy cows. In Pittsfield, chef Kevin Lasko has a habit of buying whole linebacks and using the meat all of it for tasting menus at his tiny, hidden-away Backroom restaurant.

    Global cuisine, too, has taken root in the Green Mountain State literally. At Saap in Randolph, Nisachon Rung Morgan began tending Thai herbs and container citrus when she started having trouble sourcing ingredients for her native Isan cooking.

    Add to this the wild proliferation of breweries, cideries and distilleries popping up statewide, and youve got a very tasty environment, indeed and one that tends to be socially responsible and environmentally friendly. The logic? Its a small state, and everyones in this together.

    At first glance, Depot62 in Manchester Center looks like an eclectic home-furnishings store. Marrying funky antiques with sleek modern designs, its contents range from a handful of tables and mismatched chairs to a lamp constructed from old baseballs. On one wall hangs a shiny objet dart made from flattened industrial-size metal food cans. On another, handbags suited to hipsters. The floor is dotted with ornate rugs woven of richly colored threads.

    But theres some-thing incongruous about those tables in the center of the room: Theyre set for dining, with paper napkins and salt and pepper shakers, and its not just for show: Depot62 is also a caf, offering a small menu of organic veggie dish-es, pizzas and Turkish delights. Owner Alp Basdogan hails from the Mediterranean country, where his family runs a rug-making business. He attended college in the U.S. and now sells textiles and other wares in downtown Manchester Center, between Star-bucks and Northshire Books.

    Start with hummus or eggplant dip to spread on fresh-baked pita, with a lemony arugula salad on the side. Take your time as you eat, as the staff moves at a languid pace all the better for diners to discover the stores many treasures. New details emerge at every turn.

    The showrooms stone wall, for instance, contains a wood-fired oven in which the chef blisters simply topped, thin-crusted pizzas. The wild mushroom with caramelized onions and gooey mozzarella is a local favorite.

    Lamb is the other specialty of the house and finds its pinnacle in the Konya Kebap. Tender chunks of paprika-speckled meat arrive simmering in a clay pot, alongside hunks of tomato and slivers of raw, spiced onion meant for mixing into the meaty cooking liquid. Theres plenty more homemade pita for sopping up the fragrant juices. You can also get your lamb on pizza or as meatballs.

    If this food-and-furniture scene sounds crazy, think of IKEA. The worlds largest furniture retailer, which believes shoppers should never be hungry, sells an average of 1,836,000 Swedish meatballs a day.

    Part of the delight of dining at Duo is getting acquainted with those food producers, many hailing from tiny towns in southern Vermont. Theres cheese from Parish Hill Creamery in Westminster West, where famed dairy consultant Peter Dixon has settled down to make his own products, and booze from Windsors SILO Distillery, run by eighth-generation Vermonters. Veggies and meats

    might come from nearby New Hampshire or Massachusetts fertile Pioneer Valley.

    The local haul is combined in dishes such as thick pork chops with collard greens and leek-roasted potatoes. The kale Caesar isnt on the menu in Denver but bison pastrami is.     The cocktails also derive from local sources.
