I want to give a big Shout-Out to Kelly Cozad and the Interact Club from CD High School for beautifying our facility. Kelly has done an amazing job with our flowers as you come into the building and also helped the residents plant flowers and vegetables in raised beds in the courtyard. The school kids painted the shed in the back and the benches outside. They all look great!
During June we will celebrate National Nursing Assistants week, be sure to tell a CNA thank you and good job!

2 Nursing Home Week!!! We enjoyed many activities like making apple dessert for our cookout.
We also planted a garden and some flowers outside.
We filled some hanging pots with flowers so if any family members would like to donate some shepherd’s hooks for the hanging baskets that would be appreciated!!

Guess Who?????
This resident was born in Osceola and grew up with 9 brothers and sisters. He graduated from CD High School and went into the Navy. He moved around several cities in Iowa and Minnesota and worked as a janitor also traveled with the carnival. He likes fishing, hunting, camping and bowling.

Resident Spotlight
This month’s resident spotlight is Betty Schaffer. Betty grew up in rural Decatur County and attended country school. She then went on to graduate from Lamoni High School and worked at Snowden’s in Osceola. Betty married the love of her life and they traveled around the U.S. with his work. They moved back to southern Iowa and she worked at O’Bryan Brothers and at Leann’s Sewing shop in Osceola. She loved to sew and made clothing and quilts. She also like to do cross-stitch and embroidery work. Betty has 1 daughter and 1 granddaughter and has always enjoyed traveling and camping.

Recipe of the Month---Applesauce Cake
1 ¾ C cake flour ½ C butter, softened
1 tsp baking soda 1 C sugar
¼ tsp salt 1 egg, beaten
2 tsp cinnamon 1 pkg (8oz) pitted chopped dates
½ tsp cloves ½ C pecans, chopped
½ tsp nutmeg 1 C hot applesauce
Butterscotch Sauce
¼ C butter ¼ tsp salt
½ C packed brown sugar 1 ½ tsp vanilla
½ C heavy cream
Instructions
Heat oven to 350˚. In a large bowl, measure flour, baking soda, salt, cinnamon, cloves, and nutmeg. Sift 3 times. Cream together butter and sugar until light and fluffy. Add the egg. Stir in pecans and dates. Begin adding the dry ingredients and applesauce, alternately until all ingredients are just mixed. Pour ingredients into a prepared bundt pan. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Prepare butterscotch sauce by melting butter in a small saucepan over medium heat. Add brown sugar, cream and salt. Bring to a low boil for 7 minutes, stirring occasionally. Transfer from heat. Stir in vanilla. Cool for 10-15 minutes inverted on a cooling rack. Serve with butterscotch sauce. Cool slightly and pour over cake.
