Crystal clear air, unspoilt surroundings, living traditions – the Tyrolean Alpbach Valley is the place we call home. A special health farm, far from the hustle and bustle of everyday life and close to nature. A place where guests have enjoyed harmony and self-discovery for the last 40 years. So that you can share in our joy, we have organised three weeks of anniversary celebrations. Come and enjoy life with all your senses, and experience the wisdom of Hildegard von Bingen: on a stroll through our lovingly tended herb garden, in our spacious Health & Spa facilities or exceptional
Health Centre, and during a meal in our restaurant, as delicious as it is healthy. Join us on a journey in the footsteps of the 12th century abbess. Find out about Hildegard’s lore and discover just how contemporary her knowledge has remained. Hildegard von Bingen teaches us that we need to maintain balance, pay attention to our bodies, minds and spirits, and reawaken our awareness to the treasures of nature. What’s important? What matters to me? What aspects of my life are mere habit? If you’re reading this, perhaps now is the right time to pause; to find answers and
nurture life – in a place of harmony where you can stop and reflect. The Pirchner Hof Hotel & Farm is one such place.Nature, the elements and the seasons govern our rhythm. We use seasonal products from the region and our own farm. We draw strength from exercising in the fresh mountain air. We make time for stillness; and we accompany you, our dear guests, towards a new awareness of life full of energy and joy.Kind regards from the Peer family & team at the Pirchner Hof

our location in the idyllic alpbach Valley
The Pirchner Hof is located on the outskirts of the Alpbach Valley village of Reith, one of Europe’s ‘most beautiful villages in bloom’. During the summer, more than 900km of walking, hiking and mountain biking trails, via ferratas, natural high ropes, a beautiful bathing lake in the village centre, and plenty of water sports on the Brandenberger Ache River await our guests. Our winter guests have access to 47 lifts and 145km of
pistes in the nearby Alpbachtal Wildschönau ski resort. Night skiing is on the hotel’s doorstep, as well as close access to the 100km cross-country ski network.Gentle winter activities are just as important: the region offers many cleared winter hiking trails, some wonderful toboggan runs and brilliant snowshoeing. Our proximity to Innsbruck, Kufstein and a whole range of other Tyrolean attractions is appealing whatever the season.

Hildegard von Bingen
HIlDegArD voN BINgeN: saint, visionary and role model
‘Nurture life wherever you find it.’ – these wise words probably best sum up St Hildegard von Bingen’s teachings and the way we see and do things at the Pirchner Hof. Her maxim is reflected in our kitchen – most of the ingredients for our special Hildegard dishes and our standard menu come from our own farm or are supplied by local producers. In tune with Hildegard von Bingen’s thinking, our nurturing
Health & Spa area is based on the four elements, and our daily programme includes Hildegard-themed walks and lectures. The teachings of Hildegard von Bingen are holistic and can be summed up in six simple principles. They cover all areas of life, enhance health, and are easy and enjoyable to apply. This is why she is of so much interest to us – and remarkably contemporary too!
Hildegard von Bingen: her life and WOrkHildegard von Bingen was born in 1098 and entered the Benedictine monastery at the tender age of eight.
Throughout her life she was deeply concerned with religion, medicine, ethics and cosmology. She also made a name for herself as a composer and was known for her wise counsel. The books she authored detail
her extensive nutritional and health teachings, as well as her comprehensive knowledge of herbs and medicinal plants. She was canonised in 2012.

DraWing strength from the four elements in the tradition of Hildegard von Bingen
Nature is an inexhaustible source of strength that gives us innumerable opportunities for harmonising body, soul and spirit. When we make the conscious decision to appreciate nature’s elements, we create space for our inner wellbeing: ‘Just as the four elements hold the world together, they also form the structure of the human body. From fire humans have the warmth of their bodies, from air they have their breath, from water they have their blood and from earth their bodies.’
Our garden is dedicated to the energy of life and features ‘power spots’ based on the four elements. Warm your body and soul at the power spot of fire. A gentle breeze awaits at the power spot of air. The power spot of water is located in the vicinity of the natural pond, outdoor swimming pool and Kneipp wading pool. And at the centre of the power spot of earth stands a mature linden tree known to folklore as the ‘tree of love’.

sPring – the fasting season
Hildegard considered spring a time of fasting. However, she didn’t think of fasting as starvation but as mindful abstinence. She firmly believed that cutting out food entirely was harmful, not only to the body but also to the soul.
Apart from the Pirchner Hof’s fasting and detox programmes, our meals and dishes are always light in the spring to avoid any unnecessary burdening of the body at this time of renewal. Our spring menu features herbal
spreads, wholegrain spelt bread, fish, fennel dishes – from salad to tea – and vegetable soups. This light diet gently detoxifies and cleanses the system while the spirit soars, unburdened by heavy fare.
gOOd tO knOW
One of the first plants to greet the sun in spring is ground ivy. Hildegard von Bingen describes it as a plant with exceptionally beneficial properties: ‘It is more hot than cold, and it is dry. Its vital energy is profitable, so that if a person who languishes eats it often, it will help him’. A medicinal plant, ground ivy is used as an oral
rinse for throat inflammations, coughs and respiratory symptoms, and as a remedy for wounds and inflammations. It works wonders and has an agreeable, somewhat spicy flavour. Ground ivy is also used in
salads, sauces, soups, herb butters, pestos, vinegars etc.

summer – the season of herbs
In the summer, nature’s kitchen is at its peak at the Pirchner Hof. Fresh natural herbs and spices from our own garden are now integral components of every meal.
Hildegard von Bingen recommends avoiding heavy foods in summer so as not to overload our bodies and digestive systems. The summertime delicacies most praised by
Hildegard von Bingen include cold berry soup, fruit salad, apple & mint ‘smoothies’, vegetables, veal in aspic, and milky herb smoothies.
gOOd tO knOW
A typical summer herb is lemon balm. Hildegard von Bingen’s name for it was ‘binsuga’, and she wrote: ‘Lemon balm is hot, and a person who eats it smiles with pleasure, since its heat touches his spleen and thence his heart is made happy’. Today, it is impossible to imagine natural medicine without lemon balm,
and it is credited with having sedative, antispasmodic, cooling and analgesic properties. It is chiefly drunk as a tea to soothe anxiety and cramps, and it is also extremely flavoursome and
delicious thanks to the herb’s high essential oil content. Lemon balm is also a wonderful remedy for indigestion and stomach cramps.
. . . & T H E C Y C L E O F T H E S E A S O N S
autumn – the season of preserves
In the autumn it is important that we make the vitamin rich harvest last as long as possible. The abundance of fruit and vegetables from our kitchen garden and orchard is treated in a
variety of ways including bottling, pickling and freezing. Natural herbs are used to make vinegars and oils that preserve the plants’ fabulous flavours, as well as their beneficial effects.
Throughout the year, jams made with Hildegard fruits such as blackberries and apricots act as sweet reminders of summer.
gOOd tO knOW
Quinces play a prominent part in Hildegard’s teachings, and are harvested in the autumn at around the same time as apples. This furry fruit, whose merits are insufficiently recognised, is a real vitamin bomb. Quinces
contain high levels of vitamin C, trace quantities of selenium, potassium, calcium, magnesium, phosphorus and iron. Another plus is their high level of rare folic acid and tannins. Furthermore, quinces contain record amounts of pectin, which helps digestion and has a beneficial effect on cholesterol levels. But beware: raw quinces are inedible and need to be cooked to enjoy their positive qualities – transformed into jelly, cake topping or jam,
quinces are both healthy and delicious.
14
Winter – the season of rest
gOOd tO knOW
Chestnuts have a wide range of uses. They can be boiled, roasted, ground into flour, used as a side dish or a salad ingredient. Chestnuts are gluten-free, so their flour is suitable for coeliacs, and they make a suitable replacement for wheat. Chestnuts were once considered the bread of the poor, little did they know that their diet was so healthy! Whether boiled, raw or roasted, according to Hildegard, the chestnut has a subtle effect
on the human organism: ‘The chestnut tree is very hot but has great power mixed with that heat. It symbolises discretion. The virtue in it, and its fruit, is useful against all infirmity in a human being’.

For Hildegard von Bingen and the Pirchner Hof Hotel & Farm, winter is a time of rest and wellbeing. This is when we are most vulnerable to coughs and sneezes, and when an extra dose of comfort is most welcome. As in summer, winter food should be served at optimum temperature and eaten in a pleasantly warm room. During the colder months herbal teas are highly beneficial and have a fortifying effect on the system. Winter is also a season of celebration and revelry, and Hildegard von Bingen advocates sensible indulgence in culinary pleasures.
The menu now includes richer dishes and delicious festive cakes, biscuits and pastries made with Hildegard spices. Enjoyed in moderation and seasoned with natural herbs and spices, they too have a wholesome benefit. A very important fruit in Hildegard’s nutritional teachings is the sweet chestnut, which we associate with warmth, comfort and Advent.
15
healthy enJoyment – Hildegard von Bingen on nutrition
Fresh, locally produced food delivers energy and all essential nutrients. In addition to spelt, which Hildegard von Bingen describes as the easiest to digest, most warming and oil-rich of grains, and thus superior to all others, the Pirchner Hof’s kitchen makes use of
fresh fruit and vegetables. Most produce is grown in our own gardens and cooked as soon as it is picked. What we do not grow ourselves is sourced from nearby farms and suppliers. To add flavour, we use fresh herbs from our Hildegard von Bingen herb garden.
gOOd tO knOW
The subtle effect of food is one of the cornerstones of Hildegard’s teachings on nutrition. Hildegard classified food as ‘warming’, ‘cooling’, ‘drying’, ‘moistening’ or ‘cheering’. We derive our energy from food – the better its quality, the more energetic and active we are. Subtlety may not be measurable, but it is noticeable – Hildegard von Bingen thought of it as
the spiritual component inherent in every creature and plant.

meat – to relish or relinquish?
WhOlesOMe eXtended half bOard
• Breakfast buffet with hot porridge in the tradition of Hildegard von Bingen, natural, regional products and produce from the farm: homemade bread, fruit juices and stewed fruit, freshly prepared egg dishes, speciality sausages, hams and cheeses.
• Self service tea bar with Grander water, special infusions based on the teachings of Hildegard von Bingen – open until 5pm
• Hildegard von Bingen’s herb powder and spice mixtures are served with meals
• Healthy afternoon snack served from 3-5pm: soup, salads, cake, juices, coffee and tea buffet
• 4-course dinner with meat, fish, vegetarian wholefood dishes and a generous salad buffet including Hildegard von Bingen salads and herbs
At the Pirchner Hof Hotel & Farm we rely on our own beef suckler herd, which has been tended by our son Thomas since 2010. One of our specialities is a premium and versatile meat from young cattle, which is characterised by its excellent quality.
As in many other aspects of life, the old adage of moderation in all things applies to meat consumption: we should eat a well-balanced and good quality diet. Although Hildegard von Bingen referred to pork as ‘nutritional poison’, there is no reason why a moderate consumption of beef, chicken or venison should not form part of a balanced, Hildegard-style diet.

from our farm to your table
The Pirchner Hof farm can look back on a long history and is now managed by our son Michael, the fourth generation of the Peer family. Many of the ingredients we use in the kitchen including beef, poultry, eggs, herbs, vegetables and fruit are provided by our farm. We believe in
natural farming practices and animal welfare, and you can taste the difference. In the summer, you can even visit our cows in their pastures, or take a stroll in the gardens where we grow our Hildegard herbs and old-fashioned fruits such as quince and chokeberries.

ideas are easy to integrate in our day-to-day lives.’

Take time out for peace and tranquillity, do yourself some good. Fasting adds new aspects to your life, because the conscious choice of abstinence creates space. Fasting, in the sense of ‘reducing’ outside influences and abstaining from the objects of prosperity we don’t actually
need, allows us to see things in perspective and sensitises us for the adoption of a healthy lifestyle. A moderate spelt-based reduction diet that includes the Hildegard fasting soup, detoxifying massages and treatments assists participants during the fast.

Purification of body, mind and spirit is at the heart of Buchinger’s therapeutic fasting method. The excretion of toxins and waste products via the intestines, kidneys and skin is stimulated by temporarily giving up solid food. The result is an extraordinary feeling of ‘lightness’,
weight loss and renewed levels of physical and mental energy. This healing method was devised by physician Dr Otto Buchinger who, when seeking relief from severe rheumatism, supplemented his water fasting with juices, herbal infusions and vegetable consommés. Our
Buchinger fasting weeks are run by Margaret Broz, a health educator and licensed fasting professional. Formerly a chemical engineer, Margaret became a devoted advocate of alternative medicine 14 years ago, and that naturally includes regular fasting.

aQua fitGentle wake up exercise sessions make use of the natural resistance and buoyancy in the water element. Moderate exercises for mobility and strength include stretches and put a spring in your step at the start of the day.
nOrdic WalkingThis low-impact total body strengthening sport began as an alternative to cross-country skiing and has a tremendous growth in popularity. Energetic, rhythmic walking with the aid of poles relieves pressure on the joints and spine, relaxes neck and shoulders, improves muscle tone and flexibility, and strengthens the cardiovascular system – an all season exercise for everyone.
pilatesA gentle workout focusing on posture, breathing, flexibility, muscle toning and relaxation. Pilates releases tension, develops deep supporting muscles and encourages natural energy flow.
‘SMOVEY’Originally developed as a therapeutic device, ‘smoveys’ quickly became a craze. A ‘smovey’ consists of a spiralled tube, steel balls and a grip. Swinging it back and forth produces beneficial vibrations. Our ‘smovey’ coach Wolfgang is not alone in thinking a more effective, sustainable or easy way to exercise is hard to find. ‘smovey’ training exercises strengthen muscles, activate cell activity, promote coordination and stimulate deep relaxation.
fOOt fitnessExercises aimed at preventing foot-related problems and misalignments. Specially designed exercises strengthen the foot arches, energise reflex zones, mobilises toe and ankle joints, and develop balance and coordination, thereby improving the roll of the feet from heel to toes whilst walking.
back eXercisesFor the prevention or relief of spinal problems. Gentle back exercises mobilise, strengthen and stretch the spine and surrounding muscles, and are tailored to benefit the cervical, thoracic and lumbar spine.
yOgaThis ancient Indian practice harmonises body, mind and spirit. Gentle postures are combined with breathing techniques, deep relaxation and meditation to bring about greater mobility, quality of life, calmness and energy.
Zen WOrkOutAn easy-going combination of Qigong, Yoga and Tai Chi with long-term beneficial effects. Primarily aimed at calming the breath and improving mobility with the help of strength, balance and coordination exercises.
