They are a good source of carbohydrates and protein. They are packed with many vitamins and minerals including: Vitamin A Vitamin C Vitamin K Folate Thiamine Manganese Iron COOKING & EATING FIRST LADY’S MINTY SPRING PEA SALAD By Michelle Obama and amended by Buford Garden Aides 2-½ c. shelled fresh green peas 1 sm. shallot, peeled & thinly sliced 1 sm. leek, cleaned, white part only, thinly sliced Zest & juice of 1 lemon ¼ c. extra-virgin olive oil ½ c. shredded fresh mint leaves Salt & freshly ground black pepper Bring a pot of salted water to a boil. Cook the peas for 2 minutes. Drain and immediately plunge the peas into a bowl of ice water. Drain and pat the peas dry with a towel. Purée ½ cup of the peas with the lemon juice, zest and olive oil in a blender until smooth. Place the remaining peas, shallot, leek and mint in a medium bowl. Toss gently to combine. Pour the pea purée over the salad and gently toss. Season to taste with salt and pepper. COCINA Y COMIDAENSALADA DE GUISANTES DE PRIMAVERA Por Michelle Obama y cambiado un poco por los Buford Garden Aides

2-½ tz. de guisantes verdes frescos sin cáscara1 chalote pequeño, pelado y cortado en rodajas finas1 puerro pequeño, limpio, sólo la parte blanca, en rodajas finasRalladura y el jugo de 1 limón¼ tz. de aceite de oliva extra virgen ½ tz. de hojas de menta fresca trituradaSal y pimienta negra recién molidaHierva agua salada en una olla. Cocine los guisantes por 2 minutos. Escurra e inmediatamente hunda los guisantes en un tazón de agua con hielo. Escurra y seque los guisantes secos con una toalla. Puré ½ taza de los guisantes con el jugo de limón, ralladura y aceite de oliva en una licuadora hasta que quede suave. Coloque los guisantes restantes, el chalote, el puerro y la menta en un tazón mediano. Mezcle suavemente. Eche el puré de guisantes sobre la ensalada y mezcle suavemente. Sazone al gusto con sal y pimienta.
