to the New Generation McKinley portfolio.. We’ve put this booklet together to allow you to learn a little more about the suppliers who make up our diverse, eclectic and rather exciting range. The information on the following pages will allow you to build up a clear picture of who we are and, hopefully, encourage you to add more of our products to your list.

Who are we?

Introductions are important and before we introduce you to the people, wineries and distilleries we represent here in the UK, we should probably tell you a little about us. NGM is an agent and wholesaler created in January 2016 when New Generation Wines and McKinley Vintners joined forces bringing a wealth of experience and enthusiasm under one roof. Importing a wide range of champagnes, wines and spirits from exceptional producers throughout the world, we are focused on supplying our customers with only the very best quality products from suppliers we know and trust. Relationships with some of our suppliers are over 20 years old and our portfolio seamlessly combines family owned boutique organic and biodynamic producers with some of the best known names in the world. We work with a dedicated group of winemakers and distillers whose common goal is to produce handcrafted champagnes, wines and spirits which are both individual and authentic and are a true expression of their region.

How do we operate? Working from a base in Central London, the team is headed up by James Booth (Managing Director), Hamish Young (Commercial Director) and Jim Furze (Operations Director) with a salesteam of eight people. Under London Sales Director Andy Muscat, we have a team of five concentrating on Central London and Richard Boote, Regional Sales Director, and his team covering the rest of the UK. Inside the M25, NGM works as a wholesaler, supplying restaurants and retailers directly. Throughout the rest of the UK, the company works through a network of wholesalers to grow volume and awareness of the portfolio. The directors and salesteam are backed up by London based sales and marketing teams ready to help with any query you may have. Our finance and administration is taken care of by our Ashford office.

Why are we different? Our business is based on developing and maintaining the very best personal relationships – with suppliers and customers. We strongly believe that to be able to offer our customers a diverse selection of products from around the globe then we need to find unique suppliers and work closely with them to create deep, strong bonds. And in order to do that, we need to show them that we are working with extraordinary people who appreciate and enjoy their products and who want to sing the praises of their champagnes, wines and spirits across the length and breadth of the UK (that’s you by the way. ..)

BODEGAS TRADICION, JEREZ

The origins of Bodegas Tradición are based on 'Bodega CZ J.M. Rivero' the oldest of the known sherry houses with business

dated back in 1650. J.M. Rivero was by appointment supplier of the Royal Houses of Spain and Portugal and the winery

obtained many different international rewards. Bodegas J.M. Rivero was sold in 1991 and immediately after Joaquín Rivero

started planning the reinstatement of the family tradition.

With this aim an old sherry warehouse was acquired and after restoration of the warehouse the first casks arrived at Bodegas

Tradición. The initial main objective was pursuing the best soleras at the time and sourcing old and first-rate American oak

casks to keep the wines which were selected by the team of experts who were hired to work in Bodegas Tradicion. Jose Ignacio

Domecq Fernández de Bobadilla former oenologist from Domecq and son of one of the most famous oenologists from the

golden age of sherry was hired to select the wines to be purchased and to create the Tradición styles. Along with Mr. Domecq ,

José Blandino who had worked at Domecq for almost 50 years was hired to select the casks and to make all the necessary

arrangements in the house to set up the soleras. Like all great wines, Tradicion Sherries are as splendid alone as they are with

the right dishes and their food pairing potential is amazing. Use large ample wine glasses, sit back, and enjoy.

Fino Tradición (15%)

Pungent and powerful with very clear notes of salt and sea aromas. Old and complex with saline hints and a bitter finish.

Low in acidity but very fresh and dry.

Amontillado Tradición VORS 30yrs (19.5%)

Sharp, with marine aromas, iodine notes, hints of orange and bitter almonds. The palate is extremely dry and salty. A

long, complex wine, notably intense, complex and persistent. “Super-concentrated on the palate, like non-sweet vintage

marmalade and bitter orange toffee. Amazing freshness that accentuates the intensity of flavour” – Julia Harding MW

Oloroso Tradición VORS 30yrs (20%)

Slightly hazelnutty with a subtle balsamic note. Long and full bodied with elegant notes and bitter chocolate in the finish.

“Spicy with bitter orange on the finish and some smoky lapsang. Eye-watering concentration” – Julia Harding MW

Palo Cortado Tradición VORS 30yrs (19.5%)

Complex aromas, with bitter, almond hints, a background of elegant confectionary, candied fruit, nougat and slight

medicinal notes. Light, silky and round entry, with a bitter almond aftertaste. “Gloriously dry and burnished on the

finish” – Julia Harding MW

Cream Tradición VOS 20yrs (18.5%)

Very powerful nutty notes along with fruity aromas; raisins, figs and plums. Very smooth, with an intense sensation

which is lightened by the sweet and fresh side of this old wine.

Pedro Ximénez Tradición VOS 20yrs (15.5%)

Very intense fruity aromas; raisins, figs and plums with reminiscences of black liquorice and dark roasted coffee. Very

sweet, smooth, dense, silky and oily. It has a long aftertaste with chocolate, liquorice, coffee and toffee flavours.

Solera Gran Reserva Gold Brandy (38%)

Spicy (clove, nutmeg), toasted aromas, hints of liqueur chocolates and pipe tobacco. Light, elegant and powerful, with bitter

notes and a long dark roasted aftertaste.

CHURCHILL’S PORT, PORTUGAL

Churchill’s –Stylish, modern yet traditional

Although Churchill’s is considered a baby of the Port trade both in scale and age, indeed it was only founded in 1981, it has its

roots deeply embedded into quality Port history. Johnny Graham’s family used to own the famous Graham’s Port until it was

sold in 1970. He and his wife, Caroline (maiden name Churchill) created the company when Johnny left a job at Taylor’s where

he had been in the winemaking team, having spent the years before that working for Cockburn’s. When asked how he would

explain the style of the Churchill’s Ports, Johnny draws from his drinking experiences when he describes it as having the finesse

and elegance of Grahams, the dryness and acidity of Cockburn’s and the structure and balance of Taylor’s. This style has been

reinforced since 1999 with the purchase of two grade ‘A’ properties, Quinta da Gricha and Quinta da Rio, which bring further

terroir, depth and authenticity to the blends of the port wines.

Reserve (Available in 20cl, 75cl and 150cl)

A bright, full ruby colour with violet tones. On the nose, very distinctive with fresh blueberries and hints of eucalyptus; a

very vibrant young Port with plenty of natural acidity but also balance and pedigree.

10 year old Tawny (50cl)

A rich brick red colour with flashes of amber, elegant and subtle, complex on the nose, with expressive notes of dry fruits

combined with hints of orange peel, full on the mouth, showing an excellent vinosity and freshness. Enjoy chilled as an

aperitif.

20 year old Tawny (50cl)

A pale red tawny colour with a golden rim. A delicate nose of almonds and red Moreno cherries. Savoury and rich on the

palate, without losing the grip, it’s a combination of age and finesse, finishing long and fresh.

30 year old Tawny (50cl)

Bright, amber/copper colour. On the nose, a complex and seductive combination of cigar box, toffee and cedar wood with hints

of fresh, black fruits. Very elegant and enveloping on the palate, combining freshness with ageing, showing notes of dried

fruits and orange peel along with floral and menthol undertones, ending in a long and velvety finish.

Dry White (RS 40g/l)(50cl)

A vibrant golden colour with grated nutmeg and eucalyptus on the nose. On the palate it is fresh and complex with a long

peppery finish. Enjoy mixed with tonic over ice.

Crusted (75cl)

Crusted Port is carefully blended from Vintage Ports of two different years which have been aged together for 2 to 3 years in

wood. The blend then spends its final 6 months in seasoned oak casks before being bottled unfiltered into dark Vintage Port

bottles. Worth having a decanter to hand.

Late Bottle Vintage (75cl)

Late Bottled Vintage Port is produced from the same Quintas, which make Churchill’s declared Vintage Ports, so the result is

an LBV with real Vintage pedigree, excellent intensity of fruit and finesse. A full vintage colour. An intense resinous nose

with fresh cherry notes. Focused and pure on the palate, with lovely balance and structure, ending in a long and persistent

finish.

Vintage (75cl)

A very deep black violet colour to the rim. On the nose, intense aromas of fresh blackberries along with notes of resin and

green tea. Powerful and compact on the palate, combining a great tannic structure with excellent natural acidity and layers

of berry and floral flavours. Full of intensity, ends very long and persistent finish.

DOLIN VERMOUTH

Dolin Vermouth – Shaken not stirred

Dolin was perhaps the first and is now amongst the few remaining independent producers of Vermouth and the last

producing Vermouth de Chambéry. They continue to make the authentic product according to the principles which earned

Chambéry France’s only A.O. for Vermouth in 1932. This means production in Chambéry itself, maceration of real plants

rather than pre-prepared infusions, and the unique addition of sugar as opposed to other sweetening products. The finished

Dolin Vermouth contains 75-80% wine, much more than other brands, and is light and dry. The particular mixture of plants

found near Chambéry gives a fresh, restrained and elegant nose with a subtle, complex bittersweet palate.

Dolin Dry Vermouth (17.5%)

A generous, full, intense nose of citrus peel with hints of menthol and balsamic notes. Aromas of fresh mountain plants

linger on the finish. A velvety texture with harmonious aromas of almond and fruit. A slightly bitter citrus base,

balanced with an elegant finish. The perfect ingredient for a dry martini.

Dolin Blanc Vermouth (17.5%)

A complex nose of alpine plants, pressed to release their aromas of fresh citrus. Beautifully harmonious with a soft silky

texture and hints of flowering broom and elderberry which give way to flavours of fresh almond and peach. Serve with

Crémant and a twist of lemon over ice.

Dolin Rouge Vermouth (16%)

Amber in colour, with copper hints. Notes of fruit compote, prune and walnut on the nose with hints of cinnamon, vanilla

and Szechwan pepper. On the palate there are complex aromas of almond, citrus, pear and cinnamon with underlying

notes of violet, oregano and tobacco. Enjoy in a Manhattan.

Chambreyzette (16%)

A blend of vermouth de chambéry and strawberry liqueur, served chilled or over ice or mix with Ekiss vodka.

Bonal Gentiane-Quina (16%)

An aperitif wine made by infusing gentian root, herbs from the mountains, and quinine, producing a wine that is

known for its aromatic and flavour complexity. Enjoy neat, over ice with a twist of lemon, or mix with Le Gin and

Campari for a quirky take on the classic negroni

Genepi (40%)

Génépi is a traditional herbal liqueur or aperitif, popular in the Alpine regions of Europe. Genepi also refers to alpine plants

(wormwood) that provide the liqueur's flavour and colour. It’s related to absinthe in that botanicals are of the same genus

but it is classed as liqueur, containing sugar, and is traditionally enjoyed neat though can be mixed in cocktails to add

aromatics and bitterness. One recipe from ABV in san Francisco suggests serving it (almost) frozen in a shot glass, with

3 dashes of Angostura on top!

CALVADOS CHRISTIAN DROUIN

The Drouin family has a passion for Calvados and their goal is to produce an exceptional product using traditional methods. By

limiting the extraction of liquid during the pressing of the pomace they ensure only the very best juice is the base for their

award winning spirits. Maturation takes place in small second hand casks which have previously housed Port, Sherry, Banyuls or

Cognac adding an extra complexity to the finished product. The result is a fabulous collection of Calvados, from the Sélection

through to the wonderful older vintages, of which an extensive range is available, please ask for further details.

The ‘Blanche de Normandie’ is an apple brandy made from the distillation of cider obtained from the very best varieties of

apples and pears grown in the Coeur de Lion orchards. It has no oak ageing so is crystal clear and can be served neat, on the

rocks, as a base for cocktails or as a refreshing after-dinner drink. Pommeau is a lovely sweet pure-apple aperitif or pudding

wine and definitely worth a try. Recent years have seen increased interest in both the Cidre and Poiré from Christian Drouin.

The family’s most recent project has been the creation of Le Gin. The brainchild of Guillaume Drouin, he created this hand-

crafted Gin using the art of blending developed for classic spirits. It is produced by distillation of ciders in three small Normandy

copper pot stills, and by the distillation of Juniper and seven other aromatic plants typical of the world of Calvados. Each one is

distilled separately before being blended in unique proportions for a batch of 2,850 bottles.

A blend of spirits aged for more than three years, golden yellow with fruit and flower aromas, delicately oaked.

NV Hors D’Age Calvados Pays d'Auge 42%

Aged over 15 years in small oak casks. The colour is flamboyant amber flame, the nose is complex and balanced. On the

palate, it is smooth, dominated by wood and spices, with great length.

NV Pomme Prisonnière 40%

An entire apple inside a carafe, created when the carafe is attached to the branch so the little apple can grow inside during the

summer. The carafe is then detached from the tree, carefully cleaned and filled with Calvados Pays d’Auge – Unique!.

Blanche de Normandie Eau de Vie de Cidre 40%

An apple brandy made from the distillation of cider obtained from the very best varieties of apples and pears grown in the

Coeur de Lion orchards, unoaked so retaining the purity of fruit. A great cocktail base.

Pommeau de Normandie 17%

A lovely sweet pure-apple aperitif or pudding wine, made by adding calvados to apple juice.

Cidre de Normandie Brut (Pasteurised) 4.5% (Available in 75cl & 33cl bottles)

In traditional ‘champagne’ bottles this is a completely different drink to mass produced ciders we are used to seeing today.

Poiré Pear Cider (Unpasteurised, unfiltered) 4%

A traditional blend of several pear varieties found in Normandy and it makes a unique addition to any list.

Le Gin de Christian Drouin 42%

More recently, Guillaume Drouin, son of Christian Drouin junior, has created the most amazing Gin, produced by the

distillation of ciders in three small Normandy copper pot stills, and by the distillation of Juniper together with seven other

aromatics including lemon, ginger and cardamom to compliment the apple flavours from the distilled cider.

KARUKERA RHUM

Guadeloupe, along with Martinique, was the birthplace of the sugar trade, and in 1493 Christopher Colombus alighted for the

first time in Guadeloupe in the place that would become the town of Sainte-Marie. Originally called KARUKERA by the Caribs,

Guadeloupe saw the foundation of the Domaine Sainte-Marie Marquisat 1895. In the heart of this area, the oldest distillery on

the island, the Hope distillery creates from its 70 hectares of plantations, an exceptional rum made exclusively from the

fermentation of sugar cane juice, offering a powerful rum of exceptional aromatic richness. Named Karukera, it is raised under

the hot sun of the islands and bottled and aged at the place of production.

Karukera Rhum Blanc Canne Bleue (50%)

White Agricole Rum Karukera is produced from the juice of only one variety of sugarcane “Blue Cane” named after the

plentiful wax that gives it a bluish colour. Selected for its high sugar content and aromatic potential it has had to adapt to

Sainte-Marie rainfall and the resulting white rum is both powerful yet delicate and fresh with citrus aromas.

Enjoy straight, or as a Creole Ti’ Punch (zest of lime, a few drops of sugar cane syrup and 5cl of Karukera White Rum)

Karukera Rhum Vieux Agricole (42%)

This rum has been aged to perfection in ex-Cognac barrels of 350litres. It is an excellent introduction to the flavours of the

aged Karukera Rhums. The nose is charming, dominated by aromas of nutmeg and cinnamon, it opens slowly with notes

of vanilla and roasted coffee. The palate is rich with a great aromatic persistence, and confirms its gourmand bouquet.

Enjoy in an Alizé Bleu (5cl Karukera Vieux Agricole, 2cl Blue Curaçao & 2cl fresh lime juice)

Karukera Rhum Expression Vintage 2008 (48.1%)

Distilled from 100% pure sugarcane juice that comes exclusively from plantations of the Marquisat de Sainte-Marie estate.

L’Expression has been slowly aged to perfection in French oak barrels in Sainte-Marie. Beyond the influence of the volcanic

sub-soil and the maritime tropical climate that nourish the sugarcanes, this version is also the result of a patient and

careful maturation over several years that embodies the expertise of the master blender. Full of freshness, the palate moves

from sugarcane to remarkably mature, unique and complex notes.

COGNAC ABK6 is owned and run by the father & daughter team of Francis and Elodie Abécassis of Domaines Francis

Abécassis. Domaines Francis Abécassis had been producing cognacs from its own estates for many years, but in 2005

Elodie and her father noticed a gap in the market: the need for a modern Cognac brand to appeal to a new generation of

Cognac drinkers, and ABK6 was born. The name ‘ABK6’ is taken from the shorthand the family have always used to write

their surname, Abécassis, pronounced ‘A beh ca sis’.

Domaine Abecassis own 3 estates across the Cognac region including Domaine de Dizedon in Grande Champagne,

Domaine Champagne Drilhon in Petite Champagne and Domaine de Chez Maillard in Fins Bois. The average age of the

vines is over 30yrs, and they work purely with the Ugni blanc variety. The harvest is carried out plot by plot and the

double distillation is made on site, with small traditional pot stills.

Blending the eaux-de-vie from a Single Estate gives the ABK6 Cognacs inimitable character and depth. In order to extract

the fruit of the terroir, each step of the production is carried out on site. Each quality is blended from a selection of very

old eaux-de-vies (much older than is legally required) and showcases the fruit of the three domaines. The estates have 21

cellars between them containing some 3000 barrels and 100 vats, all made out of French Limousin oak. Altogether the

equivalent of 3 million bottles is ageing in the Abecassis cellars. The oldest batches of eaux de vie are gently mellowed for

decades in the Paradise cellar. The ABK6 Cellarmaster, Christian Guérin, is a 4th generation Cognac Master Blender with

decades of experience enabling him to select the very best eaux-de-vie to perfectly demonstrate the ABK6 style: clean,

fresh cognacs, with good age (longer than is legally required for each style) and great flavour, but a lighter, more elegant

profile to suit the more modern palate.

The team behind ABK6 is forward thinking and takes a modern approach to cognac and the cognac category. Not only do

they actively encourage mixing their cognacs and creating cocktails, they have also developed two new cognac styles ‘ICE’

–created specifically to be consumed over ice and ‘Honey’ a cognac, honey liqueur. With their attractive, eye-catching,

contemporary packaging, easy to hold and lift bottles complete with screw caps, Cognac ABK6 moves away from the

traditional cognac ‘look’ but remains true to the spirit of Cognac.

ABK6 COGNAC

The ABK6 range VS. Single Estate Cognac - Gold in colour with amber highlights. The initial nose has aromas of apricots and fresh grapes

which then evolve towards light spice and fruit filled pastry. The palate is crisp and elegant with good presence and

exceptional length.

VSOP. Single Estate Cognac - Antique Gold in colour .The nose is complex with stewed fruit and woody notes which are

followed by brioche, vanilla, apple and cinnamon. The palate has an excellent full structure with a long finish of vanilla

and woody flavour.

XO Family Reserve. Single Estate Cognac - Deep antique gold in colour. The nose displays aromatic richness with dried fruit

and nuts and the liquorice aromas typical of well matured Cognacs. It develops towards the spice and characteristic fruit

pasty notes which are the ABK6 signature. The palate is dense and smooth yet elegant and with considerable finesse.

Vintage 1985. Single Estate Cognac - Deep antique gold in colour. Gently spiced and with hints of dried fruits, orange peel,

pepper and quince jam.

Extra. Single Estate Cognac - Deep antique gold in colour with amber highlights. The nose shows great elegance with leather,

cedar and fig aromas. It opens towards sandal wood and candied lemon, cinnamon, ginger notes.

The palate is full and rich. It reveals wooden and spicy hints of honey, wonderfully round and complex.

ICE - Created using only the most floral, fruity and fresh eaux de vie, aged in very old oak barrels which no longer impart

intense oaky flavour, only light aromas of vanilla and flowers, ICE Cognac is an authentic cognac. Revealing fruit and

vanilla character at room temperature, as the cognac is chilled, the flavours changed to reveal light, fresh floral flavours.

Pineau de Charentes 10year old – created by blending young cognac and freshly pressed grape juice and then ageing the

blend in old oak casks for over 10 years. This 100% ugni blanc has a nose of peach, pear, fig and walnut with flavours of

apricots and sour cream on the palate. Enjoy chilled neat to accompany goats cheese or foie gras or mix 4cl in a cocktail

Based in the waterfront neighbourhood of Red Hook, Brooklyn, this artisanal distillery was founded by husband and wife

team Daric Schlesselman and Sarah Ludington in 2012. Inspired by the pioneering spirit of Cornelius Van Brunt, a farmer in

the Dutch colony of Breukelen, and driven by Daric and Sarah’s love of Craft, the team takes a time honoured traditional

approach to distilling, sourcing wheat, rye and corn directly from upstate New York farmers. Their malted barley, imported

from Europe as Daric feels the quality is better, is a signature throughout their range. They make every spirit from scratch in

their distillery in Brooklyn using traditional methods with few modern innovations and their family of spirits gives a nod to

classic styles while remaining exciting and innovative, creating bold and flavourful products. As master distiller, Daric brings

a creativity to his recipes while working within the traditions of distilling fine spirits. He has developed a line of spirits that

establishes his unique voice within traditional spirit categories. All the products are unfiltered, distilled, barrel aged and

bottled on site in Brooklyn.

Moonshine (100% New York State Danko rye) 45% abv

19th Century New York City produced more Moonshine than the entire American south combined. From industrial scale

operations in Manhattan to “mom and pop” stills in south Brooklyn, grain spirit was once produced in large quantities

in New York City. The Stillhouse is working to revive this proud tradition and their Moonshine stands apart from others

in that it is unaged rye spirit:. This surprisingly smooth interpretation is fruity on the front, with that classic spicy,

grassy, rye finish. The lack of oak brings the grain flavours to the forefront, making the right cocktail earthy and rich.

Bourbon (65% corn, 20% wheat, 10% malted barley, 5% rye) 42% abv

Van Brunt Stillhouse Bourbon is a four grain, wheated bourbon distilled from New York State corn. This spirit is aged

in small, virgin oak casks for a minimum of one year. Intense aromas of straw, sawdust and orange grove waft up all at

once and after a few moments clover honey, cinnamon and sultanas join the party. Dry entry leads to an even drier mid-

palate with a broad, grainy dominance and a surprising, roasty finish.

American (35% malted barley, 35% wheat, 10%rye, 20% corn) 40% abv

This unique, small batch American spirit release is made from a blend of four grains. Wheat and barley are the building

blocks, with supporting roles played by corn & rye. The mash bill alone makes this beauty stand out from any other

American grain spirits. At first on the nose you get new oak with a bit of smoky wood, then honey, clover, and marmalade

notes turn the profile sweeter. Fresh, grassy florals and malty cereal grains round out the experience. Everything is present

in the light bodied palate with a touch of spice on the finish. Aged in small casks for 18 months, this is an excellent new

craft spirit.

Rye (75% rye, 25% malted barley) 42% abv

Van Brunt Stillhouse Rye spirit is distilled from New York State rye, with a touch of malted barley. Aged in small,

virgin white oak casks, it is spicy on the palate with hints of coffee, chocolate, raisins & cherries, with a lovely toasted

almond finish. The intensity of the grain works very well with the small barrels it goes into and after a minimum of one

year the spirit is already full of cloves, orange fruits, spice, and raw vanilla.

Bristol Classic Rum ~ One man’s Rum Crusade

The mission of John Barrett and Bristol Classic Rum is to seek out rare and exceptional rums from individual estates in the

Caribbean, South America and Mauritius. These rums are offered in extremely limited quantities, sometimes only a single barrel

from a single still, after spending many years of careful maturation in damp, dark cellars on the British mainland.

The rums are bottled straight from the cask at their optimum strength without chilling and with only light filtration; this preserves

the subtleties of bouquet and taste. While all the rums can be enjoyed with a mixer, the top end bottlings are best enjoyed alone

as one would enjoy a malt whisky, a good cognac or an aged calvados.

Blended from a collection of younger Trinidad rums, with a softer style and attractive coconut and vanilla flavours, this is the

Soft fruit and oak upon the nose, the palate is light and round with touches of banana and sweet oak, leading to a well-

balanced finish.

Reserve Rum of Jamaica Worthy Park 8y/o 43%

Aged in old American oak this rum has a medium colour, some fruit on the nose and a firm blend of fruit and wood on the

palate with a touch of butterscotch on the finish.

2004 Reserve Rum of Haiti 43%

Matured in American oak barrels in cool damp cellars, bottled without additional colour or sweeting. Soft and fruity on the

nose, the palate is well balanced with fruit, wood and spirit in harmony.

CORTE VETUSTO MEZCAL

Mezcal is the oldest distilled spirit in the Americas, dating back some 500 years. The word comes from the Náhuatl words

metl (maguey / agave) and ixcalli (cooked) and is the term used for any distilled spirit made from agave. Whereas tequila

can only be made from the Blue Agave, mezcal can be made from approximately 30 species of agave, offering

significantly greater breadth and variety of flavour. These agave take anywhere from 6-35 years to mature.

Corte Vetusto (the ancient cut) is more than just a range of single-origin, artisanal mezcals. It is also a celebration of the

unison between nature and ancient craftsmanship. The mezcal is respectfully hand-crafted in small batches by Juan

Carlos Gonzalez Diaz, a 4th generation Zapotec Maestro Mezcalero. The art of mezcal making is in his blood. He uses only

the finest, most mature agave and makes mezcal the traditional way, based largely on the centuries-old techniques. The

agave are roasted for 3-5 days beneath the earth in a traditional pit oven, before being slowly crushed by a volcanic-

stone tahona. The juice and fibres are allowed to ferment naturally over 1-2 weeks in open-topped wooden vats. It is

then twice distilled in small wood-fired copper or ancestral clay pot stills, the choice of which influences the flavour of

the mezcal. Juan Carlos uses both, making him unique and a true Maestro Mezcalero. It is a slow and arduous process

that requires patience, a watchful eye and a skilful touch.

Corte Vetusto mezcals are all joven (un-aged) and unapologetically distilled to proof. They are purposefully agave-

forward, showcasing the magnificent variety of flavour within the plants themselves and the impact of terroir upon

them. They are incredibly balanced, elegant and complex, with mesquite smoke enhancing the flavour, by adding depth

and length, rather than dominating the wonderful agave notes and other flavours.

Mezcal Espadin (45%) ~ made from cultivated agave with a hint of wild agave to give it distinct aroma and taste, this

mezcal is double distilled in a 250L copper pot still. It is a crisp, bright, agave-forward mezcal.

Mezcal Tobala (42%) ~ made from wild agave, the first distillation takes place in a 250L copper pot still. The second

distillation is in a 70L ancestral clay pot still. This is a unique process which marries the crispness and brightness of

copper distillation with the rounder, earthier, more complex flavours that come from clay distillation.

Mezcal Ensamble (43%) ~ a blend of mature, wild agave which varies per batch (see the side of the label for details). The agave

are cooked, milled, fermented and distilled together to achieve a true marriage of flavours. The first distillation is in a 250L

copper pot still, the second in a 70L ancestral clay pot still. This unique process which marries the crispness and brightness

of copper distillation with the rounder, earthier, more complex flavours that come from clay distillation.
