Serves: 4

Preparation Time: 20 mins

Cooking Time: 10 mins

Ingredients:

• 175g Pasta (Tortiglioni or Casarecce work well)

• 1 large aubergine

• 20 cherry tomatoes approx. (cut in half)

• 2 cloves of garlic cloves (peeled lightly crushed)

• Sprig of thyme

• 6 basil leaves (shredded)

• 50g fresh ricotta salata (grated)

PASTA WITH AUBERGINE

Instructions:

1. Preheat the oven to 180 degrees. 2. Slice the aubergine into even sized slices and layer the slices in a colander, sprinkling each layer with salt. Cover the aubergine with a heavy plate and leave for 30 mins-1 hour, to draw out the excess moisture.

3. Meanwhile, lay out the cherry tomatoes on a baking tray. Liberally drizzle the tomatoes with olive oil, season with sea salt and top with the sprig of thyme. When the tomatoes are nicely roasted, remove from the oven and place in a saucepan. Add the garlic and gently simmer for 20 mins. Discard the garlic from the sauce.

4. Once the aubergine has drained, rinse thoroughly in cold water to rinse off the salt. Cut the aubergine slices into cubes, leaving a few full slices for serving. Heat a splash of olive oil in a large frying pan over a medium heat. Once hot, add all the aubergines in a single layer, and fry for 5 to 8 minutes, or until softened and golden. You may need to do this in batches.

5. Boil a large pot of salted water for the pasta and cook according to packet instructions until the pasta is “al dente”.

6. Add the cubed aubergine to the tomatoes and stir. If the sauce is too thick, add a little of the pasta cooking water and a drizzle of olive oil to loosen.

7. In a warm serving bowl, mix together the pasta and tomato sauce. Top with a slice of the aubergine reserved from earlier, the grated ricotta and shredded basil leaves. Season to taste with salt and pepper.

Instructions:

1. Put the cream in a saucepan, adding the sugar, lemon rind and a pinch of salt. On a low heat, gently stir the liquid for 15 mins. Don’t let the cream boil.

2. Meanwhile, soften the gelatine in cold water for 15 mins.

3. Turn off the heat and add the softened gelatine to the pan. Stir until it melts and there are no lumps.

4. Divide the mixture between 6 small dishes/glasses. Chop and add a few berries to each dish.

5. Leave to cool completely at room temperature, then put in the fridge for several hours before serving.

6. Serve with fresh berries and a fruit coulis for a summer classic.

HOW FOOD PLAYS AN INTEGRAL PART IN AN EVERYDAY ITALIAN LIFESTYLE

‘What you’re going to have for lunch, and what you look like are the two most important things you think of when you get up.’

Never were truer words spoken by Italian chef Giorgio Locatelli, on being asked what being Italian means. It’s hard to overestimate how important food is to Italians. It goes far beyond just simple nourishment.

Discussions about how a particular dish should be cooked, what sauce is acceptable with which pasta shape, or which wine suits your Acqua Pazza are serious business.

Chef Locatelli says when he was growing up, his parents genuinely mistrusted a family who lived nearby because they committed an unforgiveable sin - putting parsley in their minestrone. It’s hardly easy to imagine Shirley across the street cutting all ties with you upon discovering your preference for horseradish with your roast beef!

This reverence for food and how it’s prepared stems from the importance of

family in largely Catholic Italy. Extended family groups come together to eat as often as possible. The average year is littered with Saint’s days and festivals around which traditions have grown about particular foods to be enjoyed. For example, 19th March is St Joseph’s Day, and when cafes and bakeries start to fill their shop windows with zeppoles, also known as Italian doughnuts, there can be no doubt amongst Italians as to the date!

Another example is the pastiera, a creamy, deep dish pie-like dessert originally from Naples but popular all over the country. This dish was created by a Nun in a convent who wanted to make a dessert to celebrate the coming of Easter, so she created this cake as a symbol of the Resurrection.

The family set up is also very traditional – you will always find nonna or mamma doing all the cooking – and celebration meals will last several hours. What is eaten becomes so engrained in the family and the region’s folklore, that to change anything is unthinkable.

Italian families also have a tradition of dining together on Sundays, similar to us Brits. They will be likely to start with antipasti, translated as “before the meal”. These dishes vary from region to region,

but they traditionally consist of cured meat, olives, mushrooms, anchovies, various cheeses, pickled meat and vegetables in oil or vinegar.

This is followed by two main courses: primo, which might be home-made pasta or a soup such as minestrone, and secondo, a meat or fish dish. Following on from this, one can expect cheese, local of course, and then dessert before ending the meal with espresso and an ammazza-caffe (meaning coffee killer), i.e. a limoncello or other liqueur.

This is what it is all about for the Italians; enjoying local traditional food and enjoying it with family.

Italian food, crucially, has simplicity at its heart – fresh ingredients from the ground, grown under that wonderful Mediterranean sunshine, cooked simply and with love and care.

Whether it is art, politics, fashion, sport or food, in Italy the most important thing is to have passion for whatever you are doing. It’s this passion and pride that also make the food so delicious, popular and wholesome.

Imagine... a week away from the office, surrounded by stunning countryside, staying in a private villa and relaxing under the Italian sun. Feel energized each morning after a restful nights sleep and enjoy starting the day with a Pilates session before breakfast.

Hot yoga is all the rage these days, but who wants to be stuck in a sweaty room when you could be enjoying some gentle Pilates moves by a pool in Italy? There are some real benefits from exercising in a warmer climate. By letting your body acclimatise to the heat, your muscles will relax and your flexibility will increase.

The benefits of Pilates are almost endless. Vanessa Hedge, one of our ‘Body Control’ Pilates teachers believes: “Pilates really is for everyone, whether you are recovering from an injury or just want to improve your posture, flexibility and core strength.”

Pilates can improve your posture, muscle tone, balance and joint mobility as well as relieve stress and tension. It’s great for your abs and can also relieve back pain. Pilates’ slow and controlled movements puts minimal impact on your joints.

Take a holiday from yourself, put your worries to one side and focus on the here and now in Italy. Pilates hones your focus – it requires concentration and the ability to focus on your breathing and your body. Our Pilates retreats are led by teachers who teach ‘Body Control’ Pilates which is a style of Pilates based on the principles of Pilates founder, Joseph Pilates. If you find yourself not having enough time in your busy life to join a local Pilates class, our Pilates retreats are the equivalent of taking a 10 week course but condensed down into a week. 8-10 lessons a week are included in the cost of the trip and all equipment is provided at the villa.

Ideal for relaxing those muscles. The most important thing is just to relax, in peaceful surroundings.

and commitment as possible. The light is strong and directional, the shadows deep and short. They don’t stand still for long and capturing this moment in time requires a leap of faith, that once taken reaps a genuine reward.

We painted for an hour or so then break for some well-deserved refreshment. We discuss the challenges of the shifting light and how best to capture its transition, which elements to select within the composition, what to leave out or move and how best to mix the blue of the sky.

Now busy with people milling about, locals melting into the crumbling facades, their

smiles encouraging our gaze. Visitors peer over with admiration, probably wishing they could give it a try.

Before we knew it our time was up, it had flown by and that happens when you paint. Our friendly driver beckoned us away - we had a dinner date to keep. It was a great day painting, as the finished art work proved. The people of Sicily were so friendly and we even accepted a glass of Prosecco from the kind folk at a wedding we came across in the village square!”

PAINTING IN SICILY: A DAY TRIP TO MARZAMEMI

WHY MARZAMEMI?

“On my first painting holiday as a tutor with Flavours I went to Sicily. As part of the holiday, we visited the old tuna port of Marzamemi which lies on the southern tip of Italy, further south than the top of Tunisia. It is an interesting mix of Italian and North African architecture and culture. The day was hot and clear with a few wispy high clouds streaking across an otherwise azure blue sky. The buildings around the harbour, now a mix of gift shops and cafes once serviced Sicily’s largest tuna fishing port. It doesn’t take too much imagination to visualise the hustle and bustle of those bygone days. A maze of alleyways leads you back into the town with picture perfect doorways and clever compositions at every turn. However, what really caught our imaginations, was the contrast between the water and the old dry stone buildings, so this is what we settle down to paint.

The compositions here look after themselves, and it is not long before we’re all immersed in our painting, oblivious now to the strangers eye that wanders from artist to artist. We take a little time with our drawing, but once we start with the colour we work with as much speed

landscape provides all the ingredients for our chefs as they show you

how to rustle up mouth-watering local dishes.

Tuscan fare is simple but hearty and bursting with flavour: from ribollita, a hearty vegetable stew to chunky Tuscan bread soup and rustic pasta dishes such as pici, a thick spaghetti with wild boar or rabbit sauce.

For a break from the kitchen, you can explore the charming alleys of medieval Siena, one of Italy’s best-preserved medieval towns. Built on three hills and surrounded by medieval walls, take in the stunning Duomo, preserved Gothic architecture and of course the famous Piazza del Campo - one of the world’s most unique piazzas. For a change of pace, there is also the charming town of Arezzo, boasting its Piazza Grande, perhaps a good opportunity to tuck into a classic bistecca alla fiorentina, a char grilled T-bone steak washed down with a good Chianti.

Villa Bucine is situated in the breathtaking

medieval hamlet of Montebenichi, near the most

famous tourist spots in Tuscany such as Siena

and Arezzo. This spacious, traditional villa is set

on a large farm estate surrounded by rolling hills

typical for the region. Villa Bucine was recently

renovated to bring back its charming Tuscan

style with original antique furnishing. Villa Bucine

La Frasca is set on a impressive private estate

between Pisa and Florence in the heart of Tuscany.

The estate is a 400-hectare park with its own

vineyards and olive groves and is surrounded by

Example Itinerary

Day 1 Our Flavours transfer will meet you at Pisa airport and take you to your accommodation on our private estate. Upon arrival, there will be welcome drinks before your first cookery lesson with our local chef, preparing your evening meal with your fellow cooks.

Day 2 After breakfast, your second hands-on cookery lesson will take place before lunch. In the afternoon, visit a local winery for a private tasting. Return to the villa for dinner prepared by our chef.

Day 3 Following breakfast, spend the morning exploring Florence and enjoy lunch at an excellent local restaurant. Then you will have your final cooking lesson at the villa before dinner.

Day 4 After breakfast and some time to relax, our transfer will pick you up at the villa and take you back to Pisa airport.

The Amalfi coast is one of Italy’s top destinations and we are sure it’s going

to become a firm favourite with Flavours guests. Stretching about 50 km

along the southern side of the Sorrentine Penninsula, the Amalfi coast has

the most breathtaking scenery; cliffs terraced with lemon groves, white

washed villas clinging to the unforgiving slopes and the views are to

die for.

Amalfi has a reputation for great food whether its San Marzano tomatoes straight off the vine or the enormous and intensely aromatic lemons - perfect for making the famous limoncello. During the week-long holiday you will also get the chance to visit an artisan fior di latte (mozzarella cheese) producer too.

Dishes you will sample include: pasticciotti (pastry tart oozing with lemon custard- best eaten with a strong Neopolitan coffee) , tonati e patate (calamari), spaghetti al limone, ricci e peperoncini (typical handmade pasta with fresh tomato & chilli sauce), marinated anchovies, fresh local seafood including parpandalo shrimps, prawns, clams and fish baked on lemon leaves.

Sun, sea, sand – and a hint of the exotic: Sicily teeters on the edge of Europe

and its flavours are tinged with the culinary heritage of North Africa. Moorish

invaders introduced spices such as cloves, cinnamon, nutmeg and saffron

along with citrus fruits to the island. The Byzantines, Romans, Greeks and

Spanish also left their mark on the architecture and cuisine.

We base ourselves in Sicily’s south-east surrounded by the crumbling grandeur of historical sites such as Siracusa’s Greek Theatre, and the Baroque towns of Noto and Ragusa – and within easy reach of some of the region’s best local produce. Nearby Avola produces almonds, Ragusa wine and Caciocavallo cheese and Pachino, sweet ripe cherry tomatoes. Fresh fish is, of course, a highlight of this Mediterranean island: think grilled swordfish, tuna and anchovies along with regional specialities such as arancini and aubergine parmigiana. Then, there’s sheep’s milk ricotta – which is also used to make one of Sicily’s signature sweets – Cannoli. The island is famous for its sweets: cassata is a delicious ice cream dish, while granita, a semi-frozen dessert, was invented in Sicily.

VENUE

Our home in Sicily is a gorgeous old 19th-century farmhouse (Masseria) on a private estate. Surrounded by lovely gardens and a fabulous pool, it’s the perfect place to kick back and relax after a morning in the kitchen to enjoy a pre-dinner Prosecco.

Day 2 After breakfast, your first cookery lesson with our local chef, followed by lunch. You are free in the afternoon to relax at the beautiful Villa Aragonese. Dinner is served at the villa.

Day 3 You will enjoy a private tour, lunch, and wine-tasting at a local vineyard. In the late afternoon your second hands-on cookery lesson, followed by dinner.

Day 4 Visit the coastal town of Siracusa and have lunch. Travel to Noto to taste local ice cream at a classic Gelateria. Tonight’s dinner will be at Villa Aragonese.

Day 5 After breakfast, enjoy another hands-on cookery lesson and lunch at the villa. This afternoon is free to relax by the pool. Dinner this evening is at the villa.

Day 6 Another cookery lesson in the morning before heading to Modica, to taste its famous chocolate. The afternoon will be spent exploring the stunning town of Ragusa and have an evening meal at our favourite local restaurant.

Day 7 Following breakfast, a cookery lesson and lunch you will be free to relax for the afternoon at the villa by the pool. In the evening, we will enjoy our final meal at the villa.

Nicknamed the heel of Italy, Puglia’s cuisine has been influenced over the

centuries by its neighbours and invaders. The Greeks left their mark with

fragrant, herb-infused lamb, spit-roasted over a crackling fire.

This sun-baked land is scattered with fortified castles and whitewashed trulli, Puglia’s distinctive conical shaped dwellings, and carpeted with a silvery sea of olive groves. It also has an incredibly rich natural larder. The area produces most of the country’s extra virgin olive oil, full-bodied wines and is famous for its intensely flavoured olives, almonds and figs. Other local specialities include orecchiette, an ear-shaped pasta, seafood risotto, fave beans (which are dried and made into a paste) and burrata, a creamy cheese similar to mozzarella.

Sights to savour along with the turquoise sea and long sandy beaches are, the 13th century Swabian castle, the city of Lecce’s glorious Baroque churches, a legacy from the Spanish, and the cathedral in Otranto’s amazing mosaic floor, the work of a 12th-century monk.

Casino Pisanelli is a lovingly restored 17th-century hunting lodge in rural Salento which has been converted into a luxurious country retreat. Think formal gardens, a picturesque pool, and shady courtyards planted with lemon and orange trees – perfect for delicious meals al fresco.

Day 3 After breakfast your second hands-on cookery lesson followed by lunch. Afternoon is free to relax by the swimming pool or take a cycle ride to a nearby village. Dinner at the villa.

Day 4 Leave after breakfast for shopping and sight-seeing in Lecce, the ‘Florence of the South.’ Lunch is at a local trattoria. Drive to Otranto situated by the sea, and visit the famous cathedral. Return late afternoon for dinner.

VENETOThe Veneto region, like countless other Italian regions, has its own food

specialities. A visit to this north-eastern area of the country offers a

wonderful opportunity to explore the culinary traditions of the region.

The number of stunning cities and towns in this area is huge, and includes

the unforgettable Venice, beautiful Treviso and Conegliano (the home of

prosecco!).

Obviously due to the proximity of the sea, there is a large selection of seafood dishes to choose from. Not only is the lagoon known for its fresh sea water dishes, there is also an interesting number of inland fresh fish dishes. Preserving fish by either marinating them or keeping them in salt is a very common ancient technique that still continues to this day. No visit to the Veneto is complete without tasting baccala – salted cod prepared with cream, parsley and garlic or one of the staples, polenta (originally known as cucina povera). One of the most famous specialities of this region is Risi e Bisi. This hearty dish consists of creamy risotto and pancetta – buono!

Day 1 Benvenuti! Welcome to the Veneto! Our Flavours transfer will meet you at Marco Polo Airport upon arrival. Once you arrive at the villa, you can settle in, meet your host and enjoy welcome drinks. Dinner tonight will be prepared by your chef.

Day 2 After breakfast, you will have your first hands-on cookery lesson with the chef, followed by lunch. You’ll have the afternoon to relax and enjoy the villa surroundings before dinner at the villa.

Day 3 Following breakfast, our transfer will collect the group and take you to Venice. Here you will have the day at your leisure to wander around this stunning city you will enjoy lunch in a typical Bacaro. Whether you choose to explore the mysterious passageways by foot or float along the maze of canals, Venice offers an abundance of stunning architecture and breath-taking views. Later this afternoon, you will return to the villa for dinner.

Day 4 After breakfast you will go to Treviso and visit the fish market before travelling to a nearby vineyard for prosecco tasting and lunch. Later this afternoon you will return to the villa for another hands-on cookery lesson with the chef, followed by dinner.

Day 5 After breakfast you will have your third cookery lesson with the chef, followed by lunch. Later this afternoon you’ll have time to relax at the villa before dinner at the villa.

Day 6 Another cookery lesson after breakfast, with time to relax before lunch. Later this afternoon you will visit the beautiful town of Conegliano. Here you will spend some time sight-seeing before dinner in our favourite local osteria.

Day 7 After breakfast you have your final cookery lesson and lunch. Enjoy your last afternoon relaxing at the villa and in the evening a special farewell dinner prepared by your chef.

Day 8 Our transfer will collect you after breakfast and take you back to Marco Polo Airport for your flight home. Arrivederci!

Day 3 Demonstration of landscape painting after breakfast, looking at different ways to apply watercolour and mixing media like pastel and coloured pencil. Following lunch, there will be an outing to use the techniques. Dinner is at the villa.

Day 4 Enjoy a day in Siena sight-seeing or shopping at leisure. Lunch will be at a trattoria in the centre. Before dinner, the tutor will discuss some examples of traditional and contemporary watercolour painting.

Adrian Wiszniewski

For me teaching is a great way of

communicating with people. I always advise

my students to be as adaptable as possible as

you never know what you will find. You are on

holiday to experience Italy’s beautiful scenery

and culture, so don’t let it pass you by. I try to be as flexible as

possible in my teaching approach as I believe that there are no

right and wrongs in painting. Your artwork is yours and it is up to

you what inspires your creation and how you decide to use your

brush. Take time to try new things, explore the landscape and

your artistic skills.

Catherine SargeantI love enabling people to look and see before

translating into paintings: the rhythms of the

landscape; the textures of the stone buildings;

the colours of the delicious foods, wines and

more. During the lessons I demonstrate ways

to use watercolour paints freely and how to incorporate mixed

media, encouraging loose vibrant paintings. I give individual

tuition throughout the week, so both beginners and experienced

artists can expand their painting skills.

Robert Nelmes

Leeds born Robert Nelmes studied drawing

and painting at Edinburgh College of Art.

Since then, he has worked as a successful

illustrator whilst also exhibiting and

completing commissioned work. Robert

moved to the Isle of Skye at aged 16, which provided inspiration

to begin landscape painting in oil and watercolour. He has worked

with many diverse clients over the past 25 years such as The

National Trust for Scotland, Historic Scotland and RBS.

“My work shows my preoccupation with capturing reality; using

light, shade, and colour. Throw in some expression and a touch of

flare and you’ll soon discover why I find painting so addictive and

fulfilling. My goal when teaching is to share all of this so you can

discover it for yourself in a fun and relaxed way.”

Hugh Tuckerman

Hugh is a graduate of Edinburgh College of

Art where he studied Drawing and Painting.

He has 30+ years of teaching experience in

various secondary schools in Scotland’s central

belt, teaching art and design to both school

pupils and to adults. He is now a full time artist working in a range

of media; watercolour, acrylic and oil painting plus printmaking

and photography. He exhibits nationally with work in a number of

private collections.

I will guide you through the week, offering advice and tuition

in order to improve your technique, understanding and increase

your passion for painting. I concentrate on adapting my teaching

to the abilities and experience of each individual. I believe it

is important guests enjoy their holiday while developing their

painting skills. One of my mantras is “it is only a piece of paper”.

Michael Gahagan

I passionately believe that we can all draw!

As an artist and professionally qualified life

coach, my aim is to combine my artistic and

coaching skills to help participants enjoy art

and develop at a pace that suits their own

level. The format of the each course is informal and supportive

and is designed to improve confidence, build artistic skills and

encourage each participant’s individual artistic development.

Alan McGowan

Alan studied at Edinburgh College of Art

and has since worked as a professional artist

and teacher. He has nearly 25 years teaching

experience in art schools and colleges and

has taught at Edinburgh College of Art, The

National Portrait Gallery (London) and West Dean College in

Sussex. He was a semi-finalist in SKY Arts Portrait Artist of the

Year 2015 and his work has appeared in the BP Portrait Awards

at the National Portrait Gallery and regularly at the Royal Scottish

Academy.

Alan specialises in drawing and painting landscapes and figures

emphasising colour and freedom of expression. His works are

produced in varied materials such as inks, acrylics, watercolours,

pastels and oils, which he has exhibited throughout the UK and

internationally.

Catherine Crompton

Catherine discovered Pilates after being

diagnosed with a prolapsed disc, and the

prognosis was either surgery or exercise. She

chose the latter to rehabilitate herself with the

gentle help of Pilates exercises. After living

with back pain for many years, she decided to train to become a

Pilates teacher, knowing that the method really could help with

many types of medical conditions. Having lived in Italy, teaching

there is the perfect scenario for Catherine, combining two of her

great loves, Italy and Pilates.

“There’s nothing better than telling my clients to float their arms

up to the bright blue sky and really meaning it.”

Jyoti Sigouin

Jyoti first discovered the Pilates method 14

years ago, looking for an alternative to the

gym. She quickly discovered that Pilates

helped create a strong and supple body, a

balanced mind whist being both energising

and calming. Jyoti qualified as an instructor

with Body Control Pilates in 2008.

“We’ll start off the week quite gently, taking time to focus on your

body, breathing and relaxation. As the week progresses and all

those niggly aches, pains and tight muscles release, we’ll start

building up strength and stamina, working on increasing flexibility,

coordination and balance.”

Diane Parrilla

Diane formally trained with the Royal Ballet

School in London. After an injury in 2002,

she trained to become a qualified Body

Control Pilates instructor and since then has

continuously developed her training.

“The great thing about a Pilates holiday is that it’s not just about

Pilates. Besides high quality lessons, you will have the opportunity

to see beautiful sights and learn how to cook fabulous Italian

Vanessa Hedge

Since qualifying in 2008, Vanessa has

taken Pilates courses in lower back pain,

Osteoporosis, Intermediate and Advanced

mat, and Ante/ Post natal Pilates. She is

trained to use equipment such as the small

ball, toning circle and the foam roller.

an injury or want to improve your posture, flexibility or strengthen

your core muscles. I have the pleasure of working with clients

who range in ability and age- from 12 years old to 88 years old -

making my job incredibly varied.”

Janine Quirk

Janine has been a qualified Body Control

Pilates instructor for 20 years. She was one

of the first Supervising teachers, helping

newly qualified teachers hone their teaching

practices.

morning and most evenings, but I get to have fun with them all

Rosalind stumbled upon Pilates back in 2002

after getting her youngest child off to school.

She joined a local class to find out what all the

fuss was about.

Since qualifying with Body Control in 2004, Rosalind has

taught in a variety of situations. After running a studio in

Northamptonshire for many years, she now teaches private

clients and thoroughly enjoys her work with Flavours Holidays.

Day 1 Our Flavours transfer will meet you at Brindisi Airport and take you to the beautiful Casino Pisanelli where you can enjoy welcome drinks and time to relax before dinner prepared by our local chef.

Day 2 Begin the day with energising morning Pilates, followed by breakfast. After breakfast, your first cookery lesson is with our lovely local chef Antonio, followed by lunch. In the afternoon, there is a visit to Santa Maria di Leuca (at the very tip of the Salento Peninsula where the Ionian and Adriatic Seas meet). Enjoy an aperitivo before returning for dinner at Casino Pisanelli.

Day 3 Enjoy your second Pilates lesson followed by breakfast and lunch. The afternoon is free to relax by the swimming pool or take a bicycle to a nearby village. Dinner is at Casino Pisanelli.

Day 4 Energizing pilates before breakfast. Leave after breakfast for a day sight-seeing, to Lecce, the ‘Florence of the South.’ Time for shopping before lunch at a local trattoria. Drive to Otranto, with the chance to visit the famous cathedral. Return for dinner at Casino Pisanelli.

Day 5 Pilates lesson before breakfast and then lunch. In the afternoonrelax in the villa, take advantage of the swimming pool and have someone with your instructor before your evening Pilates lesson. Dinner will take place at the villa this evening.

Day 6 Another Pilates lesson this morning and your second hands-on cooking lesson. In the afternoon, there is a visit to Gallipoli and the chance to wander around the old town. Dinner is at an excellent local fish restaurant.

Day 7 Enjoy your final Pilates lesson this morning and then lunch. Afternoon free to sunbathe or relax. Farewell dinner at Casino Pisanelli this evening.

Day 8 Depart early for your flight home.

Day 1 Our Flavours transfer will meet you at Catania Airport and take you to the villa where you can enjoy welcome drinks and dinner.

Day 2 Energizing Pilates lesson to start the day. After breakfast, you will have an optional cookery lesson followed by lunch. Enjoy the afternoon as you wish, with another Pilates lesson in the evening before dinner.

Day 3 Pilates lesson before breakfast. This afternoon enjoy a private tour, lunch and wine tasting at a local vineyard. In the late afternoon enjoy your fourth Pilates lesson followed by dinner at the villa.

Day 4 Energizing pilates before breakfast. Today we visit the town of Siracusa where we will have lunch. We then travel to Noto to taste local ice cream at a classic Gelateria. Tonight’s dinner will be at Villa Aragonese.

Day 5 Start the day with a Pilates lesson and breakfast. You will be free to relax at the villa by the pool or take a walk through the countryside. There will be another lesson in the evening before a meal at the villa. Possibility of individual Pilates tuition depending on numbers.

Day 6 After our morning Pilates lesson we head to Modica, where you will be treated to chocolate tasting with a local producer. The afternoon will be spent exploring the stunning town of Ragusa, where we will have an evening meal at a local restaurant.

Day 7 After our morning Pilates lesson, you can relax before lunch. Afternoon at the villa with time to discuss your exercise programme with the teacher. Farewell dinner at the villa.

Day 8 Final Pilates lesson this morning. Lunch at the villa before a late afternoon transfer back to the airport.

In collaboration with the Italian Language Institute we provide experienced foreign language tuition for guests in Tuscany and Amalfi. Day 1 Our Flavours transfer will meet you at Pisa Airport and take you to the villa for welcome drinks on the terrace followed by dinner and an introductory talk with your photography tutor.

Day 2 After breakfast you will have your first photography session to ease you into the week followed by lunch. After lunch, you will be set a small project to complete around the villa. Mingle with your fellow photographers over a glass of Prosecco, before dinner.

Day 3 Your second photography lesson will take place after breakfast. Following lunch, there will be an outing to use the techniques learned from todays lesson. Upon your return, dinner will be prepared by the chef.

Day 4 Today’s lesson will focus on photographing local produce and the dishes prepared by the chef for lunch. After delicious lunch, the afternoon is free to enjoy as you wish and dinner will be prepared for you at the villa.

Day 5 After breakfast, the group will head to Siena for market day. Siena will provide the group with endless opportunities to capture amazing photos. Lunch will be at a local restaurant in Siena, followed by a photography assignment in the city before heading back to the villa for dinner.

Day 6 Immerse yourself in another photography lesson followed by lunch at the villa. In the afternoon, the group will visit the Crete Senesi area of Tuscany, where you will have the chance to capture your own piece of classic Tuscan landscape.

Day 7 Your final lesson at the villa will be followed by lunch and a free afternoon to relax and enjoy the end of your holiday. In the evening before dinner, the group will share their best photos from the week. A special farewell dinner will follow prepared by the chef.

Terms and Conditions

FLAVOURS OF ITALY LTD

1. All arrangements are made subject to the following terms and

conditions. When you make a booking with ‘Flavours of Italy Ltd’ you

undertake that you have the authority to accept and do accept these

booking conditions on behalf of yourself and your party. A contract will

exist upon our accepting any monies from you towards the booking, or

upon the issue of our Confirmation/Invoice, whichever is the earlier.

2. A deposit of 40% per person is payable at the time of booking which

will be non-refundable except in the event of the booking not being

accepted by us for any reason, or if due to unforeseen circumstances

we are unable to provide the course for which you have booked.

3. The balance of the price is payable in full ten weeks before

departure. If the balance remains unpaid, we reserve the right to cancel

the booking and retain the deposit.

4. Cancellations must be made in writing to us by the person who

made the booking. Any notice will become effective from the date of

receipt by us of the notice. The following cancellation charges will be

levied, (i) up to 28 days prior to departure 50% of the price (ii) 27 days

to 14 days prior to departure 75% of the price (iii) 13 days or less prior

to departure, or on departure date, 100% of the price.

5. It is a requirement of the booking that you must arrange adequate

holiday insurance. Such insurance should cover full medical expenses,

personal baggage, personal accident, accident, loss or damage to

property, cancellation or travel delay, personal liability, legal expenses

and emergency.

6. We shall not accept responsibility for any cancellations or effect on

your holiday due to war, threat of war, civil strife, industrial dispute,

terrorist action, natural or nuclear disaster, fire or adverse weather

conditions.

7. We reserve the right to withdraw or modify at any time the

arrangements advertised where necessary to do so. In the unlikely

event of the accommodation advertised not being available, we will

endeavour to provide suitable alternative accommodation.

8. All reasonable and proper steps have been taken to ensure that the

accommodation and services are as advertised. We will be responsible

for any acts or omissions of our own employees and agents whilst

acting within the scope of their employment but cannot be responsible

for the acts or omissions of those providing services over which we

have no direct control.

9. In the interests of safety and hygiene, you are advised to wear

appropriate clothing and footwear in the kitchen at all times.

10. We shall not be responsible for luggage lost in transit while the

responsibility of an airline. Where possible we will provide advice and

assistance in seeking to retrieve any luggage so lost.

11. We will not be responsible if you suffer illness, personal injury or

death as a result of misadventure during the period of your overseas

trip arising out of an activity that does not form part of the course

provided by us.

12. All courses are subject to a minimum number of bookings and we

therefore reserve the right to cancel and in this event we will return all

monies which you have paid. In no case will your holiday be cancelled

within four weeks of departure except in the event of circumstances

out-with our control.

13. In the event of any problems arising during the course, you must

report it immediately to our representative on the course and failing

satisfactory resolution of the problem, you should file a written report

within 28 days of your return. No liability will be accepted for any

complaint not reported to our representative at the time and intimated

within 28 days thereafter.

14. All travellers need valid passports.

15. The contract, of which this forms part, shall be governed by the law

of Scotland.

16. Transfers included in the holiday costing are provided as a Group

Transfer. Please ensure before booking flights that the relevant transfer

can be met. We are more than happy to arrange a private transfer for

you should you wish to arrange flights out with the Group transfer

times, however this will result in an additional surcharge which varies

, depending on location being payable by yourself. We reserve the

right to withdraw or modify at any time and will always endeavour to

provide a suitable alternative in the unlikely event of this occurring.

All money paid by you for the air holiday package shown are ATOL

protected by the Civil Aviation Authority. Our ATOL number is ATOL
