Baked Eggs in Tomato Sauce2 teaspoons extra-virgin olive oil1 large yellow onion, diced small1 garlic cloves, minced1 can (28 ounces) tomato sauce2 1/2 cups baby spinachRed-pepper flakes (optional for heat)Coarse salt and ground pepper4 large eggs1/2 cup goat cheese, crumbled2 tablespoons chopped fresh basilCrusty Italian white breadDIRECTIONSPreheat oven to 400º F

In a large nonstick skillet, heat oil over medium.Add onion and cook, stirring, until softened. Addgarlic and cook but do not burn, about 1 minute.Stir in tomato sauce and cook 3 minutes. Add apinch of red-pepper flakes, to taste. Season withsalt and pepper and set aside for a minute. In agratin dish or a 2-quart shallow baking dish addyour spinach to the bottom, top with still hottomato sauce then with the back of a largespoon, make a well in sauce and crack your eggsinto each. Bake until whites are set but yolks arestill runny, about 20 to 25 minutes, rotating dishhalfway through. Are you staying at Big White for anextended period of time? If so, you willwant to pre-plan some of your meals.There are some great restaurants in theVillage (see pages 6-9) but some nightsyou might want to stay home for dinner.Most units are equipped with fullkitchens. Try the easy recipe in this sec-tion and wow your family and friends.

There are lots of options:You may also enjoy having someone elsetake care of your meals; all you have todo is order, then cook or bake! three times as long, or as far, to stopon snow and ice than it does on drypavement. Be extra cautious in dangerzones: intersections, lane changes,turns and stops.

In snow, tires barely grab the road, soaccelerate, turn and stop gently. If iceand bare patches alternate, brake in thebare spots and coast over the ice. Applythat same rationale to bridges, whichfreeze before roadways, and try toreach “bridge speed” before you getthere. Four-wheel-drive owners: eventhough your system is great for movingaround in the snow, it doesn’t help youslow down! Word to the wise: slowdown safely!

A word about snowplow drivers.They’re up when you’re asleep, work inconditions you avoid in order to clear

Big White Ski Resort is 56 km (35 miles)South East of Kelowna, the largest cityin the Okanagan. From Kelowna, followHighway 33 for 32 km (20 miles) untilyou reach Big White Road. Another 24km (15 miles) and you will arrive in themain village.

If you aren't comfortable driving insnow, see these ads for some greatoptions! If you do plan to travel BritishColumbia roadways when wintry condi-tions are a possibility, you should carrychains or have snow tires. When youcome to a posted sign on the highwaystating “Winter Tires or Chains AreRequired Beyond This Point”, you mustbe ready to install chains or have properwinter tread tires before proceeding.

N GETTING HERE IS EASY!SO NOW YOU’VE PLANNED YOUR VACATION!Your flight is booked, reservations are madeand your lift tickets are bought. But beforeyou get too excited about riding to the topof the ski lift, you should take care of a fewother important details.

From the airport, either rent a car and havethe flexibility for day trips or if you aren'tcomfortable driving in snow, take a taxi,pre-book a shuttle or book a limousine andarrive in luxury. See pages 12-13 for somegreat options. Once you arrive at Big White,most everything is within walking distance.

There's a lot to do to get ready foryour trip to Big White Ski Resortand we want to make it easier foryou.

CANADIAN CUSTOMS INFORMATIONCANADA’S ENTRY REjUIREMENTS:1. What type of identification will I need to present to Canada Customs?Canada’s entry requirements require that every visi-tor from out of the country needs a valid passport.Some travellers require a visa to travel to Canada.For a complete list, visit the Government of Canadawebsite: www.cbsa-asfc.gc.ca If you are traveling with children, the customsofficers may ask detailed questions about them.Parents who share custody of their children shouldcarry copies of the legal custody documents.

2. Is there anything that I can’t bring into Canada?Here is a brief list of some items you are prohibitedto bring into the country: firearms and/or offensiveweapons, drugs, certain fruits and/or plants thatcould contain harmful pests and diseases and meat.As long as you meet the age requirement of 19 yrs,you can bring up to 40oz. of liquor, 52oz. of wine, or24 containers of beer. You can also bring 200 ciga-rettes, 50 cigars or cigarillos, 200 tobacco sticks,and 200 grams of manufactured tobacco.

September 3rd • Big White Chairlift Challenge Adventure RaceYou've done the Grouse Grind, now get ready for BC's latest Adventure race – the 2nd annualBig White Chairlift Challenge. There are prizes for the first place male and female winners foreach age category. Three challenging routes to choose from: the 9.5km Main ChairliftChallenge has a route that traverses the tops of every chairlift at Big White Ski Resort. The6.5km Middle Length Race is a milder circuit around the mountain, and the 2km Youth Racethat stays on the lower part of the mountain and passes by the bases of three chairlifts (TelusPark, Black Forest and Bullet Chairs).
