According to Rutgers University, “a food system includes everything from
farm to table”. A community food system is a system in which
food production, processing, distribution and consumption are
integrated to enhance the environmental, economic, social and
nutritional health of a particular place, and its inhabitants.
While this description may be academic and a bit abstract, for
the Apple Hill™ Growers Association and their many visitors, our
local food system is very real. Apple Hill™ Association fruit and blue-
berry growers and their customers who visit our farms to “pick their
own” or purchase fruit products directly from the grower are the
ultimate examples of the locavore and farm to fork/table movement.
Our visitors transport their fruit products home to be tomorrow’s
blueberry pancakes or the apple in their kid’s school lunch. And, of
course, the estate grown wines purchased from one of our Apple
Hill™ Grower Association wineries will accompany that night’s meal.
While the nutritional health benefits of consuming fresh fruit
cannot be understated, there are other benefits that make the
Apple Hill Grower Association farm market a unique experience.
The grower has the opportunity to educate visitors regarding prac-
tices that will sustain their farms for future generations: Soil con-
servation practices such as mulching and cover cropping, water
conservation practices, and cropping systems that require less (or
no) chemicals and fuel inputs to produce a crop.
Our visitors are rewarded with a sense of place and a family
experience that create memories lasting a lifetime. Humans are
farmers at heart, reflecting an innate desire within all of us to stay
connected and close to the land from which we came. A visit to
the Apple Hill™ Association Grower farms to buy or harvest fruit
fresh from the grower is the highest expression of the farm to table
movement. Or, as the Apple Hill™ Association Growers would say,
“farm to family to fork”.

The Effects of Wildfire By Paul Bush
It still amazes me that people visiting our tasting
room from other states will sometimes comment that they could never
live in California due to the constant threat of earthquakes. This
statement is the perfect opportunity to open up a discussion on what
we in the Sierra Foothills consider to be the greatest threat: forest fires.
The region’s broad expanses of grass and timbered land make for
dangerous situations, especially under drought conditions. The recent
Rim Fire and last year’s King Fire are both reminders of the destruction
and loss possible when wind, heat, dryness and a spark combine.
Although most people see the direct damage to the region with
scorched hillsides and burnt trees, there are a host of less evident
impacts to our livelihoods and way of life.
It’s the immediate impact of the smoky conditions that can
really hurt farmers. Forest fires often seem to flare up when most
people might consider the fire season to be over in September and
October. For Apple Hill™ Grower Association farmers, this
coincides with our most popular tourism season: harvest.
Small family farms survive by selling products directly to people
visiting. Smoke-filled air hides much of the beautiful views and
creates poor breathing air quality which drastically reduces the
number of visitors. And as a domino effect, farmers see less
income to help maintain their orchards and vineyards.
This maintenance of the farm includes the fact that many of us
need to harvest our crops in September and October. As with your
garden at home, our fruit needs to be picked at perfect maturity,
meaning “no waiting.”
Small farms rely upon skilled individuals to pick our crops (no
mechanical harvesting here). If conditions are too smoky, however,
it’s difficult to ask anyone to work outside. Thus the crop ripens
more and the risk of over-ripeness increases.
And then there is a unique issue associated with wine-grapes and
smoke. Smoky conditions during the rapid ripening season (early
August through late September) can produce smoke taint in the
wines. Just as we breathe, the leaves of the grape vine transpire

Johnny Appleseed Says “Be Fire Safe”
Mother Nature throws a lot of “curve balls” at
farmers. These “curve balls” include late frost, heavy rains, flood,
hail, and, in the current four year cycle, drought.
While all these “curve balls” challenge the farmer to implement
interventions, farmers must develop specific practices to combat
drought. The farmer is conscious of water conservation at all times.
However, in years of drought, the farmer is hyper conscious of
guarding against using water unnecessarily.
One threat in a drought cycle that effects the water supply for
the farmer is the use of water to extinguish wild fires. A measure
to limit this waste of water is the practice of Green Waste Fuel
Reduction Programs in agricultural areas and neighboring commu-
nities. Green Waste Fuel Reduction Programs create defensible
space and firebreaks. This not only protects our farms and our
neighboring communities from devastating wildfires, but also helps
save ag water from usage in fighting fires.
In this high-risk fire year and fourth year of drought, the Apple
Hill™ Growers Association is teaming up with the El Dorado
County Fire Safe Council and El Dorado Disposal to promote Green
Waste Clean-Up Projects throughout Placerville, Camino, and
Pollock Pines, the towns that are home to our farms and wineries.
Because this year controlled burning will likely be restricted to little
or no burning, piles of green waste fuel must be removed from the
land rather than burned. The Green Waste Clean-Up Projects

I like having these cookies for breakfast. Interestingly,
this cookie pairs great with Pinot Noir for a great dessert.
Ingredients:2⁄3 cup extra-virgin olive oil
1 egg
2 teaspoon vanilla
2 teaspoon dark rum or water
¾ cup flour (gluten free flour works just fine, too)1⁄4 cup firmly packed brown sugar
1 teaspoon powdered ginger1⁄2 teaspoon baking powder1⁄2 teaspoon salt
1 1⁄2 cups old-fashioned oats1⁄2 cup dried tart cherries or cranberries
1 medium-sized “Apple Hill™” apple, peeled, cored.1⁄2 cup medium Cheddar cheese, grated
¾ cup chopped walnuts
• Preheat the oven to 375°
• Whisk olive oil and egg in a bowl until combined.
• Whisk in vanilla and rum and set aside.
• In a large bowl, sift flour, brown sugar, ginger,
baking powder, salt. Add oats.
• Stir in dried cherries/cranberries.
• Grate cheese directly into mixture. Add apples and stir.
• Add liquids and stir gently until dough is wet and clumpy.
• Drop dough in large spoonfuls on an ungreased baking sheet.
• Bake until cookies are golden (17-20 minutes).

Ingredients:
4 cups blueberries from “Apple Hill™ Growers”
1 cup sugar
½ cup water or apple juice
2 teaspoons corn starch
1 cup melted butter
2 cups granulated sugar
2 cups all purpose flour
2 teaspoons baking powder
1 teaspoon cinnamon (optional)
½ teaspoon nutmeg (optional)
2 cups milk
Heat oven to 450º. Combine in a saucepan: blueberries, sugar, water
or apple juice, and corn starch. Mix well then cook over medium heat
until bubbly and thick. Pour into a 9x13 inch baking dish. Mix the
remaining ingredients until combined. Pour over fruit in baking dish.
Bake for 25 minutes. Cool slightly before enjoying.

Real Christmas trees have always been a topic of
conversation when it comes to house fires that occur during the holi-
day season. Each year, according to the California Christmas Tree
Growers Association, Californians purchase approximately 33 million
fresh cut Christmas trees. At the same time, the National Fire
Protection Association reports that annually there are approximately
210 house fires involving Christmas trees. While the odds of your tree
causing a house fire are extremely low (less than 0.0006%), the Apple
Hill™ Christmas Tree Growers would like to offer you a few tips to
further reduce any risk without having to forego the tradition of hav-
ing a beautiful fresh cut tree in your home during the holidays.
1. Buy the freshest tree possible! The best way to buy is to visit a
local farm to select and cut a live tree. Not only will you get the
freshest tree possible, farmed trees are a renewable resource,
they are completely biodegradable and your purchase supports
local family farms.
2. As soon as you get home, re-cut the tree stump approximately
2” and put it in water. Check the water level daily and ensure
the base of the trunk is fully submerged in water at all times as
long as the tree is inside.
3. Place your tree as far away as possible from heat sources, out of
direct sunlight, and away from open flames.
4. Prior to installation, check all string lights and electric powered
decorations for frayed cords or exposed wires. Do not overload
electrical sockets and always turn off lights and electric powered
decorations when you are sleeping or away from home.

during these smoky days and nights. The result is that the vine can pick
up this smoky flavor, putting some of it into the grape berry itself. Wines
produced from these grapes can have an identifiable smoky flavor.
Lastly, the lifeline of agriculture is water. There is no doubt that
when fighting fires, the need to use water in order to put out the fire
trumps all other uses. Preventing fires, however, will help save this
limited and valuable resource for farms and cities alike.
In 2014, we were lucky. Although the King Fire did impact tourism,
most vineyards and orchards had already harvested their crops before
the smoke-filled air arrived. These conditions, however, highlight the
new world in which we live. No longer are farmers just looking at the
weather for the success of their crops. Instead we are reliant upon
everyone being careful when enjoying the beautiful Sierra Nevada.
Earthquakes come and go, but forest fires we can help prevent.

The “King Fire” of 2014 scorched nearly 100,000 acres and was
stopped within a few miles of many Apple Hill™ Grower Association

Why do people come to visit the Apple
Hill™ Grower Association farms? Is it the fresh fruit, the crisp air,
the winding country roads, the beauty of the crops lined up in neat
rows? Maybe it’s the chance to see a real farm and to observe a
life-style that was once the way most people lived.
A hundred years ago, visiting a farm in California would not
have attracted many people since most people lived on a farm.
Today, a trip to an Apple Hill™ farm is a chance to see fruit on the
trees or berries on the vine, and perhaps to pick and eat that fruit.
Now visitors can observe juice being pressed and then have a glass.
They can follow the delightful aromas coming from a bake shop
and watch pies and cakes come right out of the oven. They can
choose a pumpkin out of the patch. They can taste wine near the
vines that produced it. They can picnic in an orchard or overlooking
vineyards. They can cut their own Christmas tree.
Visitors often look around and think that this would be a great
place to live - and it is. But a word or caution: While it has many
rewards, living on a farm is not for everyone. Trees and vines
require care all year long. Those 4-H animals and charming poultry
must be fed each day (which means few vacations). Many Apple
Hill™ farmers have other “real jobs” and farming is the all-con-
suming hobby. There are few days off, it’s hard physical work, and
farmers seldom retire.
It was a life-style we chose more than 40 years ago. We learned
to be farmers. Our children developed many skills and learned to
work hard. Grandchildren and neighbor’s children have worked on
the farm. Many a college application lists work experience at our
little fruit stand. The people we live and work with are the best.
We have never regretted our choice!
So do come and visit the Apple Hill™ Grower Association farms.
Although it may not be your choice for a life-style, your experience
at these farms will be something you will always remember.
