About The Red Robin Kids’ Cook-Off CookbookForeword by Eric Houseman, President and COO, Red Robin Gourmet Burgers

At Red Robin, we are all about offering our Guests a variety of craveable gourmet burgers. And who better to create our next gourmet burger than kids? After the 4th annual nationwide search for our next gourmet burger through the Red Robin Kids’ Cook-Off, we chose some of the most enticing recipes and have included 50 of them here, in this unique cookbook.

Besides inventive burger recipes, one of the best things about the cookbook is it also includes important back-to-school safety tips from the National Center for Missing & Exploited Children® (NCMEC). There is no better time to talk about back-to-school safety with kids than while doing something fun, like cooking.

Congratulations to 10-year-old Emma Potts from Bonney Lake, Washington who created the grand prize-winning Spicy Honey Glazed Bacon Burger. Her recipe is just one of the gourmet burger recipes in this cookbook. While you can make this recipe at home, make sure you visit one of our U.S. Red Robin® restaurants from August 3 through September 12, 2010 to order Emma’s gourmet burger. For every Spicy Honey Glazed Bacon Burger that is sold, Red Robin will donate 50 cents to NCMEC to support child safety initiatives*.

Many thanks to all of the kid chefs who submitted their own flavorful and innovative gourmet burger recipes to the contest! We hope you enjoy making these creative gourmet burgers at home.

The Red Robin Story

Where can you get a burger topped with grilled pineapple rings, chili, guacamole, onion straws or an even fried egg? At Red Robin® restaurants — where we’re famous for Gourmet Burgers! And believe it or not, these Gourmet Burgers have taught us a lot about who we are as a company — always use the freshest, highest-quality Honest to Goodness® ingredients, take pride in what you’re creating, be innovative and have fun!

The Red Robin legacy began in the 1940’s with Sam’s Tavern, a small tavern perched on a Seattle hilltop near the University of Washington campus. The owner, Sam, sang in a barber shop quartet and could frequently be heard singing the song, “When the red, red robin goes bob’ bob’ bobbin’ along.” In fact, Sam loved the song so much that he eventually changed the name of his tavern to Sam’s Red Robin, and over the years it became known simply as the Red Robin® restaurant.

Today, Red Robin Gourmet Burgers, Inc. is a publicly-traded, casual dining restaurant chain. We offer our Guests more than two dozen Gourmet Burgers in a variety of combinations with all-you-can-eat Bottomless Steak Fries.® Our menu also includes salads, soups, appetizers, entrees, desserts, children’s fare and our signature Mad Mixology® specialty beverages.

Foreword by Ernie Allen, President and CEO, National Center for Missing & Exploited Children® (NCMEC)

In more than 25 years of operation, we at the National Center for Missing & Exploited Children® (NCMEC) have seen great progress in child safety. Still, we know there is more that can be accomplished through a shared commitment to safety education. That is why we are grateful to once again take part in the Red Robin Kid’s Cook-Off.

We know that child safety can sometimes be a difficult topic for families because it seems frightening, but every day situations make the best moments for those conversations. One of the most convenient is each year when we send our children back to school. This year, we again worked with Red Robin to fill this cookbook with useful tips and ideas for back-to-school safety in addition to the great burger recipes.

The beginning of a new school year can be a really exciting time for families as their children leave home for new schools, teachers, and friends, sometimes for the first time. But it also means children may find themselves more at risk. NCMEC found that 37% of attempted abductions happened on the way to and from school. With this in mind, we have filled this book with small ways to build children's confidence and teach them safer ways to respond to and avoid potentially dangerous situations. We hope you will use the resources in this book to instill in yourselves and your children the necessary skills to be safer as they start back to school and all year long. So, please enjoy cooking these delicious burgers with your family and remember it’s sometimes easier to talk about something serious while doing something fun.

Real-World Safety with the National Center for Missing & Exploited Children (NCMEC) and the NetSmartz® Workshop

Both NetSmartz and NCMEC strongly believe that preparation and family communication are a key part of keeping kids safer. Be on the lookout for teachable moments year-round to help you talk with them about personal safety. A good place to start is with back-to-school safety, the goal being to help teach your children how to recognize and avoid potentially dangerous situations and make smarter and safer decisions.

Ten Tips for Cooking with Your Kids

At Red Robin, we are all about families and fun. Through this cookbook, we encourage parents and guardians to spend quality time with their kids cooking together in the kitchen. Below, we have included some helpful Red Robin tips on ways parents and kids can have fun together while staying safer in the kitchen.

1. Explain kitchen safety to your child before starting any cooking project. It’s important that every child knows the “do’s and don’ts” of cooking and kitchen manners.

2. Wash your hands with warm water and soap before starting any cooking project.

3. Prepare recipes that are kid-friendly. There are many cookbooks available, including this one, with family-friendly recipes that your child will be excited to make…and eat!

4. Give your child his or her own apron and plastic youth-sized cooking utensils.

5. Explain each step in the recipe to your child as you cook so he or she learns what it takes to make a great meal.

6. Allow your child to pour ingredients into the bowl or stir the contents so he or she is involved in the cooking process.

7. Only allow your child to participate in things that will not harm him or her. Do not allow your child to use knives or glass utensils, and make sure he or she does not touch a hot stove, cook top or pot.

8. Give your child praise while you cook together.

9. Expect some spills! Cooking is fun, but it can be messy!

10. Involve your child in the set-up, cooking and clean-up process. Although cooking is fun, it is important to clean up afterwards, too.

Red Robin Tips for Making a Perfect Gourmet Burger:

At Red Robin, one of our core values is having fun! However, we also know the importance of being safe, so we’ve developed some great tips to keep you and your family safe while you make these kid-invented Gourmet Burgers.

GeneralFooDsaFeTyTIps:

• Keep hot food hot and cold food cold.

• Cook food thoroughly; Red Robin recommends beef burgers be cooked to an internal temperature of 160° F, chicken burgers be cooked to 165° F, and pork burgers be cooked to 155° F. These internal temperatures should be reached for 15 seconds or more to ensure the meat is cooked through.

• Wash your hands frequently, especially after handling raw meat.

• Keep raw meat separate from cooked meat and other burger toppings to avoid cross contamination.

• Keep it clean; make sure there are plenty of clean utensils and platters to use before, during, and after making your gourmet burger.

• Refrigerate any leftovers promptly.

• If ever in doubt, throw food out!

WhenyouDeCIDeToMaKeaGourMeTBurGeronTheGrIll,useTheseTIps:

• Position the grill well away from siding, deck railings and out from under eaves and overhanging branches.

• Never leave the grill unattended.

• Keep children and pets away from the grilling area by declaring a three-foot “safe zone” around the grill.

• Be sure to have a fire extinguisher on hand just in case.

Q&A With Food Network’s Robin Miller

Q: Robin, being the host of the Food Network’s “Quick Fix Meals with Robin Miller” as well as being the author of multiple cookbooks that share the same theme of showing busy families how they can easily prepare meals at home, would you say that a burger fits your “Quick Fix” definition?

A: I think a burger is an ideal “Quick Fix Meal” because of the many ingredients that go great on a burger, like those included in the Red Robin’s Kids’ Cook-Off Cookbook. Families can be creative in the kitchen and select toppings for their burgers that they already have in their kitchens without too much preparation. Even better? Each person can choose their own, individual topping or toppings — one might just want cheese, another onions and tomatoes, and yet another pickles and ketchup. There are countless ways to create a personalized burger!

Q: What’s your secret to a good burger?

A: I think the Red Robin chef and I both agree that it’s all about incorporating fresh ingredients and flavors that work harmoniously together. But don’t be afraid to get creative — some of the best burgers I’ve eaten include ingredients you wouldn’t typically think of for a burger, just like the 50 burgers these talented kid chefs made.

Q: What kind of advice would you give to kids to become a future Food Network star?

A: Keep cooking with your families and trying new meal ideas. Follow your dreams! If you have a passion for cooking, your creativity will shine in your food. Plus, when you choose a career doing something you absolutely adore, it never feels like you’re going to “work”!

Q: Do you think it’s important for parents to expose their kids to cooking at an early age?

A: Cooking with your kids is so important! One of my first kitchen memories is cooking with my mom and my sister as a child. And, it’s something I do with my own kids today. I truly applaud Red Robin for encouraging kids across the county to get involved in cooking at an early age. Spending time in the kitchen goes way beyond creating family meals, it nourishes family bonds while creating lifelong memories.

My burger deserves to be sold at participating “Red Robins” because I have created a better

burger than anyone else who enters this contest. One of the reasons is because I introduce GRILLED vegetables (mushrooms and onions). This brings

something different than “fried or sautéed” veggies and people will like the idea of grilled

veggies. It will make everyone’s mouth water for the “COWBOY BURGER.” Another reason that my

burger is the best is because it is different enough that when people look at the ingredients, they won’t think, “That looks weird!” They will think,

“I want the Cowboy Burger!”

Prepare the prickly-pear mayonnaise by combining one part store bought prickly-pear jam with two parts mayonnaise. Cook beef patty to desired doneness. Spread both slices of bun with a liberal amount of prickly-pear mayonnaise. Place beef patty on bottom bun. Top the patty with the roasted poblano pepper. Sprinkle the queso fresco cheese over the pepper. Add 1 piece of crisp green leaf lettuce. Over the lettuce, position a few thin slices each of the tomatillo and red tomato. Finally, top the burger off with a small handful of red corn tortilla strips. Now that says “Southwest!”

BuIlD:You start with a sesame seed bun, a little toasted on the white side. At the end of cooking the patty and before you put it on the bun, you put a good large spoonful of hoisin sauce on the meat to warm it a little; THEN put it on the bun. Add cheese (American is my favorite) and some stir fried onion-bell peppers. To stir fry the onions and the bell peppers, slice them into strips and sauté them in a dab of Hoisin sauce. Serve!
