A Message from U-46 Department of Food & Nutrition Services
To: Healthy Lifestyle and Wellness Stakeholders:
As stakeholders, sometimes we forget that we are role models for our
children and future leaders. Setting good examples for our children begins
at home. Nurturing them helps them to develop a sense of security and
comfort. Giving them the right food to eat is as crucial as giving them the
right books to read. Parents, teachers, and caregivers play an important
role in promoting healthful diets for children where they live, learn and
play.
Research has shown that reading books aloud is the single most valuable
support parents can provide in helping children learn to read. It is equally
important to support children in learning to make healthy choices. Our
“Total School and Community Involvement Wellness Initiative” is a holistic,
interactive approach to changing their course to a healthy lifestyle.
As partners in Team Nutrition, our mission is to offer this new and
innovative approach to increasing reading comprehension by providing
students with opportunities to make the connection of how healthy lifestyle
choices can result in academic achievement.
The Department of Food and Nutrition Services has created an all
inclusive, comprehensive wellness program that can be used in all
grade levels. This concept is based on what we call the ten dimensions of
wellness. Food is a universal commodity that plays a very important role in
the health and well-being of all Americans. Students and parents involved
in the school meal program will also be able to “Taste A World” of Career
Opportunities in the food service industry showcased by our Industry
Advisory Council.

One last thing before I go. I’m going to tell you something you all should know.
The Egyptians know what I’m talking about. It’s the food pryamid, guys, so scream and shout.
It was six, then seven, and now it’s eight. Groups in the pyramid to make it great.
Now tell all your friends about what you’ve heard. And make “food pyramid” your favorite word.

A Healthy Life is a Happy Life, is a well-known fact and yet not understood by millions of Americans. According to
statistics, the trend of obesity and chronic diseases such as diabetes, hypertension, heart diseases and depression are
high and common in American population. To my understanding it is a simple fact that if you are not healthy, you
cannot be happy.
Those with chronic illnesses such as obesity, diabetes and depression have a hard time getting through every day
of life and those blessed with health tend to abuse it. How can one get a healthy and happy life? Though it may seem
difficult at first, it is still achievable if you change your lifestyle and discipline yourself. There are seven dimensions
of wellness. These seven dimensions are lifelines of living, and help you live a happy, comfortable life.
The seven dimensions of wellness can be identified as social wellness, emotional wellness, spiritual wellness, environmental
wellness, occupational wellness, intellectual wellness and physical wellness. Social wellness is the ability to successfully connect
and communicate with those around you. Emotional wellness is to share your personal thoughts and feelings with those close
to you and to face the challenges that life will throw at you. Spiritual wellness is to recognize the flow of peace and harmony in
our life by forming a connection between all known beings. Environmental wellness is to be aware of the natural environment
around us and to have the initiative to care for it such as preserving clean air. Occupational wellness is to be able to form a
balance between work and life and be able to face everyday challenges. Intellectual wellness is the ability to process new
ideas, skills and concepts and then to apply it to decisions, challenges and other obstacles in life. Last but certainly one of the
most important is physical wellness which is the ability to accomplish a healthy strong and fit lifestyle, while trying to prevent
fatigue and physical stress, and avoiding the pressures of drugs.
To begin with, creating a fitness plan is essential, as it will guide one to keep on track of leading a healthy life. All you have to do
is stay focused and motivate yourself. Exercise and consume food that is healthy. Stay away from junk food. Don’t overeat and
consume only the amount your body needs.
Being able to maintain yourself in a healthy manner is one of the greatest challenges in life, but it will eventually pay off and
is gratifying. It is the physical wellness that disciplines you and helps you in achieving and balancing all seven dimensions of
wellness. It influences your overall lifestyle and helps you achieve a healthy life. Eventually by achieving all forms of wellness
a person creates a sense of peace and harmony within himself and faces challenges of life boldly which can be as simple as
resisting unhealthy food or finding time to exercise every day.
In conclusion, living by the seven dimensions of wellness will always lead a person to success. Creating a fitness plan will keep
you on track. Healthiness is the key to happiness. So it is a phrase well said—healthy life is a happy life!

The reason why I want to pursue a career in the culinary field is
I really love to cook. Ever since I was allowed to touch the stove
I have been cooking (with the help of my grandmother ,of course).
When I actually started to learn the basics of cooking I just wanted
to learn more. When I took my first foods class I asked if I could be
skipped from foods 1, 2 to foods 3, 4 because 1, 2 was just baby
stuff—not to sound arrogant or narcissistic or anything like that.
At the beginning of the class we were put into groups but by the end
of the year I was doing most of the cooking and cleaning by myself
so my teacher recommended me to move from food 3, 4 to the food
services program (foods 7, 8). This program is called the Clumsy
Chef Restaurant, which is a fully licensed restaurant. I don’t have
the best grades in my graduating class, but this is something
I really want to do for the rest of my educational and working career.
Even if I don’t win the contest just to participate in the contest would
be great. Just to have actual chefs to critique my work would be a big
deal to me.
Coconut Chicken Breast Entrée
8 servings
D I R E C T I O N S :
1.Combine ¼ cup pineapple juice, ¼ cup cream of coconut, soy sauce, brown sugar and rice wine vinegar in a half sheet pan. (use as marinade)
2.Wash chicken breast and cut into strips. Then add to pan of marinade, cover and refrigerate for 4 hours or overnight.
3.Cut potatoes into mushroom shapes.
4.Place cut potatoes in baking pan, cover with chicken stock and top off pan with white cooking wine. Bake in 400-degree oven until fork tender.
5.Set up three staging pans to bread chicken.
6.In first pan add flour with salt & pepper.
7.In second pan add eggs and whip.
8.In third pan mix Japanese bread crumbs with shredded coconut.
9.Dredge the chicken in the flour, then eggs, and finally in breading.
10.Heat just enough oil in a sauté pan to cover the bottom of the pan and then add strips and brown for 30–60 seconds.
11.Turn over and repeat.
12.Place browned chicken in half sheet pan and then bake in 400-degree oven until internal temperature reaches 165 degrees.
13.Keep the chicken warm until potatoes, sauce and vegetables are finished.
14.Using the sauté pan that you browned the chicken in, add the balance of cream of coconut, pineapple juice, cream and 1 t. cornstarch.
15.Cook over medium heat, stirring constantly until it thickens, use as a sauce over baked chicken.
16.Place small amount of water and butter in sauce pan to steam broccoli.
17.Bring to boil. Add broccoli and cover with lid. Let rest for 1–2 minutes off heat.
18.Plate food with sauce on bottom of plate at 6 o’ clock.
19.Top with 2 pieces of chicken, 3 oz. of steamed broccoli, and 3 mushroom shaped potatoes.
I N G R E D I E N T S :
6 oz. Pineapple juice, divided
1 cup Cream of coconut, divided
4 oz. Soy Sauce
¼ cup brown sugar
¼ cup rice vinegar
2 lbs. Boneless Skinless Chicken Breasts
1 cup Flour
Pinch Salt
Pinch Pepper
5 Eggs
8 oz. Shredded Coconut
4 oz. Japanese Bread Crumbs
4 oz. Vegetable Oil
4 oz. Heavy Cream
1t. Corn Starch
24 small baby red potatoes
2 Cups Chicken Stock
White cooking wine (1-3 cups)
24 oz. Broccoli Florets
1 T. Butter
