    BREEDING EWES (15) Max. £96 A nice entry of Texel breeding ewes from James Penny from the New Forest

    which were 6T and full mouth and having been run with a Texel ram since 1st

    September, selling at a respectable £96.

    FAT PIGS Fewer fat pigs forward this week due to the fat stock show here at market next week. The best quality still to a good trade with light bacon weights to £117 twice from Durnell& Son of Chippenham.

    STORE PIGS A good entry this week with 8 week old Welsh x to £30 twice from MA Webber. Others to £30 for coloured stores from new vendor JA Moffatt travelling from Wantage, Oxford.

    CULL SOWS A better entry in terms of numbers this week. The best to £170 from PB Weeks. Others to £161 and £160 from R Norman and £155 from Durnell & Sons. Cull boars to £100 from O Tant. Please note Fatstock show next week with 30 fat pigs, commercial fat pigs also welcome.

    DAIRY CATTLE Starts. 11.00am AUCTIONEER: TREVOR ROWLAND 07968 480 401 CALVED HEIFERS TO £1420 CALVED COWS TO £1220 A smaller entry this week and demand firm. The quality was good with some good home bred types available. Another consignment of home bred pedigree Friesian Holstein freshly calved heifers from M Keen & family produced a firm steady trade to £1420. September calved Holstein Friesian and Swedish Red x 2nd and 3rd lactation cows from Michelmarsh Farms saw best prices to £1220.

  • CALVES (214) Starts 10.00am AUCTIONEERS: TIM HECTOR 07818 056 049 CHARLIE COLEMAN: 07494 588 013 Similar numbers to last week and no first quality forward. Plenty of demand from

    buyers but prices have eased for all calves.

    CONTINENTAL BULLS TO £162/HEIFERS TO £102 All medium and smaller sorts forward and buyers were forward but buying

    levels are well back on previous weeks. Medium bulls to £162 from Spicer

    Partners others to £140 and £135 most £80 - £150. As above with no best sorts

    forward and whilst there is competitive bidding for all levels are down. Only the

    best medium sorts sold to £100+. Plenty calves £50 - £90.

    NATIVE BULLS TO £188/NATIVE HEIFERS TO £145 Large entry and all grades were sought but to lower levels. Angus bulls to £188

    from C & R Padfield, heifers to £145 from K & EJ Simpson. Hereford bulls to

    £145 from Wilverley Farms and heifers to £92.

    FRIESIAN TO £110 Very few forward and a difficult trade for all but the best. Weaned calves to

    £110, best younger bulls to £60.

    ARLA 360 CALVES Today we saw over 20 calves sold under Arla 360 standards for the first time

    with all realising usual values and being sold. For any further information on this

    The winner of the £25 for the top price Continental sired bull under 41 days

    sponsored by Howard & Sons – Kubota, was a Blue from Spicer Partners to

    An increased entry saw a much improved trade particularly for the younger cattle.

    This week saw our second consecutive sale of organic cattle for November. The quality of the cattle presented for sale was outstanding. The sale ring was buzzing and a superb entry of 50 homebred Charolais single suckled 16-20mo steers and heifers from Cullimore Bros, Thornbury, attracted a blistering trade. 22 steers averaged £1060 and peaked at £1080 on 12 occasions. Heifers were wanted by everyone and topped at £1095 and averaged £1020. More quality organic cattle could have been sold to an advantage this week.

    Over 220 on offer which continue to sell to an advantage with farm assured and named sires at a premium. Forward steers met fast bidding to £1032 from VL Vincent & Son, Weymouth, with others to £965 from John, Gareth and Tudor Jenkins. Younger feeding steers also met a strong demand with 22mo to £920 from Brian Chandler, Dorchester; 17mo to £880 from CF & AM Martin, Sturminster Newton and £820 from Mrs MR Meredith, B & P White and T Rogers & Son. Single suckled yearlings sold well to £785 from CF & AM Martin. Heifers wanted with bullers to £795 from Mrs MR Meredith; £772 (20mo) from Legg & Barnes; £770 (18mo) from Mike Flux, IOW; £765 from Mike Knowles; £762 from LP Norman & Sons; £750 from Brian Chandler and £728 (18mo) from CF & AM Martin. Their yearling heifers topped at £595 (13mo) and others to £562 from JW Wilkins.

    YOUNG CONTINENTALS

    A very lively trade throughout the sale for both beef bred stores and those out of dairy. More buyers around the ring and all were keen to purchase. Smart 6mo Limousin suckled steers from Fielding & Son, Worton, were well sold at £660 and 12mo heifers from Paul & Rob Lucas at £700. 13-14mo Limousin quality steers from the Ritchens family, Southwick, saw bidding to £790. Super suckled Simmental steers and heifers from the Marklove family were all well sold with 11mo steers at £870 and 14mo steers from the James Brothers also at £870. Quality Charolais steers (12mo) once again from Clive House saw plenty of interest to £750 with heifers to £665. British Blues were all wanted with quality suckled steers and heifers 6-9mo from Tim Handy to £722 and £595 respectively. More smart steers (8mo) presented by Abigail Wharton peaked at £730. Dairy x British Blues had an excellent day and a lovely consignment of 10-11mo steers from Pittard Partners created excellent bidding £725-£758. Overall a super day in this section and trade up £50ph on the week.

    HEREFORD

    Quality Herefords today with some super consignments forward. Young 21mo

    Hereford steers to £895 from HP & J Flux, IOW. Well grown 24mo steers also

    attracted strong bidding and eventually sold at £895 from JD Jenkins & Son.

    Fleshed 16mo old steers to £860 from MD & DR James. Few forward Hereford

    heifers entered but fleshed 21mo types to £750 from HP & J Flux, IOW. Other

    fleshed heifers to £690 from Mike Knowles and Sally Withers. Young fleshed

    14mo heifers to £635 from MT Meredith who had others at £580.

  • FRIESIANS

    Very few Friesians forward again this week with best British Friesian types to

    £858 from B & P White who had others at £735 and £695. Well grown Holstein

    types to £700 from Mike Knowles and Sally Withers with other medium types to

    £630 from C & R Padfield. Younger, smaller types to £430 from JW Wilkins and

    £400 from DR & MD Brown.

    FORWARD CONTINENTALS

    Trade still improving with demand outstripping supply. Many more forward cattle

    needed coming in to December. Good conformation Blonde steers sold well to

    £1100 (23mo) from ST Poulsom. Younger British Blue steers also took top

    honours to £1100 (only 18mo) from J & CW Rawlings; their young Simmental

    steers also met keen interest from £965 - £1020 (19mo). Several consignments

    of feeding steers met fast bidding from £865 - £910. Another good selection of

    mainly younger heifers on offer with British Blues selling well to £870 (22mo)

    from E & S Bodman. Simmental heifers to £845 (22mo) from Mike Knowles and

    Blonde heifers to £800 (21mo) from ST Poulsom. Bulling Limousin heifers also

    sold to a strong demand from £770 - £785 from both Mike Flux, IOW and Paul &

    Rob Lucas.

  • RECIPE OF THE WEEK Somerset Pork with Apples & Cider

    Ingredients:

    1kg diced pork 3 tbsp vegetable oil 1 x 400g pack shallots, peeled (or 2 onions, sliced) 2 tbsp chopped sage (or 2 tsp dried) 40g plain flour 1 x 500ml bottle Somerset dry cider 200ml chicken stock 1 medium Bramley apple, peeled, cored and diced 200g chestnut mushrooms, quartered 4 tbsp double cream Optional toppings:

    2 tbsp vegetable oil a few sage leaves 20g unsalted butter 20g caster sugar 2 Cox or Braeburn apples, cored, each cut into 8 wedges Preheat the oven to 150°C, fan 130°C, gas 2. Season the pork and heat 1

    tablespoon of oil in a large frying pan. Brown a third of the pork over a high heat, but don’t overcrowd the pan or turn the meat too quickly – give it time to colour well. Transfer to an ovenproof casserole, then brown the rest of the pork in 2 more batches, adding a little more oil as needed.

    Heat another tablespoon of oil in the frying pan and brown the shallots or onions for 2-3 minutes over a medium heat. Mix the sage and flour into the shallots, then gradually stir in the cider and stock. Add the Bramley apple, season and bring to a simmer, then pour over the pork in the casserole. Cover with a lid and cook in the oven for 2 hours.

    Add the mushrooms and cook for 30 minutes more. If you wish to make the toppings, heat the oil in a nonstick frying pan. Fry

    the sage leaves over a medium heat for 30-60 seconds until crisp. Tip onto kitchen paper.

    Add the butter and sugar to the frying pan and stir to melt. Add the apple wedges and fry for 1-2 minutes each side on high until caramelised.

    Stir the cream into the casserole and adjust the seasoning to taste. Serve topped with the crispy sage and caramelised apples if you wish, with creamy mash and Savoy cabbage.
