So as to validate your participation to the meetings, you are all asked to go through the Hôtel Mercure Cité Mondiale. You will be offered a welcome gift, your pass for all the activities, the town map and other information. The organising team will be present from 10.00 a.m. to 5.00 p.m. so as to welcome you and to this magnificent town named “La Belle Endormie” (the Sleeping Beauty).

More than 30 years ago, FERRANDI was the first school to position gastronomy in higher education by creating an extensive culinary expertise programme. FERRANDI Paris, the French gastronomy school and BEST, Bordeaux Ecole Supérieure de la Table are affiliated to offer FERRANDI Bachelors in Bordeaux. The teachings are identical to those in Paris and are ensured according to the same pedagogical requirements.

It is in this reference setting that the 15th international finals of the YOUNG ESCOFFIER TALENTS competition will be held. A maximum of 8 Kitchen candidates and 8 Service candidates will meet on this day for a final judged by renowned professionals, acknowledged by their peers.

6.30 p.m.: Results of the Competition and prize giving & Dancing Opening night “South West Terroir Gastronomy” Café Maritime – Bassin à flot n°1 – Quai Armand Lalande – 33300 Bordeaux

Café Maritime is not far from Bordeaux town centre and located in an impressive shed of 700m². Taken over since June 1st 2010, this building of atypical architecture accommodates a restaurant with a “loft chic” decoration. A nice restaurant in Bordeaux indeed. It is in this chic setting with an exceptional view of the Cité du Vin and welcoming more than 400 guests that the prize giving ceremony for the Young Talents Escoffier international finals will be held, followed by the Dancing Opening Night promoting South West Terroir Gastronomy.

The dinner for this night will be prepared by the chefs of the Grand Sud-Ouest delegation.

Trip in Saint Emilion We recommend you to wear flat shoes to walk around the city and to climb the escalettes. Video presentation of Saint Emilion en vidéo Nestled in its vineyards, the medieval city of Saint-Emilion has kept all its original charm: golden stones, Romanesque tiled roofs, tangles of alleys with breathtaking view on the surrounding vineyard… Since the foundation of Saint-Emilion in the 8th century by Aemilianus – a monk from Vannes in Brittany – man has been shaping the landscape without changing it. A success acclaimed by UNESCO in 1999 when Saint-Emilion and the 8 communes under its jurisdiction were listed as World Heritage under “Cultural Landscapes”. A world première for a winegrowing terroir. Saint-Emilion will celebrate the 20th anniversary of this recognition by UNESCO.

World famous wines Located on the hillsides overlooking the Dordogne Valley, the Vignoble du Libournais is largely outstanding among the other Gironde vineyards, especially for its concentrated and compact configuration like the winegrowing estates of Burgundy. The terroir is divided into 4 appellations: Saint-Emilion, Saint-Emilion Grand Cru, Lussac Saint-Emilion, Puisseguin Saint-Emilion.

The Jurade of Saint-Emilion, guardian of traditions “The Jurade, Wines Brotherhood of Saint-Emilion, was created in 1199 by Jean Sans Terre, King of England. The latter delegated his economic, political and judiciary power to notables and magistrates so as to run the general administration of the town. In exchange of his new rights, England could benefit from the “privilege of the Wines of Saint-Emilion”. The authority of the Jurade would be in force until the French Revolution in 1789. In 1948, some winegrowers brought the brotherhood back to life which then became the ambassador of Saint-Emilion wines across the world with the ambition to guarantee the authenticity and the quality of its wines.”

9.45 a.m. – 11.15 a.m.: Discovery visit of Saint Emilion and its castles Discovery visit of the historical town centre and its surrounding castles. You will be divided into groups, in bus for the castles, on foot for visiting the town. The division will be made once arrived on the spot.

11.30 a.m.: Group photo You will be informed of the exact meeting place on going down the bus.

Saturday March 16th 2019 – CONTINUATION 12.00 p.m. – 3.00 p.m.: Lunch “Meeting the Jurade of Saint Emilion” Salle Des Dominicains – Saint Emilion

You will be welcomed by the Jurade of Saint Emilion in this magnificent and historical Salle des Dominicains; lunch will start by a chapter of mutual inductions of the Jurade and Disciples Escoffier. Lunch will be prepared by two starred chef of Saint Emilion with the help of Monblanc Traiteur.

3.15 p.m. – 4.45 p.m.: Discovery visit of St Emilion and its castles.

5.00 p.m.: Departure from Saint Emilion for Bordeaux

7.30 p.m.: Gala Dinner “Under the South Western Stars” Intercontinental Bordeaux Grand Hôtel – 2-5 Place de la Comédie – 33000 Bordeaux. Located opposite the National Opera – Grand Théâtre de Bordeaux, the 5-star Intercontinental Bordeaux Le Grand Hôtel will welcome you in the historical town centre. The World Travel Awards, considered as the Oscars of tourism, rewarded last June 30 in Athens the Intercontinental Grand Hotel de Bordeaux. It won the prize for the best French hotel. Yet he had to face the greatest Parisian luxury hotels: Four Seasons George V, Fouquet's, Crillon, Plaza Athenee, Bristol and Mandarin Oriental. The Gala dinner’s theme Under the South Western Star refers to the starred chefs who will prepare the dinner which will be served after a welcome cocktail in the most beautiful private lounge of this renowned hotel with a breath-taking view on the Opera. The suits and night gowns will of course be compulsory and will only add glamour to this prestigious night.

This year, the Magisterial Council will be held behind closed doors on Thursday, the day before the beginning of the International Meeting. For this purpose, convocation will be sent to each member of the Magisterial Council. The results of the debates will be communicated during the General Meeting on Sunday morning.

9.30 a.m. – 12.30 p.m.: Free time for the guests For all the guests or persons who do not want to participate to the General Meeting, a free time is offered. We recommend you to visit Cité du Vin and/or the Halles de Bacalan
