1. Significance and Problems The main purpose of teaching in schools nowadays is to help students to learn by themselves. One thing we can do is to do the tasks by ourselves with the good advice from teachers. Doing project work is one of the best ways to support student’s learning and need. Nowadays “Mint” is a very important product. We have used mint to cook since the past to these days. Such as Larb Esaan dish, after we cook Larb we always add mint leaves on the top of it for decorating then Larb will be taste better with mint. Mint is very easy to grow, usually every house has mint in the garden. 2. 5.1 History of Mint

Mint is known to have originated in Asia and the Mediterranean region. In many cultures,

mint symbolized hospitality and was offered as a sign of welcome and friendship to guests as they

arrived. In the Middle East mint tea is still served to guests on their arrival, whilst in ancient

Greece, the leaves of mint were rubbed onto the dining table, which was a sign of their warm

greeting.

Mint was also often used as an air freshener and was placed in the rooms of houses,

synagogues and temples to clear and freshen the air and rid the smell of unpleasant odours from the

room. The Greeks and the Romans used mint as a perfume and a bath scent, as well as using it in

medicine and in cooking.

Mint was so revered by the ancient Greeks that they named the plant after the mythical

character Minthe. According to Greek myth, Minthe or Menthe as she is also known, was a river

nymph. Hades, the God of the Underworld, fell in love with Minthe and wanted to make her his

lover. However, Persephone, Hades's wife found out and in a fit of rage turned Minthe into a plant,

so that everyone would walk all over her and trample her. Unable to undo the spell, Hades gave

Minthe a wonderful aroma so that he could smell her and be near her when people trod on her.

5.2 Kinds of Mint

Kinds of Mint were classified as illustration in Table 1.

5.2.1 Orange Mint or Bergamot Mint

Mentha piperita 'Orange Mint' is a wonderfully easy to grow garden herb that

has a fresh orange fragrance and flavor. Use Orange Mint for culinary or cosmetic uses. Try adding

crushed orange mint to a hot bath in the winter for an invigorating aromatherapy bath. Use Orange

Mint in teas, desserts, salad dressings, with poultry and seafood. Excellent dried or fresh.

5.2.2 Water Mint, Marsh Mint or Wild Mint

Mentha aquatica, the Wild Mint, Water Mint or Marsh Mint in its many

variations (of which M. sativa, the Hairy Mint, is by most botanists considered to be one, and not a

distinct species), is the commonest of the Mints, growing abundantly 1 to 2 feet high, in extensive

masses in wet places, banks of rivers and marshes, and well distinguished by its downy foliage and

whorls of lilac flowers which towards the summit of the stem are crowded into globose heads. The

scent of the plant is strong and unpleasant to modern idea, but Dononaeus says: “The savour of

scent of Mynte rejoiceth man, wherefore they sow and strow the wild Mynthe in this countrie in

places where feasts are kept, and in Churches. The juyce of Mynte mingled with honied water

cureth the payne of the eares when dropped therein, and taketh away the asperitie and roughness of

the tongue when it is rubbed or washed therewith.”

The dried herb yields about 4 per cent of essential oil, having an odour of

Pennyroyal, the characters of which are not well determined. Russian Spearmint oil is derived from

a form of this species.

Medicinal Action and Uses. Used in herbal medicine in diarrhoea and as an

emmenagogue, the infusion of 1 OZ. of the dried herb to 1 pint of boiling water being taken in

wineglassful doses.

In severe cold and influenza, or in any complaint where it is necessary to set

up perspiration and in all inflammatory complaints, internal or external, the tea made from this plant

may be taken warm as freely as the patient pleases. It can be used in conjunction with stomach

remedies and in difficult menstruation. A strong infusion is inclined to be emetic.

A decoction of Water Mint prepared with vinegar is recommended to stop

blood vomiting.

5.2.3 Peppermint

Overview:

Peppermint (Mentha piperita), a popular flavoring for gum, toothpaste, and tea,

is also used to soothe an upset stomach or to aid in digestion. Because it has a calming and

numbing effect, it has been used to treat headaches, skin irritations, anxiety associated with

depression, nausea, diarrhea, menstrual cramps, and flatulence. It is also an ingredient in chest

rubs, used to treat symptoms of the common cold. In test tubes, peppermint kills some types of

bacteria and viruses, suggesting it may have antibacterial and antiviral properties. A number of

studies support the use of peppermint for indigestion and irritable bowel syndrome.

Itching and Skin Irritations. Peppermint, when applied topically, has a soothing and cooling effect on skin

irritations caused by hives, poison ivy, or poison oak.

Tension Headache. One small study suggested that peppermint applied to the forehead and temples

helped reduce headache symptoms.

Colds and Flu. Peppermint and its main active agent, menthol, are effective decongestants.

Because menthol thins mucus, it is also a good expectorant, meaning that it helps loosen and breaks

up coughs with phlegm. It is soothing and calming for sore throats (pharyngitis) and dry coughs as

well.

How to take It:.

Pediatric Do not give peppermint to an infant or small child. Peppermint oil applied to

the face of infants can cause life-threatening breathing problems. In addition, peppermint tea may

cause a burning sensation in the mouth. For digestion and upset stomach in older children: 1 - 2 mL

peppermint glycerite per day.

Adult

Tea: Steep 1 tsp. dried peppermint leaves in 1 cup boiling water for 10 minutes;

strain and cool. Drink four to five times per day between meals. Peppermint tea

appears to be safe even in large quantities.

Enteric-coated capsules: 1 - 2 capsules (0.2 ml of peppermint oil) two or three times

per day for IBS.

Tension headaches: Using a tincture of 10% peppermint oil to 90% ethanol, lightly

coat the forehead and allow the tincture to evaporate.

Itching and skin irritations: Apply menthol, the active ingredient in peppermint, in a

cream or ointment form no more than three to four times per day.

Precautions:

The use of herbs is a time-honored approach to strengthening the body and treating

disease. Herbs, however, can trigger side effects and can interact with other herbs, supplements, or

medications. For these reasons, herbs should be taken with care, under the supervision of a health

care provider.

Do not take peppermint or drink peppermint tea if you have gastroesophageal reflux

disease (GERD - a condition where stomach acids back up into the esophagus) or hiatal hernia.

Peppermint can relax the sphincter between the stomach and esophagus, allowing stomach acids to

flow back into the esophagus. (The sphincter is the muscle that separates the esophagus from the

stomach.) By relaxing the sphincter, peppermint may actually make the symptoms of heartburn and

indigestion worse.

Pregnant or nursing mothers should avoid peppermint and peppermint tea.

Never apply peppermint oil to the face of an infant or small child, as it may cause spasms that

inhibit breathing.

Peppermint may make gallstones worse.

Large doses of peppermint oil can be toxic. Pure menthol is poisonous and should never be taken

internally. It is important not to confuse oil and tincture preparations.

Menthol or peppermint oil applied to the skin can cause a rash.

Possible Interactions:.

Cyclosporine - This drug, which is usually taken to prevent rejection of a transplanted

organ, suppresses the immune system. Peppermint oil may slow down the rate at which the body

breaks down cyclosporine, meaning more if it stays in your bloodstream. Do not take peppermint

oil if you take cyclosporine.

Drugs that treat diabetes - Test tube studies suggest peppermint may lower blood

sugar, raising the risk of hypoglycemia (low blood sugar).

Anti-hypertensive drugs (blood pressure medications) - Some animal studies

suggest that peppermint may lower blood pressure. If you take medications to lower blood

pressure, taking peppermint also might make their effect stronger.

5.2.4 Egyptian Mint

Egyptian Mint has a flavor similar to Apple Mint. But, this is a much more robust

plant with sturdy upright stems and large velvety gray leaves. Mint freely crosses and many

different kinds have evolved from this wild hybridization. Some of these wild plants are great and

some are stinky or taste bitter.

Scholars disagree on which mint was actually the mint of the Bible, but this is a

nice one from the same region. There were probably many mints then, as there are today. That Mint

was tithed at all, in ancient times, shows the value the Pharisees placed upon this herb. Imagine

determining what one tenth of your mint crop was! Mint was valued for its fresh aroma and sweet

taste and often used to flavor meat. Also an important “strewing” herb, mint stems were hung in

doorways and thrown on dirt floors to mask the effects of inadequate sanitation.

5.2.5 Apple Mint 'Apple Mint' is a delightful garden herb with very attractive apple green

foliage. Apple Mint can be used as a ground cover and harvested for use in teas,

jams, jellies or cooking. Wonderful to use fresh or dried.

5.2.6 Spearmint

Mentha spicata 'Spearmint' is a wonderfully easy to grow garden herb that has

a fresh spearmint fragrance and flavor. Use Spearmint for culinary, medicinal or cosmetic

uses and of course teas. Leafy spikes of the Spearmint plant display purple-hued flowers in

the summer. Excellent dried or fresh.

5.4 The cooking procedure using mint

5.4.1 Thai Food

From our study, For Thai food is generally used mint for decoration. Here are some

simple culinary uses for mint.

1) Larb Kai < Spicy Chicken Salad>

Ingredients : ½ cup of ground chicken

½ cup of chicken skin

½ cup of sliced chicken giblets

1-2 tablespoons of fish sauce

Ground dry red chili

2-3 tablespoons of lemon juice

2 tablespoons of ground roasted-rice

Fresh pepper

4-5 heads of shredded red onion

2 stocks of shredded cilantro

3 stocks of shredded green onion

1 cup of mint leaves

How to cook :

1. Crop chicken and chicken skin then boil then, Add chicken giblet .

2. Let them cool and put them in a bowl

3. Add fish sauce, lemon juice, ground dry red chili and mix them

4. Add all vegetables then ground roasted-rice.

2) Larb Wun Sen <Grounded Pork with Vermicelli Salad>

Ingredients : 1 cup of ground pork

1 cup of dry clear vermicelli-noodles in water for 20 minutes

until soft drained

4 pieces of ground galingale

3 tablespoons of shredded parsley

3 tablespoons of shredded green onion

½ -1 tablespoons of ground roasted-rice

3 tablespoons of shredded red onion

1 teaspoon of ground dry red chili

3-4 tablespoons of lemon juice

3 tablespoons offish sauce

¼ cup of the edible inflorescence of a banana plant soaked in lemon juice

1 cup of shredded mint leaves

Lettuce, green bean, green onion.

How to cook :

1.Cook ground pork for a few minutes until there’s no any water left in a pan,

then allow the pork to cool down.

2. Scald vermicelli ,then add ground galingale

3.Drain vermicelli, add shredded parsley , shredded green onion ,ground

roasted-rice, shredded red onion , ground dry red chili ,lemon juice , fish

sauce and stir .

4.Add shredded mint leaves on the top.

3) Larb Tau-Hoo Kab <Tofu & Mushroom Salad>

Ingredients : 1 cup of straw mushroom

2 teaspoons of ground roasted-rice

1 cup of Jew’s ear

3 pieces of galingale

1 piece of tofu

7 tips of mint leaves

1 teaspoon of ground dry red chili

1 stock of cilantro

2 tablespoons of lemon juice

3 tablespoons of soybean sauce

2 tablespoons of special soybean sauce

1 tablespoons of sugar

How to cook :

1. slice straw mushroom and Jew’s ear and boil them, then allow them cool down.

2. Ground tofu and roast it until it gets dry

3. Roast galingale until it turns yellow, then ground it.

4. Shred mint leaves and cilantro . Add straw mushroom , Jew’s ear, tofu,

ground roasted-rice , galingale, mint leaves, ground dry red chili , cilantro,

lemon juice, soybean sauce, special soybean and add sugar then stir.

4 ) Phla Kung <Shrimp Salad>

Ingredients : 400 grams of shrimp

stocks of shredded lemon grass

¼ cup of shredded onion

2 stocks of shredded green onion

1 tablespoon of shredded cilantro

2 leaves of shredded kaffir lime

10 leaves of mint

5-10 pieces of shredded dry red chili

2 tablespoons of roasted chili

3 tablespoons of lemon juice

2 tablespoons of fish sauce

1 teaspoon of sugar

How to cook :

1.Scald shrimp in boiling water and drain it.

2.Make special sauce by adding lemon juice, fish sauce, sugar, roasted chili

paste and stir.

3. In big bowl add shrimp, special sauce, shredded onion, shredded lemon

grass, shredded dry red chili, shredded green onion, shredded cilantro,

shredded kaffir lime leaves, mint leaves and stir.

4. Put it on a dish and add cilantro on top of it.

5) Phla Hed <Mushroom Salad >

Ingredients : 4 pieces of sliced straw mushroom

4 pieces of sliced angle mushroom

4 pieces of sliced common white mushroom

4 pieces of sliced Jew’s car

100 grams of chopped crown of a coconut palm

½ cup of preserved minced pork

3 pieces of fresh red chili

1 tablespoon of ground dry red chili

1 tablespoon of ground roasted – rice

¼ cup of ground galingale

½ cup of ground lemon grass

5 stocks of shredded mint leaves

3 stocks of shredded cilantro <keep the root>

2 tablespoons of lemon juice

1 tablespoons of soybean sauce

½ tablespoon of salt

1 tablespoon of sugar

How to cook :

1.Cook all mushroom in boiling water, add cilantro roots, preserved minced pork

and chopped crown of a coconut palm in a pot.

2.Add fresh red chili, ground dry red chili, ground roasted – rice, ground

galingale, ground lemon grass, shredded mint leaves, shredded cilantro, lemon

juice, soybean sauce, salt, sugar and fermented fish in a bowl.

3.Drain the mushroom, chopped crown of a coconut palm and preserved minced

pork and add the stuff in bowl.

4.Mix all stuff, add lemon juice and put it on a dish. Add mint leaves and cilantro

in the top.

6) Zup Ma Kuar <Thai Eggplant Salad>

Ingredients : 10eggplants

1 catfish

Fresh red goat pepper

4-5 red onions

1 garlic

½ cup of fermented fish

A little fish sauce

1 stock of shredded green onion

1 stock of shredded cilantro

Mint leaves

How to cook :

1.Grill fresh red chill, red onion, garlic and eggplants.

2.Boil catfish, add fermented fish and keep the catfish meat only, take the

bone out.

3.Crush red chili , red onion, garlic for 1-2 minutes, add catfish meat and

eggplants together.

4. Flavor with fermented fish and fish sauce.

5.Add shredded green onion, shredded cilantro and mint leaves on the top.

7 ) Yam Tuna Sa- Mun-Prai <Tuna & Thai Herb Salad>

Ingredients : 1 can of tuna

2 stocks of lemon grass

2-3 red onions

2-3 leaves of Kaffir lime

5-6 stocks of sweet basil

5-6 stocks of mint

2 tablespoons of fresh red goat pepper

1 fresh red guinea-pepper

3-4 tablespoons of lemon juice

2-3 tablespoons of fish sauce

1-2 teaspoons of sugar

Carrots and Tomatoes

How to cook :

1. Slice lemon grass, red onion and shredded kaffir lime leaves.

2. Slice sweet basil leaves and mint leaves.

3. Slice fresh red goat pepper and fresh red guinea pepper.

4. Add fish sauce, lemon juice, sugar together. Add all the pepper and taste it.

5. Add tuna, lemon grass, red onion, Kaffir lime leaves, special sauce<from

number 4>, sweet basil leaves, fresh red guinea pepper together and stir.

6. Add mint leaves on the top.

8) Yam Kai Tom<Boiled Egg Salad>

Ingredients : 5 boiled eggs

¼ cup of shredded red onion

¼ cup of shredded green mango

¼ cup of mint leaves

2 tablespoons of shredded green onion

Lettuce, shredded cabbage and shredded carrot to place

under the food

2 tablespoons of lemon juice

2 tablespoons of shredded pickled garlic

1 teaspoons of salt

4 shredded of guinea pepper

How to cook :

1.Make special sauce by adding lemon juice, shredded pickled garlic, salt and

shredded guinea pepper together, then stir.

2.Peel the boiled eggs and slice them. Put them on the top of lettuce,

shredded carrot.

3.Add shredded red onion, shredded green mango, mint leaves and shredded

green onion in a bowl, add special sauce and stir.

4.Pour it on the boiled egg and add mint leaves on the top.

9) Nur Nam Tok <Spicy Beef Salad>

Ingredients : 200 grams of beef

1 tablespoon of ground roasted – rice

½ teaspoons of ground dry red chili

1 tablespoon of shredded red onion

½ cup of mint leaves

1 tablespoon of lemon juice

2 teaspoons of fish sauce

2 tablespoons of soybean sauce

Fresh vegetable : morning glory , green bean , cabbage

How to cook :

1.Clean the meat and mix with soybean sauce for 1 hour

2.Grill the meat until you can smell it. Put it in a bowl.

3.Slice the meat , mix with fish sauce , lemon juice ground dry red

chili, ground roasted-rice and shredded red onion. Add mint leaves on

the top.

Have it with morning glory , green bean and cabbage

10) Moo Nam Tok <Spicy Pork Salad>

Ingredients : 200 grams of pork

1 tablespoon of shredded red onion

½ cup of mint leaves

½ teaspoon of ground dry red chili

1 tablespoon of ground roasted – rice

2 teaspoons of fish sauce

½ tablespoon of soybean sauce

1 tablespoon of lemon juice

How to cook :

1.Clean the meat and mix with soybean sauce for 1 hour.

2.Grill the meat until you can smell it. Put it in a bowl and slice it.

5.4.2 Drink and Desserts

Mint is also used for drink and desserts. Here are some simple culinary uses

for mint.

1) Lemon and Mint, Damascus favourite drink

Ingredients :

Water 1L

Juice of five lemons

Caster sugar 70g

Mint 50g

Orange blossom water 1tsp (optional)

How to cook :

Pick the mint leaves. Make sure you get rid of all the stalks otherwise you end

up with loads of bits in your straw. In a juicer, add all the ingredients and buzz for

few minutes.

2) Mint and lemon Juice –A Green Cool Drink for The Summer

Ingredients : Mint 15 leaves

Lemon juice 1 lemon

Sugar approx. 4 Tbsp or as per taste

Water 2 glasses

How to cook :

Wash and clean leaves very well. Blend it very well with ½ glass water.

Strain it. Add remaining water, lemon juice and sugar. Mix well, serve

immediately.

3) Mint Julep

Ingredients :

leaves from 4-5 mint sprigs

2 sugar cubes or 1/2 oz simple syrup

2 1/2 oz bourbon

mint sprig for garnish

How to cook :

1.Place the mint and simple syrup or sugar into a julep cup, Collins glass or

double old-fashioned glass.

2.Muddle well to dissolve the sugar and to release the oil and aroma of the mint.

3.Add the bourbon

4.Fill with crushed ice and stir well until the glass becomes frosty.

5.Garnish with the mint sprig.

syrup 1 / 3 cup

Lemon juice 1 / 4 cup

Ice 1 1 / 2 cup

How to cook :

Spun sugar syrup, lime juice and ice together until nearly details. Then add mint

Ingredients :

1 cup mint leaves.

3 tablespoons honey.

1 cup crushed ice.

6) Hershey double chocolate mint dessert

Ingredients :

1 c. all-purpose flour

1 c. sugar

1/2 c. butter, softened

4 eggs

1 1/2 c. (16 oz. can) Hershey's syrup

How to cook :

Heat oven to 350 degrees. Grease rectangular pan, 13 x 9 x 2 inches. In large

mixer bowl beat flour, sugar, butter, eggs and syrup until smooth. Pour into prepared pan;

bake 25-30 minutes or until top springs back when lightly touched. (Top may still appear

wet.) Cool completely in pan. Spread Mint Cream Layer on cake (see below); chill. Pour

Chocolate Topping over dessert (see below). Cover; chill.

Mint Cream Layer: In small mixer bowl combine 2 cups confectioners' sugar, 1/2 cup

butter, softened, 1 tablespoon water, 1/2 teaspoon mint extract and 3 drops green food

color (optional); beat until smooth.

Chocolate Topping: In small micro-proof bowl melt 6 tablespoons butter and 1 cup

Hershey's mint chocolate chips or semi-sweet chocolate chips at high (100%) for 1-1 1/2

minutes or just until chips are melted and mixture is smooth when stirred.

7) Oreo mint chocolate chip ice cream dessert

Ingredients :

26 Oreo cookies, crushed

1/3 c. butter, soft

1/2 gal. mint chocolate chip ice cream

1 sm. jar fudge topping

1 sm. carton Cool Whip

How to cook :

Mix cookies and butter together and pat into cold cut keeper 9 x 12 inches. Spread

1/2 gallon ice cream on cookie mixture. Spread with fudge topping then Cool

Whip. Sprinkle 2 crushed Oreo's on whip cream. Freeze 24 hours.

8) Cocoa Chocolate Sauce

Ingredients :

1½ cups of milk

1 oz (30 g) of butter

4 tbsp of sugar

4 tbsp of Cadbury's cocoa powder

2 tbsp of cream

1½ tbsp of corn flour

½ tsp of vanilla essence

How to cook :

Blend together the milk, sugar, cocoa powder and corn flour with a whisk

until a smooth paste has formed. Transfer the mixture to a saucepan and heat over

a medium heat until the mixture begins to boil. Reduce the heat and simmer for 2

minutes.

Remove the pan from the stove and add the butter. Stir the butter until it melts

and blends into the sauce mixture.

Finally, add the vanilla essence and the cream and stir well.

Serve the sauce warm with your favorite pudding.

5.5 Benefits and Production of mint

Mint is a herb whose leaves, seeds, or flowers are used for flavoring food or for curing

ailments naturally. The word “mint” comes from the Latin word herbs which means “green crops”.

It has been used as a natural breath freshener for centuries, and today products containing mint are

all over the market and used in industry Mint is now put in toothpaste, gums, mouth washes,

candies, inhalers, shampoos, insect repellents, indigestion remedies and sweets and much more.

1) Nausea & Headache: Whenever you are feeling under the weather, the refreshing

smell of mint can help you feel better again. You can buy mint air fresheners, essential oils, or hand

creams which can do wonders to relieve car sickness or any other time you experience nausea.

Some pregnant women find mint helpful in relieving their morning sickness.

2) Respiratory Disorders & Coughs: The scent of mint is very effective in opening up

congestion of nose, throat, bronchi and lungs which can help relieve certain respiratory disorders

and relieving symptoms of the common cold. Mint tea is a very healing drink when you are feeling

under the weather.

3) Skin Care: Many natural skin care products contain mint due to its antiseptic

properties. It is a great cleanser on the skin that will clear acne without over drying. It soothes skin,

cures infections, and gets rid of redness caused from minor skin irritations. It can also be used to

treat insect bites.

stomach and bowel conditions such as irritable bowel syndrome.

6) Used Mint as an Insect Repellant.

Instead of using commercial products that contain harsh chemicals to repel insects, use

mint as an insect repellent. It is both effective and inexpensive. Using MINT to Repel Mosquitoes,

7) Spearmint oil

Spearmint oil is first and for most considered the more gentle version of Peppermint oil,

suitable for use with children and others who may find peppermint too strong. Spearmint is

valued around the world as a culinary herb, and for its gentle medicinal properties. Spearmint oil is sweeter than peppermint - peppermint will have an immediate strong aroma

of menthol, whereas spearmint will have a sweet quality at the same time. Botanists consider

peppermint to be a hybrid of spearmint and 'water' mint - an even sharper cousin in the mint

family.

Spearmint oil is cleansing and uplifting, and the aroma will help sharpen the senses. For

digestive complaints, on can take one or two drops internally, or dilute and rub on the stomach

region. For bringing alertness, a drop or more can be inhaled directly from a handkerchief, or

the oil can be used in a diffuser. Spearmint is also considered an excellent headache remedy -

rubbing a small amount into the temples can be effective.

6. Conclusion

From our research, we found that mint was classified to many kinds such as Orange Mint,

Water Mint, Peppermint, Egyptian Mint, Apple Mint and Spearmint. Mint is used for various drink,

dessert and food. We got many dishes which have been mint composed of in this project, there are

only 10 dishes for Thai food and 8 for drink and desserts just for example. Addition mint has

been widely used for a natural breath freshener for centuries, and today products containing mint

are all over the market and used in industry Mint is now put in toothpaste, gums, mouth washes,

candies, inhalers, shampoos, insect repellents, indigestion remedies and sweets and much more.

This project can improve our English ability in speaking, reading, listening and writing

skills. This project work is the most useful for everybody who is interested in mint.
