Marinated Vegetable Salad

1 - 16 oz. can Shoe Peg corn, drained

1 - 16 oz. can small peas, drained

1 - 16 oz. can French style green beans, drained

1 c. chopped celery1 - 2 oz. jar pimento1 tsp. salt1 c. chopped onion1 c. chopped green pep-

per3/4 c. sugar1/2 c. corn oil1/2 c. white vinegar1 tsp. pepperCombine vegetables in

a bowl. Combine sugar and remaining ingredi-ents in a sauce pan. Bring to a boil. Cool. Pour over vegetables. Chill from 12 hours to 1 week. Note: You can use green onions, regular onions or purple onions (for color).

Potatoes and Peas2 medium potatoes2 cans green peas1 c. milk 1/4 stick butter4 T. flourPeel and cube the po-

tatoes. You want cubes about 1 x 1”. Put the cubed potatoes in a large sauce-pan and cover with water. Cook until done and re-move from the heat. Drain the hot water off and replace with cool water. Do not overcook the po-tatoes, because they will fall apart. After the pota-toes cool off a little, drain the water and put back on the stove. Add the peas. Mix the milk and flour in a cup and pour over the peas. Add the butter. Heat until the sauce gets thick.

Fruit and NutRice Pilaf

2 T. butter1 medium onion, diced2 celery ribs, diced1/2 c. chicken broth1 - 7 oz. package dried

fruit bits2 - 8.8 oz. packages mi-

crowave-ready long grain and wild rice (we tested with Uncle Ben’s)

1 c. chopped walnuts or pecans, toasted

1/4 c. chopped flat-leaf parsley

1/4 tsp. pepperMelt butter in a large

skillet over medium heat. Add onion and cel-ery. Sauté 5 minutes or until tender. Add broth and fruit. Bring to a boil. Cover and reduce heat. Cook 5 minutes or until fruit is softened. Stir in rice and cook, stirring often, 4 minutes or until rice is heated. Stir in wal-nuts, parsley and pepper. Serves 6 to 8.

Christmas Creamed Corn

1/4 c. butter1 medium onion, diced1 red bell pepper, diced2 garlic cloves, minced3 - 10 oz. packages fro-

zen whole kernel corn, thawed

3/4 c. heavy whipping cream

1 tsp. sugar3/4 tsp. salt1/4 tsp. pepperMelt butter in a large

nonstick skillet over me-dium heat. Add onion, bell pepper and garlic. Sauté 8 minutes or until tender. Process 1 package corn and 1/2 cup cream in a blender or food pro-cessor until smooth. Add purée, remaining 1/4 cup cream and remaining corn to the skillet. Stir in sugar, salt and pepper. Cook, stirring often, for 5 minutes or until heated and most of liquid evapo-rates. Serves 6 to 8.

✔ Buttered Savoy Cabbage with Bacon2 T. unsalted butter18 - 1/8” thick slices of

pancetta (Italian bacon) or 18 thick bacon slices

1 - 3 lbs. head Savoy cabbage (it is tender and sweeeter than regular cabbage), washed, dried, stalk removed and cut into 8 wedges

salt and fresh ground black pepper to taste

Melt butter in a large skillet over medium heat. Add bacon or pancetta and sauté until browned, about 5 minutes. Remove meat from pan. Set aside on paper towels and leave remaining fat in skillet. Add cabbage wedges to skillet, cover. Cook, stir-ring occasionally, until the leaves are soft when pierced with a fork, about 7 minutes. Season with salt and pepper. Place cab-bage wedges in a serving dish and top with bacon or pancetta. Serve im-mediately. Serves 6. Very simple and delicious! An Italian twist on a great southern recipe.

Low-Country Hash Brown Casserole

1 -32 oz. bag frozen southern-style hash brown potatoes, thawed

1 lb. Velveeta cheese, cubed

1 - 10.25 oz. can cream of chicken soup

1/2 c. chopped onion1 - 16 oz. sour cream1/2 c. butter or marga-

rine, melted1 lb. bacon, cooked and

crumbledPreheat oven to 350

degrees. In a large bowl, combine potatoes, cheese, chicken soup, onion, sour cream and butter. Pour into a greased 13 x 9” cas-serole dish. Top with ba-con. Bake for 1 hour.

room soup1 can water chestnuts

(optional)1/2 c. mayonnaise1 c. grated Cheddar

cheese2 eggs, beatenMix all together and

bake at 350 degrees for 45 minutes.

Tomato Pie 1 frozen pie crust (you

can make the crust if you know how)

2 tsp. Dijon mustard2 large tomatoes3 c. grated Cheddar

cheese1 c. mayonnaise fresh parsleybasil and oreganoBring crust to room

temperature. Spread Di-jon mustard over the crust. Slice your toma-toes about 1/2” thick and place on the crust. Sprin-kle grated cheese, parsley, oregano and basil. Repeat with layers until the pie pan is full. Make an icing with 1 cup mayonnaise and 1 cup grated cheese. Spread over the pie and bake at 375 degrees for 30 to 35 minutes. Bake it until the icing melts into the pie and begins to turn brown.

Zucchini Casserole 7 c. sliced zucchini1/4 c. chopped onion1 can cream of chicken

soup8 oz. sour cream1 c. shredded carrots2 c. herb-seasoned stuff-

ing mix1/4 c. butter, melted Cook zucchini and

onion in boiling, salted water until crisp tender. Drain very well. In a large bowl, combine soup and sour cream. Stir in car-rots, then well-drained zucchini and onion mix-ture. Toss stuffing mix

with the melted butter. Spread half of the stuff-ing mix in a 13 x 9” pan. Spoon all of the zucchini mixture over first layer of stuffing mix. Top with balance of the stuffing mix. Bake at 350 degrees for 25 to 30 minutes.
