Grapes: Lambrusco Grasparossa, Lambrusco Salamino, Lambrusco Sorbara.
Vineyard: vines trained on double curtain espaliers with spurred cordon pruning, on fertile medium-textured soil in the central area of the province of Modena.
Vinification: the grapes, harvested in the second half of September, are vinified in red and undergo cryomaceration for 2-3 days at a low temperature (1-3°C); after alcoholic fermentation for about 10-15 days on the grape skins, with selected yeasts and at a temperature of 15-18°C, second fermentation takes place, using the long Charmat method, for 3 weeks at a controlled temperature of 15-18°C.
Description: lively pink mousse with a purple rim; refined and persistent perlage; deep purple colour; intense aroma of wild berries with spicy sensations; full-bodied, mellow and elegant flavour.
Alcohol/Vol.: 10.50%
Food pairing: typical dishes of Emilia-Romagna cuisine.
Serving temperature: cool 9-12°C.
