Editors’ Message
As you read through the pages of this issue you will see
that many of our readers were on the move this summer.
There may be some of you who did not get a chance to
share your adventures with us, but don’t worry. There’s
always the next time. In fact, we encourage you to contact
us whenever your events/celebrations/adventures take
place; we will simply hold the items until the next
newsletter goes out. ‘Til then…

Celebrations
July 20th marked the 50
th wedding anniversary for Clifford
and Charlotte Sawatsky of Saskatoon. With Clifford in a
personal care home these past few years, Charlotte told
sister Marjorie Paonessa that there were no special plans
for the day. Marj had other thoughts about that decision.
Not only did she come out from BC to spend a week with
her sister but she also organized a surprise luncheon for
Charlotte on the 20th. Bridal party attendants, friends
from past years and family members all came to celebrate
the day. The girls’ sister-in-law Dianne Ferguson was
there from BC with her son, Bret and his daughter,
Giselle. Cousins Linda Johnson & Diane Ogonoski drove
out from Manitoba, and Clifford’s family members from
northern Saskatchewan and Alberta were also in
attendance. Charlotte was very pleased and happy to see
everyone.
90th Birthday
Mary Natuik turned 90 years old on September 20, 2018.
She enjoyed a week-long birthday celebration with all 32
members of her family - children, grandchildren and
great-grandchildren, who traveled from near and far to be
with her for this special occasion.
The family gathered a few times during the week to spend
time with her and to celebrate. Many family photos were
taken and lots of new memories were made! She and her
children were given a special blessing at her church on the
Sunday and the church community and family enjoyed
coffee and cake in the church hall. Congratulations on
reaching this milestone birthday. God's Blessings for
many more!
Re-elected!
Congratulations to Kevin Rebeck who was re-elected as
President of the Manitoba Federation of Labor at its
annual general meeting held in May. Kevin will lead this
organization for another 3-year term. Way to go, Kevin.

7th Annual Natuik Potluck Dinner
First time attendees Ramona Dziarmaga (Montreal), Ed &
Shelly Natiuk (Florida), Phil & Alice Natuik (returning
Manitobans) and Kevin Rebeck were part of the forty-six
family members who gathered on August 8th
at the Corpus
Christi Church Hall. A potluck dinner showcases the
cooking talents of any group, and this family knows how
to cook! The sauerkraut lovers really enjoyed the kapusta
soup and the just-picked-that-morning corn on the cob
was a hit with everyone. Lots of stories, laughs and
picture-taking took place as we reconnected with our
relatives. We even held a 50-50 draw which was won by
Jeanette Mantolino. Sandy MacKenzie and Victor de Witt
were recognized and thanked for looking after the hall
rental for this gathering.
As always, a big thank you to the organizers, Chris Cleary
and Linda Johnson. We can’t wait until next year! *According to the Facebook pictures she posted , Debbie
Burdett really had a great time visiting daughter Jolene
and family in BC the third week in July.
*Congratulations to Charlotte Sawatsky, who was
recognized as Senior of the Year for the Esprit
Communities across Canada. She received flowers, a
plaque, framed letter, and a t-shirt. She says it was quite
an honour and extended “Special thanks to Stonebridge
Crossing family for the surprise presentation of Senior of
the Year Award by Esprit Lifestyles Communities. It was
very humbling. I am honoured to call Stonebridge
Crossing my home.”

*Craig, Sherry and Shae Rebeck enjoyed a visit to Ottawa
this summer.
*Some of you Manitoba readers
may have noticed that a picture
of Spiderman (aka Kevin
Rebeck) and his colleagues,
made the social pages of the
Winnipeg Free Press last month.
On August 28, Kevin and his
team competed in the Easter
Seals Manitoba and Society for Manitobans with
Disabilities Foundation fundraiser. After some rigorous
training, Kevin and his team successfully rappelled down
the west face of the Manitoba Hydro Building. Through
pledges, their efforts raised over $5,000.00 for these
organizations. Congratulations and well done!
*Rob and Kari Jo Wachal, daughters Elizabeth and Emily
and grandparents Barry and Sylvia Wachal
holidayed together for a week this summer
in Colorado. From the FB posts, it looks as
if it was an enjoyable holiday. -

*Jerrie & Steve Hanchuk and Howie & Theresa Restall
enjoyed themselves at their friend’s cabin in Lake of the
Woods over the August long weekend. Jerrie was a
vendor in the Sioux Narrows Arts Festival with her silk
scarves for two days. The other three took in lots of R &
R!
*The Restalls met up with sister Judy and brother-in-law
Ken Oryniak, from London, this summer. They got
together in northern Michigan in late July for a little golf
outing. They were joined by their American friends, the
Petersons and Peddycoarts for a memorable adventure.
*Gary & Mary Rebeck celebrated their August
anniversary at the Pinawa Bay cottage this summer. The
highlight of the fantastic dinner Dave and Lori served was
Dave’s smoked brisket. He used his own special recipe
and had the meat in the smoker for eight hours. Mary
writes, “..never tasted anything better.” She adds, “It was
very special to spend time with our girls…Lori, Rae and
Nikki and with our Snookeroo Hailey and can’t forget the
awesome cook, Dave.”
*Owen Taylor spent a week of his summer holidays at
Camp Stephens in Lake of the Woods where he had a
wonderful time.
*Mom, Janet Taylor and the boys took in a few pavilions
at Folklorama this summer. By all accounts, the
entertainment and food were a big hit at each venue. *
*In related news, Sophia de Witt had the honour of
officially opening the Polish Pavilion this year at
Folklorama, Canada’s Festival of Nations.
*In late August, Jim, Linda, Derek Johnson and Chantal
Erickson enjoyed a relaxing four days on Dietrichs’ Island
in Lake of the Woods. The weather was a bit too cool for
swimming but the visit with friends Hal & Lorraine
involved other activities: good food, conversation, a few
drinks, and a Sequence battle. Girls rule!

*Judy and Ken Oryniak (London) had an enjoyable
summer reconnecting with family and friends. In July,
they spent time with the Restalls (see above) for a couple
games of golf and tons of fun! In August, they visited
cousin Ray and Jo-Ann Natuik in Goderich. Later that
month, Ray and Jo-Ann would return the visit and bring
Ray’s mom (Mary Natuik visiting from Winnipeg) with
them. Also in August, sister Audrey Clifford came to
visit. (The Keogans also enjoyed spending time with her).
In September, a road trip took them to Whitby to visit
cousin Bob and Aunty Mary Burgess, then to
Peterborough to visit friends, then Quebec to visit another
friend. On their return drive, they brought Aunt Mary
Burgess back to London for a six day
visit.
One day during that visit, they drove to
Essex so Mary could connect with Ray
Mullen. Mary and Ray have been
friends for 70 years. Their reunion was
very touching! Ken saw cousin Betty
Moore and her son Glenn in Burlington when he drove
Aunty Mary there for a visit. In September Ken & Judy
saw brother-in-law Howard again as his curling
(coaching) brought him to the London area. They are
hoping for more ‘connections’ in 2019.
* Glen, Carla, Maggie and Patrick Keogan enjoyed a one
week cruise in the Caribbean at the end of August. Great
food, scenery, activities and adventures were had by all.
We bet they sign up for another one soon.
*Mary Natuik traveled to Goderich, ON to visit with son
Raymond and daughter-in-law, Jo-Ann and their family
for a few weeks this fall. One of the highlights was
getting together with Mary Burgess for a visit!
*Melissa Demski and her partner David Dittman are
happy to announce that they are
expecting a baby in February. Grandma
and grandpa -to-be, Kathy and Walter
Demski, are over the moon!
*Marlene, Denis and Anthony Gauthier enjoyed their
travels this summer. Their first trip was a visit to
Goderich, ON to see brother Raymond and sister-in-law
Jo-Ann Natuik and their fami ly. The second trip, with
friends, took them to Wisconsin Dells where adults and
children all had a great time!
* Randy Natuik flew out to the east coast for a visit with
brother John and new sister-in-law, JoAnn in mid July.
The adventure started with two exciting major league
games at Fenway Park with the Red Sox hosting the Blue
Jays. A prior tour of the historic ball park was a treat
along with the many hot dogs consumed, of
course. Many hours spent walking and
cycling around Boston and checking out the
local venues was also very memorable. Next
was the drive up to New Hampshire to visit
some good friends. Relaxing on the pontoon
boat, cruising around Baboosic Lake, enjoying the
scenery, and a huge lobster feast were some highlights of
the trip before driving down to Cape Cod. The stay on the
Cape included sightseeing and shopping in Provincetown,
deep sea fishing in the Atlantic, and of course, a few
relaxing days on the beach. The weather was great, as was
the food, the scenery, and the company made it all
worthwhile. Randy says it was great to see John again,
and finally meet JoAnn. They are both doing well and
send their best regards to all.
*Jane & Sandy MacKenzie, Lillian & Yaniv and family
went to a very smoke-filled Vancouver this August and
stayed at two bed & breakfasts. Yaniv’s parents came over
from Israel to join them. They went whale watching,
visited t he Harrison Hot Springs, shopped at the famous
Vancouver Night Market, drove to Whistler, and ate the
best East Indian food ever. Lillian, Yaniv & family took a
ferry to Vancouver Island, drove between mountains &
lakes to Tofino & saw a famous display of ‘locks on a
fence’. Sandy & Jane visited their many friends in
Vancouver and bought a massage chair which they are
now enjoying at home. They all came back to a
surprisingly smoke-filled Winnipeg.
*Leanne and Jason Penner continue to
enjoy life on the west coast. Jason
opened a motorsports parts & repair
shop (motorcycles, ATV's,
snowmobiles etc)

so busy that Leanne helps out (parts/purchasing/receiving/
accounting) whenever she can spare time from her own
graphic design business. But it's not all-work-and-no-play.
Their puppy, Sam, is keeping them fit by getting them out
and moving; early mornings take them to the trails to
either hike or run. The beautiful area in which they live
has lots of wildlife like deer and fawns and even a bear
coming up their deck stair! Leanne's friend from New
Zealand came to visit in September with her dad. Leanne
was excited to show her our Canadian ways, to cook up
some Ukrainian food and to introduce them to poutine,
wild salmon etc. From time to time, they also connect
with cousins Daryl Rebeck & Nicole Ridgeway, and with
Uncle Ray & Aunty Wendy Rebeck and cousin Mandy
Green, when the Winnipeggers head out to the coast.

Shelly Natiuk had a busy summer beginning with a two-
week vacation in Italy with friends from Sydney,
Australia. The land portion of the trip included Venice
and Sienna. Transportation from Venice to Sienna was by
way of a 7 day cruise on Celebrity, Constellation. Ports of
call included Dubrovnik (Croatia), Corfu, Santorini,
Mykonos (Greece), Naples & Capri (Italy). The cruise
finished in Civitavecchia, where we rented a car and drove
to Sienna to tour the Tuscany region. Quite a lot of
sightseeing was packed into the two weeks, but there was
still plenty of time to enjoy great food and local wines.
After returning to Florida for a couple of weeks it was
off to Winnipeg for a two-week family visit. Besides the
usual visits with Family and Friends, we attended a
Bomber game and our first “Potluck” dinner at Corpus
Christi where we were able to socialize with many of our
cousins and their families. This was a special evening for
us as we were able to see family members we had not seen
for a long time. The food was fantastic and the company
was even better. Thanks to Linda and Chrissie for
changing the date so it would line up with our trip this
year.
After a week or so back home in Florida, we took a quick
trip to Toronto to visit Aunty Mary Burgess. It was
wonderful to visit with her again, especially sharing
stories and memories from years gone by. Bob of course,
was the perfect host and treated us like Royalty. Thanks
Bob, it is always a pleasure visiting with you. While we
were there, brother Raymond drove in from Goderich with
Jo-Anne and my Mother to visit with Aunty Mary as
well.
On the September long weekend, we took a three-day
cruise from Port Canaveral to the Bahamas so we could
rest up from all that traveling. It was a quick trip, but very
relaxing and enjoyable.
Finally, in the middle of
September, we flew back to
Winnipeg to celebrate Mom’s
90th birthday. The family
affair included a Chinese food
meal at Kathy and Walter’s on
her actual birthday (Sept. 20) and a family day together at
Marlene and Dennis’s in Landmark on Saturday, Sept.
22. The best part was that everyone was there, including
children, grandchildren and great grandchildren from out
of town. Besides spending quality time with the family,
we experienced the first snow of the season. And not just
a few flurries…probably 3 inches piled on the car when
we left Marlene & Dennis’s home, and it was snowing so
hard we could go only 40-50 kph per hour ‘ til we got to
the TransCanada Highway. On Sunday we all attended
Mass and there was a special blessing for Mom and family
from the Priest at Corpus Christi.
Following the service, there was more birthday cake and
coffee in the church hall, for family and any parishioners
that attended Mass. On this trip we also took in a Bomber
game and a Jets preseason game against the Oilers. The
home team came out on top in both games, so that was a
bonus. We are back in Florida now with great
memories of the Summer of ’18, spent with family and
friends, and we are looking forward to our next trip.
Recipe Corner
Cheddar- Dill Scones………………….Theresa Restall
2 ¼ cup all-purpose flour 1 cup milk
4 tsp. baking powder 1 egg, beaten
1 TBSP. sugar 1 TBSP. fresh dill, chopped
1 tsp. salt 1 egg yolk, beaten
½ cup shortening pinch of poppy seeds
1 cup shredded cheddar cheese, divided
Preheat oven to 450’F. In large bowl, combine flour,
baking powder, sugar and salt. Cut in shortening with
pastry blender until mixture is crumbly. Stir in egg, milk
and ¾ cup of the cheddar cheese and dill, stirring just until
moistened.
Turn out onto a lightly floured board and knead gently
about 20 times, adding more flour to dough if necessary.
Place dough on ungreased baking sheet. Pat or roll out to
an 8-inch circle. Cut into 8 wedges but do not
separate. Brush with egg yolk and sprinkle with poppy
seeds.
Bake 12 minutes or until golden. Remove from oven and
sprinkle with remaining cheddar cheese. Return to oven
until cheese has melted. Makes 8 servings.
Cooking Tips and Advice
Pickling spice makes a great instant rub for meats
Toss hot popcorn with butter, salt, grated parmesan and chili powder for a great snack
Save your next empty salt box to store home- made bread crumbs. Fill it through the funnel and shake out through the spout as needed.
Use a vegetable peeler to cut ribbons of firm cheese.
*A customer walked into our store looking for Christmas
lights. I showed her our top brand but, wanting to make
sure each bulb worked, she asked me to take them out of
the box and plug them in. I did, and each one lit up.
“Great,” she said. I carefully placed the string of lights
back in the box. But as I handed them to her, she looked
alarmed. “I don’t want this box,” she said abruptly. “It’s
been opened.”

* Congratulations to Elliot Schindle
who caught his very first fish- a
pickerel- off the dock at the cabin this
summer. Well done!
*Mayumi Motouchi was running on False Creek
(Vancouver) one morning in early September when
someone spoke to her.
He:"Excuse me. Do you live in Winnipeg?"
Mayumi: "I used to."
He: "I saw you running all the time!" It turns out he lives
on Bedson Street, a part of her everyday jogging route
back in Winnipeg. Sometimes it's a small world indeed.
*Before joining her teammates for the new season of
hockey, Alana Burgess spent a weekend at a very special
training camp. Run by the Toronto Maple Leafs
organization, Gatorade Fuelling the Future Invitational
Camp invited 44 hockey players (22 male, 22 female) in
two age groups (13 and 14 years old), to participate in its
inaugural camp in mid August. These players were
selected by virtue of their being the top 8 skaters and 3
goal-tenders in their respective categories. The three day
seminar included both dry land training/classes but also
on ice activities. One of Alana’s sessions
was led by former figure skating great,
Barbara Underhill. Alana learned a lot and
enjoyed herself immensely.
*Ashley Rebeck, coach of the Colorado
University Boulder Women’s Hockey Team, got to
play against the 1998 Gold Medal winning USA
Women’s Hockey Team in Aspen, Colorado.
Ashley said the experience was priceless.
*Judy Oryniak and daughter, Carla Keogan, went to
Collingwood, ON (Georgian Bay area) the last
weekend in September to play in
a Sticks and Stones Curling
Bonspiel/Golf Tournament. They
played 3 curling games mixed in
with two golf games (Scramble
format). We know they had fun;
we hope they did well!
*Marjorie Paonessa got to check off a big item off her
Bucket List last month when she went fishing for
sturgeon on the Fraser River. She writes, “It was so
much fun. I was a last
minute fill in for an all-
ladies' boat in a friend's
company annual fishing
derby. I didn't know
any of the ladies in the boat but we had 8 hours together
and lots of laughs. Our guide entertained us very well!
The sturgeon are so prehistoric-looking with their razor
sharp but fragile exoskeleton frame and because of that,
we had to be careful how we handled them. We had
little time to get them into the boat, scanned for their
tags, measured and pictures taken before we zipped them
back into the water. They put up quite a battle and I'm
told the bigger ones can actually pull a boat some
distance before they tire. I didn't realize the guided
boats are booked a year in advance on the Fraser River.
We could see the sturgeon along the bottom, on the
guide's sonar, but because of the current sockeye salmon
run, the bigger ones weren't very hungry or active. But,
each one of us was able to bring in a fish - very exciting!
The biggest catch of the day was 7' 9"and about 300
pounds; it took about an hour and a half to bring it in.
Mine was 41" long-not bad for a first timer!”
*Marj’s father-in-law, Tommy Paonessa, was
quite famous in the BC boxing world. He was
one of the three judges at the 1972 Vancouver
fight between Mohammed Ali and Canadian
boxer, George Chuvalo. Ali apparently commented
afterwards that Chuvalo was one of the toughest guys he
had ever fought. It was a unanimous decision but
Tommy said he was so impressed that Chuvalo ‘went the
distance.’ Tommy was a wonderful, kind man who took
up boxing to defend himself on the streets, growing up
in Vancouver as an Italian immigrant. It was one of
(son) John’s proudest moments when his dad was
inducted into the BC Sport Hall of Fame in 2009.

Holiday Recipes 2018
Mistletoe Sangria 2 oz. spiced rum 1 cup pomegranate juice
2 oz. cherry brandy 1 cup lemonade
1 bottle red wine 1 cup blueberries
1 cup cranberry juice 1 cup pomegranate seeds
Mint leaves
Combine all of the ingredients in a pitcher or punch bowl. Stir to mix. Pour into glasses with ice and garnish with a sprig
of mint. Delicious and festive!
Gingered Carrot Soup
2 TBSP. butter salt and freshly ground pepper
1 lb. carrots, peeled and sliced 4 cups chicken stock
1 large onion, peeled and sliced ½ cup freshly squeezed orange juice
1 TBSP. minced fresh ginger
Melt butter in medium saucepan. Add carrots, onion and ginger, Cook over medium heat for 10 minutes. Season with salt
and pepper. Pour in chicken stock and bring to a boil. Lower heat and simmer uncovered for 50 minutes or until carrots
are very soft. Remove from heat. Cool the soup slightly, and then puree it in batches in a blender. Reheat the pureed soup
in a clean saucepan, adding the orange juice and checking the seasoning.
Kutya (Traditional Ukrainian Dish)
2 cups hard wheat (whole kernels)
½ tsp. salt
½ cup poppy seeds
½ cup honey
½ cup sugar
½ cup chopped walnuts (optional)
Wash wheat and place in a deep saucepan. Add enough lukewarm water to cover wheat by about 2 inches. Soak
overnight.
Bring wheat and soaking liquid to a boil; reduce heat and simmer. Adding more water if necessary, until wheat is tender
and kernels split, about 2 ½ - 3 hours. Stir in salt.
Place poppy seed in 1 cup boiling water to scald; drain well. Use blender or food processor or mortar and pestle to grind
poppy seed to a paste. Stir paste into wheat along with honey, nuts and sugar. Serve in small sauce dishes.
Old-Fashioned Cranberry Sauce
1 (12 oz.) bag fresh cranberries
1 cup water
1 cup sugar
1 tsp. cornstarch (optional)
Combine all ingredients in heavy large saucepan. Stir over medium heat until sugar dissolves. Increase heat to med-high.
Boil until berries are tender and skins have broken, about 8 minutes; sauce will be thin. For thicker consistency add
cornstarch before heating. Transfer to bowl and serve warm. (Can be made 3 days ahead. Cover and chill. Before serving,
stir over medium heat until heated through.)
Holiday Recipes 2018
Corn-Bread Stuffing 4 slices bacon, diced 1 tsp. poultry seasoning
1 cup chopped celery ¼ tsp. pepper
1 cup chopped onion 3 cups crumbled corn bread
2 beaten eggs 3 cups dry bread cubes
2 TBSP. snipped parsley ½ - ¾ cup chicken broth
Cook bacon, celery and onion until bacon is crisp and vegetables are tender. Do not drain. Combine
eggs, parsley, poultry seasoning and pepper. Add corn bread and bread cubes. Toss lightly until
mixed. Add bacon mixture. Drizzle with enough of the broth to moisten, tossing lightly until
mixed. Use to stuff one 8-10 lb. turkey.
Herbed Scones
3 cups all-purpose flour 1 ½ tsp. kosher salt
1 TBSP. baking powder ¼ cup chopped mixed herbs (tarragon, chives, parsley, chervil)
1 tsp. baking soda 2/3 cup cold, unsalted butter
2 TBSP. sugar 1 cup shaken buttermilk
Glaze - 1 TBSP. buttermilk
Preheat oven to 400’F. Sift together, flour, baking powder, baking soda, sugar and salt in a large bowl. Add herbs. Cut in
butter until mixture resembles coarse crumbs. Pour in buttermilk and stir together with your fingers until dough becomes
slightly sticky. Knead once or twice to bring into a ball. Pat dough on a lightly floured surface and pat or roll until 1 inch
thick. Cut dough into biscuits (with a round cookie-cutter) and place in a 9 inch square pan with sides just touching. Glaze
biscuits with buttermilk and bake for 17-20 minutes or until golden brown on top.
Holiday Herb Roast 3 lb. boneless pork roast 2 tsp. dried tarragon or caraway seeds, crushed
2 cloves garlic, slivered ½ tsp salt
1 TBSP. brown sugar ¼ tsp freshly ground black pepper
Make tiny slits in roast. Insert garlic slivers. Combine remaining ingredients; rub over pork, including
ends. Roast uncovered at 325’ for about 1-1 1/2 hours or until meat thermometer inserted in centre of
roast reads 160’. Tent with foil and let stand 10-15 minutes before serving.
Turkey and Apple Curry
2 TBSP. butter 1 cup chicken stock
1 large apple, cored and diced 2 cups chopped cooked turkey
2 shallots, minced 1 cup coconut milk
2 cloves garlic, minced 1 tsp. cornstarch
1 TBSP. mild curry paste 1 tsp. water
2 TBSP. chopped fresh coriander 1 red pepper, diced
Melt butter over medium heat in shallow saucepan. Add apple, shallots, garlic and curry paste and saute for 3 minutes
until fragrant and softened. Add red pepper and chicken stock and bring to boil. Add turkey and coconut milk and return
to boil. Reduce heat and simmer for 5 minutes. Whisk together cornstarch and water and add to saucepan. Stir and simmer
for 1 minute or until slightly thickened. Sprinkle with coriander before serving. Delicious on a bed of basmati rice.

Creamy Raspberry Dessert 1 cup chocolate wafer crumbs 1 pkg. (8 oz.) cream cheese, cubed
2 tsp. butter, melted 2 TBSP. icing sugar
1 can (11 ½ oz) frozen white grape- raspberry juice concentrate, thawed
4 cups whipped topping
chocolate curls or grated chocolate (optional)
In a small bowl, combine wafer crumbs and butter. Press onto the bottom of a greased 9-inch spring-form pan. Refrigerate
for 30 minutes. Meanwhile, in food processor combine the concentrate, cream cheese and sugar. Cover and process until
smooth. Pour into a large bowl and fold in the whipped topping. Pour over crust. Cover and freeze for 4 hours or until
firm. Remove from the freezer 10 minutes before slicing. Garnish with chocolate curls, if desired.
Candied Pecans 60 pecan halves (about 5 oz.)
7 oz. white chocolate, chopped
generous pinches (up to 1 TBSP.) edible silver dust or white cake sparkles
Preheat oven to 350’F. Spread nuts over a baking sheet. Toast in centre of pre-heated oven
until fragrant and lightly toasted, five minutes. Let cool completely. Partially fill a pot with water that can fit a small bowl
overtop without touching the water. Bring water to a simmer. Place chocolate in bowl.
Meanwhile, set aside another bowl that is slightly smaller in size than the chocolate-filled bowl. Partially fill the bowl
without chocolate with cold water and ice. Place bowl of chocolate over simmering water using a heatproof rubber
spatula, stir often until melted until chocolate reaches 110’F. Immediately place bowl with melted chocolate over bowl
with ice water. Stir until chocolate reduce to 78’F. Place back over simmering water and increase to 87’F. Then remove
from heat. Dip half of cooled pecan halves in chocolate. Shake off excess and then place on a parchment paper-lined
baking sheet. Sprinkle with dust or sparkles. Let set.
Maple Butter Tarts Pecan Pastry
1 cup all-purpose flour ¼ cup cold butter, cubed
¼ cup ground toasted pecans ¼ cup cold lard, cubed
¼ tsp. salt 2 TBSP. ice water
4 tsp. sour cream
Filling
½ cup brown sugar 1 tsp. vinegar
¼ cup maple syrup ½ tsp. salt
¼ cup corn syrup ½ tsp. grated orange zest
¼ cup butter, melted ½ cup chopped, toasted pecans
½ cup currants 1 egg
Whisk together flour, pecans and salt until combined. Cut in butter and lard until mixture resembles pea-sized pieces. In a
liquid measure, whisk the ice water with sour cream. Drizzle over flour mixture while stirring with a fork, to form a
ragged dough. Add up to 1 TBSP. extra water if needed. Press into a disc and wrap tightly with plastic wrap. Refrigerate
until chilled, 30 minutes or up to 3 days. On a clean floured surface, roll out dough to about 1/8 inch thickness. Cut out 12
circles. Fit into muffin or tart pans. Refrigerate for 30 minutes while making filling. In a bowl whisk together brown
sugar, maple syrup, corn syrup, butter, egg, vinegar, salt and orange zest. Divide pecans and currants evenly over chilled
pastry shells. Pour in a scant ¼ cup of filling into each shell. Bake tarts in bottom third of oven until filling is set and
pastry is golden, about 12-15 minutes. Run edge of knife around edges of shell to release tarts. Let cool in pan on rack for
5 minutes before transferring to rack to cool completely.
