creates sustainable local economic oppor-tunities.
In sunny regions the seasonal surplus oagricultural crops oten cannot be pro-cessed due to unavailability o decentra-lised technologies and energy. Solar FoodProcessing technologies can help in bothaspects and thereore have a positive im-pact on diet and amily economy. Moreo-ver, the term Solar Processed adds valueto a product.
In this brochure ISES presents some en-couraging examples o Solar Food Proces-sing, ocusing on production and econo-mic activities. It is part o a larger eort topromote Solar Food Processing technolo-gies. The project is sponsored by WISIONS,
an initiative o the Wuppertal Institute orClimate, Environment and Energy.

Mobile catering, Switzerland and Germany
Since 1997 CNCS (Centre Neuchtelois de cuisine solaire), a Swisscompany, and ULOG Freiburg in Germany have been using a mo-bile solar kitchen unit to cater or youth camps and or bakingsolar pancakes at estivals and airs in Switzerland, Germany andFrance during the summer months. Two 2 m Scheer Reectors
provide the energy to cook about 30 pancakes per hour. In theevening a phase change solar heat storage element can be used.Backup is provided through gas and wood pellet cookers.
Restaurant, Spain
In 2005 the Museu de la Cincia i de la Tcnica de Catalunya, ascience and technology museum located in Terrassa near Barce-lona, Spain, installed an 8 m Scheer Reector on the terraceo a private restaurant operated at the museum. Twice a weektraditional Paella or Fideu is prepared. This way catering anddemonstrating solar technology go hand in hand.

Solar Cooking
Institutional cooking, India
Large instituations like schools, company canteens and ashramsin India use solar energy to cook. Scheer reectors o sizes be-tween 8 and 16 m are set up in arrays to provide steam or thekitchen.
84 Scheer Reectors o 10m each provide steam to cook amaximum o 38 000 meals a day at the centre o Brahma Kumarisin Abu Road, Rajasthan.
In India, a country with high solar radiation, the sun can be used
on clear days to cook or several thousand people while savingseveral tons o CO2. The project has proved to be a good invest-ment, as it utilizes the suns energy and a reliable technology.

Communal Baking, Argentina
In fve villages in the Argentinian Altiplano an 8 m Scheer Re-ector with oven is used as a public installation or baking. Everyday 5 amilies can bake the bread they need or one week. Therebysaving each o them 20-30 kg o preciouse frewood. The projectwas initiated by the cooperative Cultura Pirca in cooperation withthe NGO Ecoandina.
Small scale bakery, Namibia
The our women manuacturing solar box cookers or the solarstove project in Oshakati additionally bake around 600 loaves o
bread per month and sell it. They use a specially adapted box coo-ker or small scale baking.

Solar Drying
Drying o Spices, North-East India
Since November 2005 an initiative oAFPRO (Action or Food Pro-duction) has been drying Nagaland chillis and ginger in 4 largetunnel dryers and 4 chimney dryers. About 5 tons o spices aresolar processed during 8 to 9 months o the year saving around 8tons o frewood.
Fruit bars, South Arica
Elnatan, a non-proft company in Claitzdorp at the southernCape o South Arica, turn dierent ruits into delicious ruit bars.Pleasent weather allows year round use o the large tunnel dryer.The project has provided seven people with permanent employ-ment and six with seasonal work. Ground ruit is dried and thencut into bars, some o them covered with chocolate or yoghurt,and packaged. Fruit juice is dried to a concentrate. The productsare sold to hotels and in the actorys own shop.

Solar Conservation
Strawberry Jam, Germany
ULOG Freiburg is a small enterprise producing solar cookers andsolar ood. A small amount o marmalade is processed in SK 14 andScheer Cookers. Since 2006 the introduction o an 8 m Sche-ler cooker with a 30 litre pot has increased production capacity.Solar box cookers are used or baking bread, cake and sweet bars.The production in 2006 was as ollows: 50 kg strawberries, 30 kg
cherries, 20 kg vegetables. Solar ood processing can be done pri-marily rom April to October, but is also possible in winter! Activi-ties also depend on the season o the ruits and the local market.
Fruit & Vegetable Conserves, Argentina
The three sisters Marisa, Rosa and Alicia Mayans run Hecho en Casa,a small actory and shop located in Clorinda (Formosa Province).They produce home made canned and dried ruits and vegeta-bles, as well as ruit liquors and concentrated juices. For process-ing the jams, marmelades, concentrated juices and canned itemsa 4.5 m Scheer Reector is used. Drying ruit is done in a solartunnel dryer.

Solar Roasting
Organic Chocolate, Mexico
Chocosolproduces about 260 kg o solar, organic choclates everyyear. The cooperative o 15 people was started in 2004 and exclu-sivly uses a solar reector called Fuego Solar or roasting the ca-cao beans and other ingredients like peanuts. The roasting seasonis 8 to 9 months a year. Chocosolorganic chocolates and Tejate, atraditional chocolate drink, are sold at the market in Oaxaca.
Roasting Cofee, USA
Solar Roast Cofee is a amily owned Limited Liability Company(L.L.C.) owned by Michael and David Hartkop. With their 7 msolar concentrator called Helios 3 they can roast 2.5 kg o coeegrains in 22 minutes. Using Helios 3, instead o a gas fred conven-tional roaster, about 2 tons o CO2 emissions are prevented. The
company started selling their exclusivly organic, air trade, solarroasted coees in 2004. In 2007 they will open their frst cae inColorado.
