stations as you can. Read (briefly) the write up on each grain. Write down 2-points in each box. Try to complete 8 different grains. You are welcome to open the jars. Hand-in chart at the end of class.* I will give these back to you on Friday.

WHOLE GRAINOverview All grains start life as whole

grains. Whole grains are the entire

seed (kernel) of a plant. Without the bran and germ,

about 25% of a grain’s protein is lost, along with at least 17 key nutrients.

May be eaten whole, cracked, split or ground.

TERMINOLOGYGroats – a grain (as of oats) exclusive of the hull.Celiac Disease – a chronic hereditary intestinal

disorder in which an inability to absorb the gliadin portion of gluten.

Gluten – a tenacious elastic protein substance especially of wheat flour that gives cohesiveness to dough.

Amino Acid – any one of many acids that occur naturally in living things and that include some which form proteins (9 are essential for health).

Pseudocereal – a broadleaf plants that is used in much the same way as cereals. The seed can be ground into flour and otherwise used as cereals. Examples of pseudocereals are amaranth, quinoa, and buckwheat.
