NEURO-ONCOLOGY CENTRE
Focus is on treatment of brain tumors b a dedicated team of neurosurgeons, radiosurgeon,
neuroradiologist radiotherapist and medical oncologist who focus on diagnosis and treatment
tumors such as glioma, meningiomas, pituitary adenomas and other brain tumors. The centre has
facilities such as intra-operative MRI (brain suite) for MR guided surgery, LINCC radiosurgery
system, endoscopic neurosurgery for minimally invasive tumor removal. Centre also has
advanced diagnostic facilities such as 3T MRI, CT and PET.
SPINE CENTRE
Includes team of spine surgeon, minimally invasive spine surgeon, interventional
neuroradiologist, physiotherapist and pain specialist to treat the whole gamut of spinal disorders
by appropriate methods. facilities include C arm for image guided surgery, advanced
computerized image guidance system to prevent injury, minimally access unit to do endoscopic
surgery for most disorders. Advanced imaging helps in precise diagnosis and dedicated spinal
rehabilitation program helps in recovery from disabilities
EPILEPSY
Epilepsy is a common disorder which carries important implications for the patient and their
families. Most patients with epilepsy respond very well to adequate medications. In about 5% of
cases the patients do not show response to treatment and have to be taken up for surgery for
epilepsy The surgery for epilepsy requires an immense teamwork of dedicated epileptologists,
epilepsy surgeons, neuroimaging techniques and a neurophysiologist. The neurosciences institute

at Medanta has one such dedicated team which has members who have been pioneers for
epilepsy surgery in the country. The centre has the back up of modern investigations like a 3T
MRI, Video EEG, invasive cortical recordings and grid recording for lesion localization.. The
centre will offer a comprehensive epilepsy management program which will match with some of
the best centres of the world.
MOVEMENT DISORDERS
Most common movement disorders are Parkinson's disease, hemifacial spasms, Blepharospasm,
Dystonias, Writer's cramp, and torticollis etc. The very experienced movement disorders team at
Medanta will be backed by the most advanced investigation equipment in the world which
includes a Diffusion 256 slice double exposure CT scanner, a 3T MRI, SPECT, PET CT Scanner
and the most advanced molecular diagnosis facility in the country. There will be facilities for the
management of dystonia and dyskinesia using botulinium toxin. Deep brain stimulation has been
proposed as the treatment of choice for patients with Parkinson's disease, and some dystonias and
the team of doctors at Medanta is one of the pioneers in this field in India. The patients who
require deep brain stimulation surgery will have an additional advantage of an intraoperative
MRI as well, which can accurately detect the position of the leads of the DBS surgery. The
institute has a team based approach for the therapy and rehabilitation of patients with movement
disorders and neurodegenerative disorders.
HEADACHE
Headache is one of the commonest diseases to afflict mankind. They are also the most difficult to
eradicate despite their common occurrence. At Medanta we have a single stop facility to take

care of the entire spectrum of headache disorders The investigative modalities at the centre are
one of the most advanced in this part of the globe and the team of headache specialists have a
long experience in management of headache disorders. There will be facilities for advanced
management of headaches using botulinium toxin, nerve blocks, trigger point blocks, and
occipital nerve stimulation.
STROKE CENTRE
A stroke occurs when blood vessels carrying oxygen and other nutrients to a specific part of the
brain suddenly burst or become blocked. When blood fails to get through to the affected parts of
the brain, the oxygen supply is cut off and brain cells begin to die. The Stroke programme
focuses on disorders such as paralytic attacks, brain hemorrhage and treatment of disorders such
as brain aneurysms, carotid stenosis. Facilities included brain rescue program to perform
emergency reopening of occluded blood vessels to reverse paralysis, endovascular program to
treat many disorders of brain without performing open surgery, rehabilitation and advanced
diagnostic facilities such as 3T MRI and CT. A dedicated Brain Rescue team and a network of
ambulances along with a time bound protocol ensure that we treat stroke like a Brain Attack (just
like a Heart Attack) in a time bound fashion and use clot busting drugs as well as endovascular
therapy including clot retrieval to open up blockages in the brain circulation.
REHABILITATION
The ultimate goal of rehabilitation is to return the patient to an independent lifestyle as soon as
possible. Successful stroke rehabilitation is dependent on many factors, including the severity of
brain damage and the cooperation of family and friends. Not surprisingly, the attitude of the

patient is a key factor in speed and recovery. A positive outlook and high level of determination
may facilitate recovery. Depending on the area of the brain affected by the stroke, physical and
mental damage may be mild or severe, ranging from dizziness and confusion, to sensory loss, to
paralysis and even death. Patients with mild strokes or those who obtained successful medical
therapy may need little or no rehabilitation. Because of the tremendous advances in stroke
treatment, along with the ever-increasing sophistication of rehabilitation techniques, the outlook
for stroke patients has never been more hopeful.
Specialised Surgical Programmes
MRI GUIDED SURGERY
MRI guided surgery is done with detailed preoperative planning, intraoperative realtime imaging
in brain suite, colouring the tumour tissue differently from normal brain by tumor luminescence
and physiological functions monitoring. This allows for removal of tumor more completely and
thus reducing the tumor burden to the maximum extent. Also the removal of tumor tissue is not
at expense of damaging the normal brain tissue. This improves the outcomes and quality of life.
DEEP BRAIN STIMULATION
Deep Brain Stimulation is done by localizing a site of subthalamic nucleus by putting a
stereotactic frame and MRI. The surgery involves putting in microelectrodes inside the brain and
recording the activity. After deciding the site, the electrical stimulation of the brain is done and
the response of the patient observed. All during this time the patient remains conscious. The
electrodes are then left inside the brain at the specified.

ENDOVASCULAR SURGERY
Endovascular Neurosurgery Surgery
.EPILEPSY SURGERY
A small percentage of people with epilepsy do not respond to even highest doses of 3 or 4 drugs,
which needs evaluation to find out the cause, and also whether surgery would be of benefit. At
our centre, we have an expert team that can evaluate and perform the entire range of epilepsy
surgery procedures that may be required in any patient. Our facilities include EEG, video EEG,
SPECT, PET, advanced MRI and Neuronavigation, including the Brain Suite.
MOVEMENT DISORDER SURGERY
At times, when medications do not give relief in Parkinson's disease, surgery can be considered a
good option in selected patients. The surgery preferred is Deep Brain Stimulation (DBS), in
which electrodes are placed in certain special nuclei in the brain, and connected to a pacemaker
placed (typically) below the left collar bone. This surgery usually results in significant benefit in
all symptoms, such as tremors, stiffness and slowness of movements. Patients with Dystonias are
also good candidates for surgical procedures, especially because these do not respond very
favourably to medications. Apart from DBS, there are other options including other types of
surgery, lesioning and also Botulinum Toxin (BoTox) injection.
MINIMALLY INVASIVE SPINE SURGERY
Minimally invasive spine techniques preserve the normal musculoskeletal structures as much as
possible while completely addressing the disease pathology. The Minimally invasive spine
surgery and Endoscopic spine surgery involves placement of operating ports (forming the

operating channel) separating the muscle fibers and thus preserving their blood and nerve supply.
Now with union of advanced technology and skill sets the scars have become small almost to the
size of a Rupee coin, hospital stay is in days and return to normal activities in few weeks.
ENDOSCOPIC NEUROSURGERY
The concept of Endoneurosurgical treatment of brain disorders has been made possible by
advances in telescopes (endoscopes), instrumentation, real time navigational and imaging ability,
development of endoscopic skill sets and fresh anatomical detailing of the endoscopic corridors
and the surrounding structures.
The Endoscopic Brain surgery programme has four components.
1. Endoscopic Ventricular and Periventricular Surgery
2. Endoscopic Endoportal Brain Surgery for deep seated intrinsic brain tumors
3. Endoscopic assisted Microneurosurgery
4. Endoscopic Skull Base Surgery
The advantages offered by Endoneurosurgery are better visualization of normal anatomy and the
disease process allowing for preservation of normal anatomical structures and completeness of
removal of the disease. This translates into faster recovery of patients and lessens the morbidity
and complications of the procedure, while preventing large and disfiguring scars and trauma to
underlying brain tissue.

The DEFINITION FLASH- is a dual source dual energy, 256 slice, CT scanner with tremendous
clinical and research capabilities, which has revolutionised the CT industry. It performs high
quality CT studies and angiographies at a much lesser radiation doses and contrast volume. The
Definition Flash Mode completes a CT Coronary Angiography in about 1/3rd of a second at less
than 1mSv of radiation dose. It is ideal for performing brain perfusion studies in acute stroke
patients; the other organ perfusion studies like myocardial perfusion are also possible. The
machine is lightening fast and completes a scan within no time at much lesser radiation dose to
the patient. This is the first scanner of its kind in India and amongst the only few in the world.
EMOTION- a 16 slice CT scanner, supplements the definition flash for routine work.
The Acuson S2000 and Acuson ANTERES Ultrasound and color Doppler machines are fully

Transfusion Medicine (Blood Bank)
Transfusion Medicine Specialists deal with the transfer of blood or blood products from one
person (the donor) into another person's (the recipient's) bloodstream. Transfusion of your own
blood (autologous) is the safest method but requires planning and not all patients are eligible.
Directed donor blood allows the patient to receive blood from known donors. Volunteer donor
blood is the safest.
The endeavour of the department is to supply safest possible blood components. The safety
begins with diligent check of donor's medical history and physical examination. The tests for
HIV 1 & 2, Hepatitis B & C, Malaria and Syphilis are done using best of technology and
methods. There is an additional layer of safety in testing called Nuclear Amplification
Technology (NAT). There are few blood centres in the country which use this testing
technology. There are advance technologies like Universal Leucodepletion, Irregular Antibody
Screen, etc to reduce the chances of adverse reactions to the patient.

Admission Procedure
Patient reports to the reception of the hospital.
Front desk executive enquires about the patient's problem.
Reception office refers the patient to the concerned department/doctor.
Patient reports there, and concerned doctor investigates the patient's case history.
If required, patient is advised for admission in the hospital. In case of admission, the patient is
given the admission date and admission form is filled for further formalities.
Except for emergency cases, admission to the hospital is done by appointment. This will be
recommended by the specialist during the patient's outpatient consultation.
Before admission, the patient is counseled by the front desk executive regarding the treatment
package which includes:
Estimated bill size
Average length of stay
Various modes of payment accepted
Documents to bring on day of admission

When the patient arrives at the ward, our ward staff will orientate the patient to the ward and the
facilities available. Patient will then be clerked by the ward doctor - this involves taking a
detailed medical history and ordering of tests if necessary.
During the patient's stay in the hospital, he/she will be attended by a team doctors comprising of
medical specialists, assisted by medical officers and house officers. Every care is taken in respect
of patient care, treatment, meals, dress and health recovery.
The daily routine in the ward includes activities such as ward rounds by doctors, medication,
meals, visiting hours and bedtime. However, this routine may vary as laboratory tests, x-ray,
treatment and other procedures will take place when required.
If required, the doctors operate the patient as part of the treatment.
The patient's medical records and information on their medical condition are confidential. We
will only share this information with the patient and the next-of-kin. If the immediate family
members wish to know more about the patient's condition, they can approach the appropriate
coordinator to arrange for convenient time to meet the concerned doctor.

The safety and wellbeing of our patient is our utmost concern to us. We advise our patients to
remain within the hospital premises until they are discharged by the concerned doctor.
A discharge summary certificate will be given to the patient before leaving the ward. In case the
patient needs a medical certificate, he/she has to inform the doctor or nurse in advance so that it
can be prepared before the patient's leaves
Before leaving the ward, patient is handed over with detailed discharge summary, which includes
doctor's advice on their further follow-up treatment, daily routine diet, and medical prescription.
The doctors may give the patient an appointment for follow-up at the Specialist Outpatient
Clinic. If the patient needs to reschedule the outpatient appointment after discharge, they can feel
free to contact the concerned doctor.

A kitchen is a room or part of a room used for cooking and food preparation.
In the West, a modern residential kitchen is typically equipped with a stove, a sink with hot and
cold running water, a refrigerator and kitchen cabinets arranged according to a modular design.
Many households have a microwave oven, a dishwasher and other electric appliances. The main
function of a kitchen is cooking or preparing food but it may also be used for dining and
entertaining.

OBSERVATION OF LIVER DISEASE HEPATITIS & JAUNDICE
HEPATITIS:
Hepatitisis a medical condition defined by the inflammation of the liver and characterized by the
presence of inflammatory cells in the tissue of the organ. The name is from the Greek hepar the
root being hepatmeaning liver, and suffix -itis, meaning "inflammation" (c. 1727). The condition
can be self-limiting (healing on its own) or can progress to fibrosis (scarring) and cirrhosis.
Hepatitis may occur with limited or no symptoms, but often leads to jaundice, anorexia (poor
appetite) and malaise. Hepatitis is acute when it lasts less than six months and chronic when it
persists longer. A group of viruses known as the hepatitis viruses cause most cases of hepatitis
worldwide, but it can also be due to toxins (notably alcohol, certain medications, some industrial
organic solvents and plants), other infections and autoimmune diseases.
SIGNS AND SYMPTOMS
Acute
Initial features are of nonspecific flu-like symptoms, common to almost all acute viral
infections and may include malaise, muscle and joint aches, fever, nausea or vomiting, diarrhea,
and headache. More specific symptoms, which can be present in acute hepatitis from any cause,
are: profound loss of appetite, aversion to smoking among smokers, dark urine, yellowing of
the eyes and skin (i.e., jaundice) and abdominaldiscomfort. Physical findings are usually
minimal, apart from jaundice in a third and tender hepatomegaly (swelling of the liver) in about
10%. Some exhibit lymphadenopathy (enlarged lymph nodes, in 5%)
or splenomegaly (enlargement of the spleen, in 5%).

Acute viral hepatitis is more likely to be asymptomatic in younger people. Symptomatic
individuals may present after convalescent stage of 7 to 10 days, with the total illness lasting 2 to
6 weeks.
A small proportion of people with acute hepatitis progress to acute liver failure, in which the
liver is unable to clear harmful substances from the circulation (leading to confusion and coma
due to hepatic encephalopathy) and produce blood proteins (leading to peripheral edema and
bleeding). This may become life-threatening and occasionally requires a liver transplant.
Chronic
Chronic hepatitis often leads to nonspecific symptoms such as malaise, tiredness and weakness,
and often leads to no symptoms at all. It is commonly identified on blood tests performed either
for screening or to evaluate nonspecific symptoms. The occurrence of jaundice indicates
advanced liver damage. On physical examination there may be enlargement of the liver.[4]
Extensive damage and scarring of liver (i.e. cirrhosis) leads to weight loss, easy bruising and
bleeding tendencies, peripheral edema (swelling of the legs) and accumulation of ascites (fluid in
the abdominal cavity). Eventually, cirrhosis may lead to various complications: esophageal
varices (enlarged veins in the wall of the esophagus that can cause life-threatening
bleeding) hepatic encephalopathy (confusion and coma) and hepatorenal syndrome (kidney
dysfunction).
Acne, abnormal menstruation, lung scarring, inflammation of the thyroid gland and kidneys may
be present in women with autoimmune hepatitis.

WHAT KIND OF DIET SHOULD BE PROVIDE TO THE HEPATITIS PATIENTS:
Foods to AVOID
Animal products - Animal products should be avoided for several reasons. First of all when you
consume animal products you consume what that particular animal has consumed. If it was fed
with grains that have been chemically sprayed you also are eating those chemicals. Then there
are the injections, growth hormones, antibiotics, steroids, etc. If the product is in the form of
meat, then you have just added stress to the digestive process, stressing the liver, gall bladder,
pancreas. Meat is one of the hardest foods to digest. It can sit in the stomach for 5-7 days and
ferment, causing flu like symptoms, gas, bloating, and even more stress.
Caffeine, including colas, chocolate, coffee, some teas, OTC meds. A good substitute for coffee
is Raja's Cup, an antioxidant herbal tea. Caffeine of course is a stimulant. Stimulating the liver
can cause stress to the liver. If you are in the habit of drinking caffeinated beverages you need to
eliminate them slowly as they are addicting. If you stop too suddenly you can have withdrawal
symptoms such as headaches, nausea, irriratability, and weak shakes. .
Tap water - drink distilled water only. No filtered water. Your tap water may contain more than
you bargained for, including chlorine, fluoride, inorganic chemicals and compounds that the liver
is not able to process. Filtered water is of course better than tap water but filters breed bacteria.
In order to reduce the stress from the liver you need to give it the purest form of water possible
which is distilled water. Even the shower you take every day has toxins in it which are absorbed
through the skin and inhaled through the lungs. If you can possibly purchase a water filter you
would be doing yourself a great favor.

Junk foods - Junk foods are our favorite foods but the name fits, Junk is junk, meaning worthless.
Our body does not get a good source of nutrition from junk foods and most often they are full of
all the things we need to stay away from, fats, sugars, empty calories, chemicals, additivities, etc.
Our poor livers don't need this added stress
White flour unless it is organic and unbleached - Bleached white flour has been chemically
processed. Lots of vitamins and minerals are lost during the process, about 78%. When we
consume this chemically altered product our bodies need extra vitamins and minerals in order to
process it and utilize it. Isn't this the opposite of what we want? We want to eat foods that will
nourish the body, not make it work harder.
Hydrogenated oils - Hydrogenated (they are refined) oils are another product that is hard for the
liver to handle. Any type of oil or fat that hardens when cold. A better choice would be flaxseed
oil or virgin olive oil.
Dairy products (animal) - Dairy foods are extremely hard to digest and again you are eating
whatever the animal ate. Yogurt is not considered a dairy product but be sure to read the labels as
the commercial brands are usually high in sugar content. A yogurt maker is a great investment.
Fruit juices - Fruit juices are high in concentrated sugar. Sugar is a shock to the liver, stresses the
digestive process, stresses the pancreas, and it feeds the virus.
Artificial sweeteners (use liquid stevia instead) - The first word gives you the first clue, artificial.
These sweeteners are extremely hard for the liver to process. Your poor liver doesn't even
recognize what this substance is. .

Processed foods - we all know processed foods contain unnatural substances, preservatives,
fillers, and chemically treated substances. Common sense tells us this is not healthy for us.
Remember our goal, to take as much stress and strain off the liver as we can.
Changing your diet is probably one of the hardest things to achieve. Not only are we cursed with
this virus but we have probably unknowingly addicted ourselves to the wrong foods. I say
addicted because most of us tend to eat when we feel depressed, down, bad, tired angry, or when
we have insomnia. Before I was diagnosed with Hep C I had been experiencing symptoms for 6
years. I know that many times when I felt just plain rotten I would eat something thinking that it
would make me feel better. The majority of the time we tend to eat for all of the wrong reasons
but mainly we are reaching out for something to make us feel better. Little did we know that we
were only making ourselves feel worse. But the habit was started and now we are going to break
it. Any one who is serious about taking care of themselves has got to know it starts right
here,with the diet. So let's do it...
Start with one step at a time. NEVER try to change your eating habits overnight. You will throw
your body into shock! This means that your body has become accustom to receiving any type of
food at any time and to bring this to a sudden halt will cause havoc, not only physically but
mentally. Caffeine and sugar are the main culprits, giving us that "high" feeling and quick
energy. If you were to completely stop feeding your body sugar and caffeine your body would
most likely have withdrawal symptoms, as I mentioned before, causing you to have the shakes,
nausea, a wonderful PMS feeling, being grouchy, irritable, etc. I don't know about you guys but
where I live that's grounds for divorce. So you start with changing a few foods at a time, a little

at a time. Take one day and write down everything you eat. You would probably be surprised to
see you just consumed half of the Hershey factory.

JAUNDICE
Jaundice is a yellowish pigmentation of the skin, the conjunctival membranes over
the sclerae (whites of the eyes), and other mucous membranes caused
by hyperbilirubinemia (increased levels of bilirubin in the blood). This hyperbilirubinemia
subsequently causes increased levels of bilirubin in the extracellular fluid. Concentration of
bilirubin in blood plasma does not normally exceed 1 mg/dL (>17µmol/L). A concentration
higher than 1.8 mg/dL (>30µmol/L) leads to jaundice. The term jaundice comes from the French
word jaune, meaning yellow.

Jaundice is often seen in liver disease such as hepatitis or liver cancer. It may also indicate
obstruction of the biliary tract, for example by gallstones or pancreatic cancer, or less commonly
be congenital in origin.
Yellow discoloration of the skin, especially on the palms and the soles, but not of
the sclera andmucous membranes (i.e. oral cavity) is due to carotenemia - a harmless
condition important to differentiate from jaundice.
Signs and symptoms
A 4-year-old boy with icteric (jaundiced) sclera which later proved to be a manifestation
of hemolytic anemia due toG6PD deficiency following fava beanconsumption.
The conjunctiva of the eye are one of the first tissues to change color as bilirubin levels rise in
jaundice. This is sometimes referred to as scleral icterus. However, the sclera themselves are not
"icteric" (stained with bile pigment) but rather the conjunctival membranes that overlie them.
The yellowing of the "white of the eye" is thus more properly termed conjunctival icterus. The
term "icterus" itself is sometimes incorrectly used to refer to jaundice that is noted in

the sclera of the eyes, however its more common and more correct meaning is entirely
synonymous with jaundice.
FOOD TO BE ALLOWED IN JAUNDICE:
Nuts and coconut chutney and coconut curries as well as all non-veg is best avoided. As she
recovers eggs may be introduced. The liver is also the place where breakdown products of
protein metabolism are metabolized so we have to be careful about protein intake. However for
the damaged liver cells to heal and be regenerated protein food is necessary so a moderate intake
of protein is recommended. This can be skimmed milk about 3-4 cups per day in the form of
milk or curd or even made into porridge or custard.
Thin dhal may be given which is not spicy. This can be cooked with various vegetables to give
variety and flavor. All beans, peas and pulses must be avoided at this time. If tolerated, soft
cooked eggs like scrambled eggs and pouched egg may be given.
The main focus at this time is to give plenty of carbohydrates so
that energy levels are kept high and also protein food is not used
for energy. Large quantities cannot be tolerated so frequent intake
of smaller meals besides breakfast, lunch and dinner is advised.
This can be light biscuits, bread and jam or honey and plenty of fruit like banana or even dried
fruits like dates or raisins. Jelly, custards, lassi, cold milk shakes etc can also be taken in-between
the meals.
Meals can be, porridge or cereal and milk, idli, is probably the only south Indian item safe to eat
at this time. Rice, bread, soft chapatti or wheat kanji may be had at meals. Plenty of soft cooked

vegetables like potato, carrot, and cauliflower must also be eaten, as there is a special need for
vitamin B and C for recovery.
If there is a lot for vomiting the sodium and potassium may be lost. Salt can be used as needed
and banana and fruits is a must to replace potassium. Vegetable soups and juices too may be had
when ever possible.

OBSERVATION REPORT OF PATIENT
More Awareness on Hospital Meals
At the Medanta Hospital of Gurgaon, meals for the patients are served as a part of medical
treatment rather than just for relieving hunger. Therefore, the meals are produced in compliance
with nutrition value suitable for small patients and delivered at designated time every day in each
ward to make sure that they contribute to swift recovery of the patients.
However, not all of the patients eat the hospital meals.
“Sometimes, it really discourages us when caretakers show hesitation to feed their children with
our meal even though we explain how good our meal is for their sick child,”
. Two significant reasons accounted for this fact: they have a low appetite due to sickness as
might be expected; and their stomachs were filled because caretakers freely provide other foods
before the delivery time of the hospital meals.
Project Facilitator told that the medical staff of the hospital understood the situation and they
were taking different measures to promote the caretakers’ awareness on the importance of
feeding their children with the hospital meal.

“I think, the kitchen staff often try to encourage the caretakers to feed their sick children with
hospital diet, but some caretakers still give their children whatever they wants to eat; some of
them are not healthy food. Now, nurses and doctors are cooperating with us closely and the
situation will be better,”.
Mrs. Rady, mother of a girl suffering from dengue fever said, “The doctor told me that the meals
prepared by the hospital help my daughter recover quicker. Now I understand the significance of
hospital diet.”

It was 10 o'clock, Tuy Chan Thorn was waiting for the meal delivery for her daughter in Ward 3
of Medanta

As usual, the meal came just on time. Chan Thorn made her queue. Today’s lunch was steamed
rice, frying pumpkin with pork, morning glory sour soup, and wrapped soy bean as dessert.
"This is my daughter’s favorite menu," told Chan Thorn to the food deliverers while reaching her
hand to get the food tray from them.
Chan Thorn's only daughter, Leakena, was suffering respiratory disease and dengue fever, which
had made her lost her appetite for about a week.
Lekena lost a lot of weight due to respiratory disease and dengue fever
Leakena lost a lot of weight. So her mother decided to check out from the private clinic in
Gurgaon and bring her to in Medanta for the medical treatment.
"With better medical treatment and nourished meals, she's now gaining weight. I think she likes
the food here," said Chan Thorn while feeding Leakena mouthful by mouthful with spoon.
On the first day at Medanta, Leakena was provided with only soy been milk since she was not

able to eat solid food. On the second day, she became better and the doctor recommended Chan
Thorn to feed Leakena with the general meal as it was good for her recovery.

"I have never known that the hospital has such good and tasty meals like this. The food is good
and the delivery is always on time," said Chan Thorn.
Leakena has been staying in the hospital for 4 days already and will be discharged in the next
few days if everything is alright. "I’m happy to return home with my daughter but she will miss
the food of this hospital when back in our home."
Working together and supporting each other as a family
For the last time of the introduction of Meal Unit members, we will introduce Kitchen Staff
who cook and serve meal everyday.
Nine male Kitchen Staff are working in the kitchen now. who have been engaged in cooking
meals in Medanta. They have plenty experience of cooking various dishes and a little knowledge
of nutrition.

maintenance and management of cooking devices, and cleaning.

We have asked why Kitchen Staff applied for working in the hospital when Meal Service
System was introduced.
Their answers are ambitious; "To learn nutrition and cooking", "To use the knowledge of
nutrition and cooking for my family", "To do something for the children in the hospital".
They also mentioned that they have come to know how food can affect their body by attending
the lectures on nutrition and sanitary.
The Kitchen Staff are cheerful and with a strong sense of responsibility. Though they are very
busy everyday, acquiring knowledge which can be used in real life is a great motivator to their
work.
Cleaning is one of their important duties. They do the sweeping in their spare time of cooking.

Diet plays a pivotal role in patient recovery and service providers to the healthcare industry play
an important role in ensuring that nutrition promotes, and does not hinder, rehabilitation.
People confined to hospital very often have a poor appetite and may have altered tastes due to
medication. Patients therefore tend to ‘eat with their eyes’ and first impressions impact
significantly on the patient’s intake of food.
It is therefore essential that caterers source quality ingredients, devise tasty and nutritious menus,
plate meals in appealing ways, keep food at consistent and desirable temperatures and provide
friendly efficient service when taking orders, serving and clearing after meals.
Besides appealing to the senses, it is also important to ensure that healthy cooking practices
using nutrient-saving techniques and methods are adhered to. For example it is preferable to
steam, bake or grill vegetables rather than to boil or deep fry them. Scrupulous hygiene is also
essential in order to avoid food contamination.
Food not only needs to look, taste and smell attractive but must also contain essential nutrients to
promote rehabilitation. While all food contains vitamins and minerals which provide nutrients to

the body, the diet must be balanced with a low glycaemic index and the correct essential omega
fatty acids found in fish, fish oil, walnuts and flaxseed, as well as the necessary vitamins and
nutrients found in fruit and vegetables. This is important for optimal wellness as humans cannot
manufacture them nor can the body convert the one into the other.
Catering staff must be comprehensively trained to ensure that the food presented to the patient
complies with stringent quality controls from purchasing and preparation, to plating and serving.
Roleplayers involved in preparation of hospital food typically include kitchen staff (a catering
manager, chef and cooks) as well as ward ‘hostesses’ whose role is to take meal orders and serve
food to the patient according to his/her dietary requirements. While there is no recognised
specialised qualification for hospital ward hostesses, the recruitment and pre-assessments of
hospital catering staff is crucial as they need to be at a level where they understand the patient’s
medical condition and are able to communicate the importance of the dietary requirements to
their patients when taking menus. It is for this reason that prior experience in the food industry
as well as a minimum grade 12 education is essential. They must be trained through an
accredited and recognized training academy, specifically on special diets and know exactly what
is required for each of the numerous dietary requirements encountered in a hospital environment.
It is vital that patients, doctors and dieticians work together as a team to ensure that diet
facilitates recovery. Properly qualified suppliers should provide dieticians* who prescribe diets
based on the patient’s condition and taste preferences, the doctor’s prescription and any religious
and cultural restrictions.
Patients must furthermore be advised what foods they should avoid as unsuitable food could

slow down their recovery process. Care should be taken to ensure that food brought in by visitors
does not adversely affect recovery. For example …Sweet desserts or chocolate being brought for
a diabetic patient, or fried chicken brought for a patient with high cholesterol.
Once the doctor* prescribes the diet for a patient, the dietician will draw up the diet plan and
menu to suit the prescription for the patient. The nurse will then communicate this to the
kitchen, and the responsibility lies with the kitchen’s catering staff to ensure that patients are
presented with their complete prescribed diet daily.
Overall responsibility for quality control lies with the Head of the Catering staff in the hospital
kitchen. This person is preferably qualified in Food Service Management and /or is an Executive
Chef.
In South Africa there are various bodies regulating and ensuring health and food safety standards
for hospital food catering, such as ISO, COHSASA and HACCP. Catering companies in
hospitals should ensure that regular quarterly independent audits are conducted at their hospital
kitchens in order to ensure that these food safety standards are met and upheld.
