Conditions consistent with the Operating Schedule
1. Alcohol sold for consumption ON the Premises, may only be consumed by persons seated within the restaurant area,
as marked on the plan.
2. For consumption ON the Premises, Alcohol may only be served to customers seated and taking a table meal, as
ancillary to that meal.
3. Only alcohol purchased on the premises shall be consumed in the restaurant.
4. There shall be no sale of alcohol before 12 noon for consumption ON the Premises.
5. After 6pm, Off-Sales can only be made for delivery or to restaurant customers at the end of their meal.
6. There will be no sale or display of beer or cider over 5.5% abv except for premium/speciality products.
7. Good quality Digital CCTV system will operate during all times that the premises is open to the public.
8. The CCTV system will cover all public areas inside the premises including the entrance/exit.
9. CCTV footage will be kept for a minimum of 31 days and will be made available a Police Officer on reasonable
request with absolute minimum delay.
10. A Personal Licence Holder will be present and on duty at all times that the shop/bakery/delicatessen is open to the
public for off-sales.
11. A challenge 25 policy shall be employed where those who appear to be under the age of 25 attempting to purchase
alcohol must be asked for identification. The only type of ID that will be accepted will need to be a PASS accredited ID,
passport, military ID or photo driving licence.
12. Litter: To minimise the effect of any possible littering, facilities for disposing and collecting litter will be available and
maintained. During opening hours and at the close of business any litter that can be attributed to the business shall be
collected from the immediate vicinity and disposed of appropriately.
13. Appropriate training regarding the sale of alcohol shall be given to all staff (including delivery drivers) both in the shop
and for the delivery service.
14. Refused alcohol sales shall be recorded for both in store and any deliveries. These records shall be made available
to the Police and authorised officers of the council.
15. All delivery parcels shall be labelled to advise that it contains alcohol, and on delivery will not be left with anyone
under the age of 18.
16. On all deliveries containing alcohol the person signing to accept delivery must be able to prove they are 18 years of
age or older if they appear to be under 25 years of age (Challenge 25).
17. An alcohol disclaimer will be displayed on the website advising that a signature of a person age 18 years of age or
older will be required (subject to public health restrictions).

1. The Designated premises supervisor shall be in day-to-day control of the premises.
2. All staff shall be trained in the relevant requirements of the Licensing Act before they sell or supply alcohol. Records of
this training shall be kept and made available to authorised officers of the council and metropolitan police.
3. The age at which the age verification policy required by the mandatory condition attached to this licence is set, shall
be 25 years of age at a minimum (Challenge 25). Any person who appears to be aged 25 years of age (at a minimum) or
under shall provide documented proof, as per the policy, that he/she is over 18 years of age.
4. When alcohol is supplied for consumption off the premises, this will only be to accompany a substantial meal for
delivery.
5. When alcohol is supplied with a meal delivery, the delivery must be made by a reputable courier with a robust
"Challenge 25" policy.
6. Where the supply of alcohol via delivery is mentioned on any digital or printed menu, there must be a warning to state
that the recipient must be over 18 and may be required to produce photographic ID.
7. When alcohol is supplied for consumption on the premises, this must only be to persons seated and taking a table
meal as ancillary to that meal, or seated and waiting for their table prior to a meal, or seated and waiting for a takeaway
meal.
8. CCTV shall record all entrances and exits to the premises at all times the premises are open for licensable activities.
9. Prominent, clear and legible notices will be displayed at exits requesting the public to respect the needs of nearby
residents and to leave the premises and the area quietly.

Conditions consistent with the Operating Schedule
1. Alcohol shall be sold to customers by waiter/waitress service only.
2. Alcohol shall only be sold to a person sitting down eating a meal and for consumption with that meal. No alcohol
should be sold without a meal.
3. There shall be no promotional sales of alcohol at the premises where alcohol is sold at a price lower than that at which
the same or similar alcoholic drinks are sold, or usually sold, on the premises.
4. No sales for consumption off the premises permitted.
5. Taking into account the business model of the applicant, no super-strength beer, lagers or ciders, or spirit mixtures of
5.5% ABV (alcohol by volume) or above shall be sold at the premises except for one guest 'craft' beer or cider at any one
time; this beer/cider shall be no more than 6% ABV, shall not be sold at less than ?5.50 for 500mls and shall not be
specifically promoted.
6. There shall be a personal licence holder on duty on the premises at all times when the premises are authorised to sell
alcohol.
7. A 'Challenge 21/25' Scheme shall operate to ensure that any person attempting to purchase alcohol who appears to be
under 21/25 shall provide documented proof using recognised form of photographic identification that he/she 18+ years
of age.
8. A log shall be kept at the premises and record of all refused sales of alcohol for reasons that the person is or appears
to be under 18 years of age. The log shall record the date and time of the refusal and the name of the member of staff
who refused the sale. The log will be made available on request by the Police or an authorised officer of the local
authority.
9. The incident log shall contain all of the following:
a. all crimes reported at the venue
b. all ejections of patrons
c. all complaints
d. any incidents of disorder
e. any faults in the CCTV system, searching equipment or scanning equipment
f. any refusal of the sale of alcohol
g. any visit made by a relevant authority or emergency service
10. The Premises Licence Holder shall ensure that refresher training is provided, at least every 6 months, to new/existing
staff on the law relating to underage sales.
11. The Premises Licence Holder shall keep written records of all training provided on the law relating to underage sales
of alcohol. Staff shall sign and date the records to confirm that the training has been completed. Training records shall be
retained on the premises for a minimum of two years and produced to an authorised Officer of the Council on request.
12. The premises shall install and maintain a comprehensive CCTV system as per the minimum requirements of a
Metropolitan Police Crime Prevention Officer. All entry and exit points will be covered enabling frontal identification of
every person entering in any light condition. The CCTV system shall continually record whilst the premises is open for
licensable activities and during all times when customers remain on the premises. All recordings shall be stored for a
minimum period of 31 days with date and time stamping. Recordings shall be made available immediately upon the
request of Police or authorised officer throughout the preceding 31 day period. The CCTV system should be updated and
maintained according to police recommendations.
13. A staff member from the premises who is conversant with the operation of the CCTV system shall be on the premises
at all times when the premise is open to the public. This staff member must be able to show a Police or authorised
council officer recent data or footage with the absolute minimum of delay when requested.

1. A personal licence holder shall be present on the premises at all times when the premises are open and alcohol is
being sold.
2. Appropriate training shall be given to all staff involved in the sale of alcohol and records of such training be available
for inspection by police and authorised council officers.
3. The premises shall maintain and operate a fully independent recordable CCTV system with a minimum of 31 days
recording capability. The CCTV shall be serviced and maintained on an annual contract with a company specialising in
the maintenance and repair of CCTV systems. The system should cover and record entry and all public areas.
4. An incident book shall be used and made available for inspection by police and authorised council officers.
5. A refusals book shall be used and made available for inspection by police and authorised council officers.
6. The designated premises supervisor shall carry out fire risk assessments to disclose any possible fire precautions that
need to be put in place.

1. The only alcohol to be sold shall be gin or gin based cocktail mixers.
2. On sales of alcohol only to pre-booked gin tasting groups. These shall be pre-booked ticketed events.
3. Off sales of alcohol are only permitted in sealed containers. No single cans or bottles of beer, lager cider or spirit
mixtures shall be sold at the premises.
4. All staff shall be trained in the relevant requirements of the Licensing Act 2003 before being allowed to sell alcohol.
Written records will be kept of the training and those trained and made available to authorised officers of the council and
Police.
5. A log shall be kept detailing all refused sales of alcohol, including the date and time of the refused sale and name of
the staff member who refused the sale. The log shall be available for inspection at the premises by the Police or an
authorised council officer at all times whilst the premises are open to the public.
6. No underage persons allowed on the premises unless accompanied by a responsible adult.
7. Drinkaware will be promoted through the business website and drinking sensibly and appropriately will feature on any
menus and marketing literature.

Conditions consistent with the Operating Schedule
1. There must be no sale or display of beer or cider with 6% ABV or over with the exception of premium products such as
craft and speciality beer and cider.
2. The premises shall adopt an age verification policy set at a minimum of 25 years, whereby any person attempting to
buy alcohol who appears to be under 25 (or the age set by the policy) will be asked for photographic ID to prove their age.
3. Approved ID will include passports, driving licences with a photograph or Citizen card or validated proof of age cards
bearing the "PASS" mark hologram or military ID card.
4. Signage advertising the "Challenge 25" policy shall be displayed in prominent locations in the premises and shall
include the point of sale and the area where the alcohol is displayed, as a minimum.
5. All staff members engaged, or to be engaged, in selling alcohol on the premises shall receive full training pertinent to
the Licensing Act, specifically in regard to age-restricted sales, and the refusal of sales to persons believed to be under
the influence of alcohol or drugs. Induction training will be provided and refresher training thereafter. All restricted sales
training undertaken by staff members shall be fully documented.
6. The premises shall at all times maintain and operate a sales refusals form which will be kept on the premises/Head
Office. These shall be reviewed and signed by the Designated Premises Supervisor/Manager at intervals of no more
than four (4) weeks. These records shall be made available upon request to all authorised persons.
7. Digital CCTV and appropriate recording equipment shall be installed in accordance with Home Office Guidelines
relating to UK Police Requirements for Digital CCTV Systems and operated and maintained throughout the premises
internally and to cover all public areas, including the entrance/exit to the premises. The system shall be on and recording
at all times the premises licence is in operation.
8. The CCTV cameras and recording equipment must be of sufficient quality to work in all lighting levels inside the
premises at all times.
9. CCTV footage shall be stored for a minimum of 31 days.
10. The management shall give full and immediate cooperation and technical assistance to all authorised persons in the
event that CCTV footage is required for the prevention and detection of suspected or alleged crime.
11. The CCTV images shall record and display dates and times, and these times will be checked regularly to ensure their
accuracy.
12. Subject to Data Protection guidance and legislation, the management of the premises shall ensure that key staff are
fully trained in the operation of the CCTV, and will be able to download selected footage onto a disk for the police without
difficulty or delay and without charge to Metropolitan Police Service.

1. SIA registered door staff shall be employed after midnight.
2. An occurrence book shall be available for inspection by Police, Local Authority, LFB and Health and Safety at the
premises.
3. A permanent notice shall be affixed to a prominent part of the premises advertising the hours the premises will be
open to the public.
4. All doors and windows apart from access and egress are kept shut whilst regulated entertainment is being provided
at the premises.
5. While regulated entertainment is provided, patrols will take place on an hourly basis at the perimeter of the property
to ensure that there is no sound escape. Any sound escape from the property shall be addressed immediately and
reduced to a level that is not audible at the nearest residential property. After 11pm these patrols shall also address noisy
patrons outside the premises. A logbook is to be kept to record such patrols and incidents and shall be made available
for inspection by Council Officers.
6. Clear signs that are a minimum A4 size are placed at exit points stating "This is a residential area please leave
quietly".

1. The Premises licence holder shall ensure that notices shall be prominently displayed at all exits requesting patrons to
respect the needs of local residents and leave the area quietly.
2. The premises licence holder shall take all reasonable steps to encourage that any persons loitering outside the
premises disperse quickly and do not congregate.
3. The premises licence holder shall ensure that staff shall be vigilant in relation to litter issues, routinely check the
premises during operating hours to ensure they are clean and tidy and to ensure the frontage of the premises is swept at
least once each trading day.
4. The premises licence holder shall ensure that reasonable and adequate staff training shall be carried out and
properly documented in relation to dealing with incidents and prevention of crime and disorder; sale of alcohol (to
underage, persons over 18 purchasing for underage, drunks etc.) prior to being allowed to sell alcohol. Refresher training
to be held at intervals of no more than 6 months.
5. The premises Licence holder shall ensure that all training records shall be retained and made available to police and
local authority officers upon reasonable request
6. The premises licence holder shall ensure that the premises shall install and maintain a comprehensive closed circuit
television (CCTV) system, in compliance with police requirements.
7. The premises licence holder shall ensure that the CCTV system shall continually record whilst the premises is open
for licensable activities and during all times when customers remain on the premises and signage to this effect is to be
displayed.
8. The premises licence holder shall ensure that all CCTV recordings shall be stored for a minimum period of 31 days
with date and time stamping. Recordings shall be made available following the reasonable request of Police or
Authorised officers throughout the preceding 31 day period.
9. The premises licence holder shall ensure that a staff member from the premises who is conversant with the
operation of the CCTV system shall be on the premises at all times when the premises are open to the public.
10. The premises licence holder shall ensure that the CCTV equipment is checked regularly and if there is a malfunction,
the DPS or deputy shall inform the Licensing Authority and the Police as soon as is reasonably practicable, record this
matter in the incident book and have the fault repaired as soon as is reasonably practicable. Once the fault is rectified,
the Licensing Authority and the Police are to be informed.
11. The Premises licence holder shall operate a 'Challenge 25', or similar, scheme at the premises whereby anyone who
appears to be under the age of 25 shall be asked to provide proof of age that he or she is over 18. Proof of age shall only
comprise of a passport, a photo-card driving licence or an industry approved proof of age identity card.
12. The Premises licence holder shall ensure that notices shall be prominently displayed in the premises to advise
patrons and staff that a 'Challenge 25', or similar scheme operates in the premises.

log as soon as it is reasonably practicable after the sale is refused. The log should show the date and time of the event;

1) As Ambience is designated as a restaurant, the premises licence holder shall encourage customers to have a meal to
accompany any alcoholic drink orders.
2) Waste management from the restaurant to be managed and maintained. Any litter produced by Ambience customers
leaving, arriving and dining will be cleaned up.
3) The premises may also provide private entertainment for the purposes of gain at times which are allowed on their
license. (Monday - Saturday 12-23:00, Sunday 12-22:30)
4) There shall be a personal licence holder and/or designated premises supervisor on duty on the premises at all times
when the premises is authorised to sell alcohol.
5) A Challenge 25 proof of age scheme shall be operated at the premises where the only acceptable forms of
identification are recognised photographic identification cards, such as a driving licence, passport or proof of age card
