Tomato & basil baked tilapia Ingredients
8 tilapia �llets, 3–5 oz. each
2 Tbsp canola oil1 cup mushrooms,
fresh, sliced ½ cup yellow onions, fresh,
chopped
½ cup green bell peppers, fresh, chopped 4 cups tomatoes, fresh, diced 1 tsp basil, fresh, chi�onade cut ½ tsp black pepper
methodPreheat oven to 350°F. Place �sh in baking
dish coated with cooking spray. In a medium skillet, heat oil over med-high
heat. Sauté mushrooms, onions and bell pepper, stirring frequently, cooking 2–3
minutes or until tender. Add tomatoes, basil and pepper, stirring occasionally. Cook until the sauce is thick, about 10 minutes. Spoon sauce over the �sh and bake for about 12–
15 minutes until �sh �akes easily with a fork and internal temperature reaches 145°F.
