• Sous Vide cooking was originally developed in the kitchen of the Frenchman George Pralus in 1974 and literally means 'under vacuum'.
• George Pralus perfected the art of cooking foie gras Sous Vide style
• Today this technique is used to create fully cooked convenience food with exciting textures and flavours.
• Ingredients are sealed in heat safe pouches, under vacuum, slowly cooked in a protective atmosphere using precise temperatures and cooking cycles.
• The Sous Vide method of cooking allows the cellular structure of food to remain intact, therefore preserving natural moisture and juices and hence flavours and textures
• Natural fibres soften and dissolve, leaving proteins, such as beef, tender enough to cut with a fork. The food is not only improved in taste, it retains its nutritional content; a fact that is very important in today's health conscious society.
