Designation of French cheese

We also get confused when confronted with the uncountable designation of cheese :

-cheese of guaranted origin,

-made with milk

- pasteurised milk,

-farm made or mass produced.

• The French have always regarded cheese as essential,

•But which sort of cheese shall you choose ? According to the legislation, cheese means " fermented or not fermented, matured or not matured food, made from dairy produce (milk, can be more or less skimmed, or cream or dasher).

• Only cheese of guaranteed origin is exempted from bearing certain references.

Two concepts define French wines as :

- the notion of "terroir, which links the style of the wines to the

specific locations where the grapes are grown and the wine is made

- and the « AOC label » -(guaranteed or protected label)
