THE FOOD SCENE in West Chester is dynamic, diverse and booming. The fresh scent of coffee and pastries in the morning teases our noses. Dozens of restaurants have outdoor seating in the warmer months, allowing lively chatter mixed with colorful cocktails and the scent of good food to spill out onto the brick sidewalks. These shared experiences revolve around one central aspect: getting a taste. A taste of life — of good food shared with good company. More today than ever before, our humble town features options and atmosphere that give the big city a run for its money.
In one walk down Gay Street you can take in the scents of India, sample the famed cooking of France, enjoy a layover in Italy and Greece, and be back in time for a burger and craft beer with the family. Restaurants all over town have tables set for summer, laying out the perfect excuse to extend your Friday lunch into happy hour. Iron Hill has a seasonal beer or three up its sleeve. The signature grill at Carlino's is smoldering, inviting pedestrians to step inside for a taste (and maybe even a cooking lesson or two).
Yet above everything we can touch, smell and taste on the surface, it’s the way we operate that makes the difference. Local residents and visitors acknowledge the importance of locally grown produce and have joined in the farm-to-table movement by shopping at the local

West Chester Growers Market in town and supporting Community Supported Agriculture (CSAs). West Chester is actively giving local farmers a platform to sustain their business, and the combined efforts of the farmers and local food lovers beautifully display the synergy that dwells among us.
This is a town abundant with good food and good people — where a sense of community is built over a shared meal. Whether you pack in at a local diner counter for breakfast or grab a seat to enjoy appetizers and a longer meal at one of the many restaurants on a summer evening, you’ll see college kids and local business folks rubbing elbows over eggs benedict or lawyers and locals sharing a bite side-by-side. This town reminds you on a daily basis that eating and drinking are so much more than a life necessity. When we dine together we satiate not only our hunger, but also our desire to connect with our community.
enjoy! The Fig® Team

I asked myself, ‘what do I cook at my house?’ I’m taking the things I support — homegrown, organic and delicious food — and making it for local people." So Dad’s a big help? Dan looked down and smirked; the appreciation and pride he has in knowing his father supports him resonate deep. "Dad helps in such a huge way . . . he comes in and helps make the fresh soup every day. When he’s in the kitchen, he works like a bull in a China shop, but he’s the sweetest guy. A conversation with owner Dan Celluci:
How did Roots Cafe start? Take us to the beginning . . . why this location and menu direction? "The previous tenant had the space up for sale and I thought it was a great little spot right on Gay Street. I was working two jobs and aspired to open up a cafe. I scraped up what I could, made an honest offer and the deal was done!" Did you have the “What did I just get myself into?” moment? Laughs "I called my Dad and said, ‘Hey Dad . . . we have a menu to figure out!’ I’ve worked in pizza shops and delis, but I wanted a special

What do you offer currently, and what’s the direction for the future? "Breakfast and lunch currently. Breakfast is big on the weekends, and during the weekdays we get a great lunch crowd. We try to create a comfortable, intimate setting for people who dine in, but we understand the business lunch crowd needs to grab and go, and we cater to their needs. In the future, we would love to open for dinner once or twice a week. We love this town, and think the best is yet to come!"

A TOWN TREASUREHAVING AN ITALIAN GRANDMOTHER is kind of like winning the life lottery. With their distinct personalities, big hearts and knack to make dinnertime a must-not-miss event, they’re practically the gold standard of the grandma kingdom. Angela “Mama” Carlino was a shining example of all this, representing the things we nostalgically remember about our childhoods and the valuable times we spent with our grandparents. In the early 1980s, Mama Carlino opened her book of recipes from Abruzzi, Italy, to the people of the Philadelphia region with the opening of the first Carlino’s family store in Ardmore. And for the past 5 years, Carlino's has successfully expanded its brand into downtown West Chester, providing an evolving array of fresh-baked breads, specialty items and prepared foods using recipes and tradition born from the hands of Mama Carlino.
Now in its third generation of family ownership, it’s Mama’s granddaughter who has taken the potential of the Carlino family to a whole new level. Adopting her grandmother’s name and spirit, young Chef Angela Carlino is using her brain and face to push the market’s potential. Realizing her dreams and acumen early, she took the years of growing up working at the market and applied them toward a marketing and culinary degree that's proving vital today. Chef Angela has already created solid rapport with local television cameras; you can find her twice a month on NBC Philly’s The 10! Show, preparing unique dishes like her Orecchiette with Broccoli Rabe and Sausage or Braised Kale with Cannellini Beans. Recipes like these and many more will soon be found in her upcoming cookbook and blog.
Actively seeking products while continuously listening to the needs of customers has allowed Chef Angela to build an ever-evolving and fresh selection that embraces your senses with every visit. But her most ambitious undertaking today is designing and producing a line of functionally stylish chef jackets for the at-home or professional female cook. “They are form-fitting, with awesome fashionable patterns, allowing a creative option for cooks tired of the same stale styles we’ve been forced to wear," she proudly states.
Actively boosting the Carlino’s name while pursuing her own creative dreams is blending into a fruitful reality for Chef Angela. But what’s amazing is that you can still find Chef Angela, hustling on the floor of the Carlino’s West Chester location, making the market tick while greeting customers in the same way that Mama Carlino would have embraced a dinner guest years ago.

AUTHENTIC BILL STAVROPOULOS OF DE STARR'S RESTAURANT & BAR
THE SIGN MARKING DE STARR'S RESTAURANT IS SOMETHING OF AN ANOMALY. It is the only illuminated sign remaining in a town that has a long and storied history of restaurant signs that have come and gone, yet it continues to shine on these brick-lined streets as it has for over 35 years. It was erected long before there was such a thing as building codes, and so it remains to this day as when owner Bill Stravropoulos and his brother Demetrios — known as "Meme" — opened the remodeled De Starr’s Restaurant and Bar in 1975. Bill has no plans to change the lit sign. “It’s grandfathered in,” he says, in a Greek accent as thick as his homemade yogurt.
I had heard about the yogurt parfait at De Starr’s restaurant and had walked by the sign on Gay Street many times over the years but had never once stopped in.
I finally went one morning for breakfast, but instead of ordering the intended yogurt parfait, I opted for the homemade creamed chipped beef and was smitten. It felt like coming home.
Homemade creamed chipped beef nowadays is a rarity, and so is the kind of man who makes it. Bill — now in his mid-70s, but with energy that rivals someone half his age — roasts a turkey every day for his famous turkey clubs, in addition to making soups, rice pudding and Greek specialties such as spanakopita and souvlaki from scratch. But he serves up something more than just great food. Each dish is served with warmth and a slice of history on the side. It’s not only about providing a place to eat; it’s about cultivating a sense of community. He greets every customer the same — with a smile and the friendliest hello; whether it’s a judge from the courthouse, a local business owner, kids from town or the lone diner at the counter looking for a comfortable seat and a hot meal.
After immigrating from Patras, Greece, in 1951, Bill and his brother followed their beloved Uncle George into the business and have been serving up Greek and American fare for over
60 years, since they first began working at what once was the Gay Grill, named for the street on which it was found. The family name is Stravropoulos, but it became Americanized and reinvented as De Starr's when Uncle George first came to this country, and thus the name hangs on the sign to this day.
The restaurant is generational, for both customers and owners. Kids that once came to eat with their parents now bring their kids. While Meme retired five years ago, Bill still cooks in the morning while his son Steve can be found behind the counter serving dinner in the evening.
As Steve explains it, “My father loves his job. More than that, he loves his fellow man. That’s what keeps him going.” In a world where everything changes, it’s nice to know some things stay the same. Let’s all raise a cup of coffee to that. Here’s to you, Bill.

GROWING UP IN NEWTOWN SQUARE David Yori followed in the footsteps of many teens left with idle hands in the summer; he got a part-time job in exchange for a few bucks. Starting out as a pot washer at a local bakery, he found his curiosity for the craft slowly getting the best of him, and he began spending more time assisting in the creation of baked goods. He’d eventually go on to enroll in day classes at West Chester University, but he always found his hands kneading dough and preparing pastries in the evening. After years of this routine, he had virtually worked himself into an apprentice baker, but he also found himself in a position that many college students encounter after graduation — a degree, yet no direction. David came to a crossroads one month ago, when he took a leap of faith and landed into his own space: Yori’s Bakery at 15 North Church Street.
Fig: What is the overall concept of the Bakery? David Yori: Everything fresh, from scratch! We’re starting with danishes, donuts and cinnamon buns every morning. Pies and assortments of cookies, cakes, cupcakes and pastries throughout the day. Even some breads and dinner rolls, all the great stuff! Cupcakes, eh? Very important question . . . will there be Red Velvet? Oh yes, I make a mean Red Velvet. Are you ready for this undertaking on your own? I was taught to work in a high-volume scratch bakery and feel I’m more than prepared. It’s going to be a balance of prep work and timing that allows me to stay with everything. Combine that with the fact that I simply love what I do, and it all works. The amount of benchwork should test me, rolling dough and cutting cinnamon buns. But, overall it will be fast and fun. So will you be more of a focused grab-n-go type of atmosphere, or will you offer an area to decompress and relax? I’ll offer a self-serve coffee bar with a few seats and tables for the casual customer to relax. But, I’m focused on serving the people going to and from in the mornings and afternoons. David has prepared himself to become a desirable and delicious mainstay in West Chester. Keep an eye out for the open sign on his storefront window, and we’ll see you in line waiting for that first bite into Red Velvet bliss.

THE FOOD REVOLUTION HAS BEGUN. Maybe it's happening in your own backyard this summer, nestled between pea plants and your DIY spirit. But if there's no garden
outside your window, you can grab a share of what’s growing in someone else’s. Thanks to the CSAs surrounding West Chester, there's plenty to go around.
How does Community Supported Agriculture work? Buy a share in a local farm’s harvest and reap the rewards of fresh, locally grown produce with the added satisfaction of knowing
where it came from. Local farms stay sustainable. Community bonds are strengthened. Land is preserved and nourished. In Japan, this same system is called teikei, which literally
translates to “putting the farmers’ face on food.” Here are the faces of our local farmers. Get to know them. Support them. Let’s put a face back on our food.

GIVING BACK:anita brody
FILLED WITH PASSION, SPIRIT AND A PENCHANT FOR LIFE, it takes nothing more than her infectious, joyful grin to make you realize Anita Broady is special. Fearlessly kicking her corporate 9-5 job to the curb last year, Anita took something she was gifted with, event planning, and started Sugarbaby Events. This summer Anita and Sugarbaby are looking to “soothe your soul” and foster a little groove in your feet with the 2012 Chester County Jazz Festival. Yet, exposing Chester County to exceptional local, regional and international jazz in an engaging family-friendly atmosphere is only one part of the reason Anita has worked feverishly to make this festival materialize. Make no mistake, her light-hearted agenda on the outside is juxtaposed to one hell of a fighter on the inside. The big fight she’s tied to The Chester County Jazz Festival is one of creating exposure to foster attention and aid for the Chester County Food Bank. Such a noble organization doesn’t need any more clout than the 1,200,000 pounds of food delivered to over 65 organizations a year. However, it was a shocking statistic Anita brought to our attention that fuels her desire to stress the help that’s so severely needed: The BackPack Program, designed to provide aid for the 13,000 Chester County children who suffer from hunger due to lack of proper resources, is substantially malnourished itself. 13,000 is an alarming number, but the reality is that the food bank can only support about 1,000 of these kids. A lucky thousand receive a backpack of peanut butter, canned tuna and shelf-stable milk every Friday. Even then, another 12,000 are left aching for the gift of a meal for another weekend. The Chester County Jazz Festival will kick off at WCU’s Asplundh Hall Friday, June 29, then take over the quaint Hoopes Park (the perfect community locale to soak up the melody amidst the sunshine) all day Saturday and Sunday. Between the music and festivities, there will be a beautiful chance for people to recognize and support the children of our community who need it. If we all come together and assist in a cause all children deserve, we can help give the nourishment for heads and hearts to grow into the pulse of the future.
Proceeds from the Jazz Festival will benefit The Chester County Food Bank as well as the Stephen Chandler Ericson Foundation.
