Wok Fried Vegetable Omelettes
Omelettes are a great source of protein.
Firstly collect all ingredients and equipment.

Wash and prepare vegetables.
Peel outer layer from spring onion.Peel carrot (optional).Destalk snow peas and remove string as shown.

Julienne carrots (or grate if prefer).
Slice shallots finely
Cut snow peas into smaller pieces

Separate eggs whites from yolks.Place in separate bowls.Hint: use a clean bowl and make sure that the yolks don’t mix in with the whites.Help: Use an egg separator

Whisk egg yolks with salt and pepper in large bowl.
Clean beaters in between.
Whisk egg whites in a separate bowl until soft peaks form.

Gently fold egg whites into egg yolks. Hint: Always fold lighter ingredient into heavier ingredient. Use a wooden spoon to incorporate the two mixtures together.

Choose a large hob or wok burner .Heat a wok over high heat. Add oil sparingly. AddVegetables stirring constantly – add denser vegetables before lighter ones.

Cook for a few minutes. Keep vegetables moving inside wok so they do not burn. Remove and set aside on a plate.

Choose a medium sized hob.Heat a non stick pan over medium-high heat. Add oil sparingly. Add half the eggs and swirl around pan to form an omelette. Cook base until golden. Use a plastic lifter to check.

Turn over and cook the other side. Whilst still in the pan top half of the omelette with half the vegetables. Fold the omelette in half and drizzle kecap manis (sweet soy sauce) over vegetables.

Gently remove from pan and place on serving plate. Repeat steps for remaining omelette.
