Preparation
1.
Combine all ingredients except strawberries in a blender or food processor and blend until very smooth.
2.
Stir in strawberries.
3.
Pour into ice pop molds and freeze until firm, about 2 hours.

Ingredients
Scones
2 cups flour
1/4 cup sugar
1 Tbsp baking powder
1 tsp baking soda
1 cup Silk Soy, Almond or Coconutmilk, any flavor except chocolate
1/4 cup orange juice
1/3 cup dried cranberries
2 tsp grated orange zest
1/4 cup canola oil
1 cup coarsely chopped peeled pears
Glaze
2 cups confectioner’s sugar
3-4 Tbsp fresh orange juice
1/2 tsp salt
1 Tbsp grated orange zest

Delicious!
These scones were just delicious and disappeared as fast as I could make them! I used almond milk and added about 1 cup of additional flour. I also added about 1 teaspoon of vanilla paste, half to the scones and half to the glaze. I guess I could've just used the vanilla almond milk, but I only had the regular kind. My family has already requested I make these again...I have a feeling I'll be making these a lot now that pears are in season :)

My uncle decided to introduce me to almond milk and bought me a box which I didn't know what to do with it. I found this recipe and decided to give it a try and it turned out very delicious (I didn't have any pears so left them out). Just make sure to beat the icing long enough till all its ingredients are perfectly combined.

Who Knew you can bake with Silk?
I suppose I have been living under a rock, but I never thought of using Silk in baking! My pear tree is full, so I thought I would make these scones for breakfast the next day. Well, they were so good, they were GONE before the morning came! DELICIOUS and went down..smooth as SILK.

I don't know who you're trying to fool with only 2 cups of flour, but unless you want runny pancakes, that needs to be doubled.

These have a great taste but the dough was too thin and these were too light to be considered a scone. More like a cake batter than scone. Perhaps it needs more flour and/or less baking powder.

Coconutty!
Silk coconut milk seemed the perfect blend with cranberries and pears so I gave it a try. This recipe really came together as quickly as stated and within minutes I had fresh, warm scones and hot coffee (with Silk Coconut milk). The hardest part was not eating too many! I've also tried making it with lemon instead of orange juice and it was delicious. Maybe grapefruit next? Yummm...

This recipe has made me feel like a super hero! I needed a quick recipe with ingredients I had on hand and came across this recipe from silk.com and thought Id give it a shot. First I doubled the recipe and used a 9 X 13. If you don't have oat flour you can process oats for oatmeal or even use a blender. I might try coconut, brown rice or garbanzo flour for the next time I make this. I swapped home made almond butter for the peanut butter and used pea protein powder. Pea protein powder has 24g of NON-GMO vegetable protein per scoop and 4200mg of BCAA. It is unflavored and takes some getting used to without adding any flavor. Not to worry with this great silk.com recipe. Superb taste and SUPER nutritious. Most of your store bought protein bar is full of JUNK. Like high fructose corn syrup, more corn syrup and artificial ingredients. I highly recommend this great recipe!

Mine came out in a cake like texture. I slipped and didn't use vanilla Almond Milk, I used original. They still tasted fine but definitely needed that little hint of vanilla. I will make these again, they are a nice change from typical protein snacks!

Perfect for Chocoholics
I would eat chocolate all day long if I could, so the fact that these bars are high in protein and can still satisfy my chocolate cravings is ideal. I am a big fan of baking with Stevia; the yogurt and peanut butter also give the bars great texture. I will make them again!

Preparation
1.
Preheat oven to 350°F.
2.
Mix almondmilk, egg whites, applesauce, peanut butter and yogurt together in a small bowl.
3.
In a separate bowl, mix flour, protein powder, Stevia, baking soda, salt and cocoa together and then combine with wet ingredients.
4.
Pour mixture into a greased 8" x 8" glass dish and bake for 25 minutes or until a toothpick comes out clean.

Really yummy!
Delicious! Quick and easy to make. I used Silk vanilla soymilk instead of the vanilla almond milk and it turned out just fine. I didn't realize when reading the recipe that it makes a single serving. Once I did, I baked it in a small glass bowl and ate it as soon as it came out of the oven. Can't wait to try it with raisins, cinnamon maybe apples. Lots of possibilities.

Preparation
1.
Preheat oven to 350°F.

In a greased small glass bowl, combine almondmilk, oats, salt, vanilla extract and brown sugar.
3.
Add in peanut butter and chocolate chips, stirring until mixed well.
4.
Bake for 20 minutes. Broil for an additional 3 minutes.
Optional: top with an additional sprinkle of chocolate chips.
If you’re looking for a smaller single-serving option, mix everything and bake in a muffin pan, or even a mini-muffin pan, for baked oatmeal chocolate chip cookie bites!

Let me start off by saying AMAZING!! My son who is 20months is highly allergic to anything that has dairy in it, cooked or not, so I always feel bad when we have a desert he can't have. So about a year ago I started making homemade deserts from scratch, I even made his birthday cake. Well anyway he's been drinking silk since he turned 1 and probably drinks 2-3 gallons a week! I made these for the whole house and they were scrumptious!! My family wanted more, but my son most of all devoured them bite by bite!! Definitely will make again!

Preparation
Make the scones
1.
Preheat oven to 375°F.
2.
Line a baking sheet with parchment paper or coat with cooking spray.
3.
In a large bowl, whisk together flour, sugar, baking powder and baking soda. Set aside.
4.
In a separate bowl, whisk together Silk, orange juice, cranberries, orange zest and canola oil.
5.
Pour the wet mixture into the dry and mix together with a wooden spoon, stirring with as few strokes as possible. Fold in the chopped pears.
6.
Use an ice cream scoop or large spoon to drop the batter onto prepared baking sheets, forming 12 scones.
7.
Bake for 12-15 minutes or until tops are lightly browned.
Make the glaze
8.
Whisk all ingredients together until smooth and creamy.
9.
Drizzle on warm scones.

Pea protein powder has 24g of NON-GMO vegetable protein per scoop and 4200mg of BCAA. It is unflavored and takes some getting used to without adding any flavor. Not to worry with this great silk.com recipe. Superb taste and SUPER nutritious. Most of your store bought protein bar is full of JUNK. Like high fructose corn syrup, more corn syrup and artificial ingredients. I highly recommend this great recipe!

Perfect for Chocoholics
I would eat chocolate all day long if I could, so the fact that these bars are high in protein and can still satisfy my chocolate cravings is ideal. I am a big fan of baking with Stevia; the yogurt and peanut butter also give the bars great texture. I will make them again!

3 Tbsp cornstarch
4 egg yolks
1/2 cup key lime juice

Rich, creamy, sweet and tangy goodness!
Just made this pie to go with a coconut chicken recipe I made using Silk Coconut Milk (but that's a different review :). Not overly sweet, the key lime flavor shined through with a hint of almond notes after the bite was eaten. Was easy to make and the whipped coconut cream was definitely a hit. I didn't
think to save any of the key limes to zest or slice as garnish, so I sprinkled a bit of crushed graham cracker over the whipped coconut cream. I will be making this pie again.

Preparation
1.
Preheat oven to 350°F.
2.
Whisk together Silk and cornstarch in a medium saucepan.
3.
Bring to a boil, reduce heat and simmer, whisking constantly, until mixture thickens, about 5 minutes.
4.
Meanwhile whisk egg yolks in a small bowl.
5.
Add ¼ cup of the hot Silk mixture, whisking well.
6.
Add egg mixture to saucepan, along with key lime juice.
7.
Simmer for 2 minutes, whisking constantly, until mixture reaches a pudding-like consistency.
8.
Remove from heat and pour into crust. Bake for 15 minutes.
9.
Cool pie, cover with plastic wrap and refrigerate.
10.
Serve with regular or non-dairy whipped cream or whipped coconut cream. Garnish with lime slices or lime zest.

All I can say is YUMMY!!! For those of you out there that need to eat gluten free like me, Glutino makes a yummy chocolate sandwich cookie (think Orea). Crush up the cookie part (minus the frosting) and you have the perfect thing to substitute for the chocolate wafer crumbs the recipe calls for...happy gluten free eating everyone :)

Yummy... but has casein
This is a Yummy looking recipe... and it looks very easy. But it uses real Cheese, which has casein. The reason I drink Silk is that it is great for those of us who are lactose intolerant AND great for those of us who want to avoid cancer (see "China Study"). Plus Silk products ALL taste great. So, for me, any recipe that requires real milk products defeats my main reason for using Silk. BUT it does look Yummy! So I give it 3 stars.

Preparation
Prepare crust
1.
Preheat oven to 350°F.
2.
Line a 12-cup muffin pan with paper muffin cups.
3.
In a small bowl, combine chocolate wafer crumbs and melted margarine (or butter).
4.
Divide crumbs evenly between muffin cups (about 1 Tbsp per cup) and firmly press crumbs into bottom of each.
5.
Bake for 10 minutes and then cool.
Prepare filling
6.
In a small saucepan, heat Silk to a simmer.
7.
Remove from heat and whisk in cocoa powder, espresso powder, cornstarch and sugar until smooth.
8.
Place cream cheese and silken tofu in a blender or food processor and blend until smooth.
9.
Add chocolate mixture, salt, vanilla and almond extract, and process until smooth.
Assemble and bake
10.
Divide filling mixture between muffin cups, filling each cup to the top.
11.
Bake for 15-20 minutes until filling is set around the edges and slightly jiggly in the center.
12.
Cool. Cheesecakes can be covered and stored in the refrigerator for 2-3 days.
13.
Serve with fresh berries, if desired.

2 cups Silk Original almondmilk
1/2 cup margarine (or butter)
4 cups flour
1/2 cup sugar
1 Tbsp active dry yeast
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Filling Ingredients
1/2 cup melted margarine (or butter)
1 cup sugar
Ground cinnamon
Frosting Ingredients (if desired)
1/2 of a 1 lb bag powdered sugar
1/4 – 1/2 cup Silk almondmilk, Silk soymilk or Silk Seasonal Nog… whichever flavor desired
1/4 cup margarine (or butter), melted
Additional flavorings desired (coffee, almond, maple…)

So good!
I made these this morning for my family. I used silk original soymilk. They turned out better than I could have imagined. My 4 year old helped me make them, and it was the best way to start out the morning. We had so much fun and they were gone before we could blink. So much better than anything store bought, and by far the best recipe I have tried. We had our "Tea" Party with the cinnamon rolls and chocolate silk. She is one happy little girl, and these are the memories I will never forget. Thank you so much for the recipe!

I love making these delicious cinnamon rolls when I have guests that stay the night, they are always a hit. I am always looking for recipes that include almond milk, and this one is phenomenal. I followed the recipe exactly but I usually do an infused glaze, like and orange or lemon glaze to enhance the flavor. Overall, I highly recommend this recipe.

Preparation
Prepare dough
1.
Microwave Silk and margarine for 2 ½ minutes on high (until margarine is completely melted, but does not boil).
2.
While Silk/margarine is microwaving, combine remaining flour, sugar and yeast in a mixing bowl.
3.
Pour warm Silk/margarine mixture into mixing bowl and stir until mixed completely.
4.
Cover to let dough rise for 1 hour.
5.
Mix in remaining dry ingredients.
6.
Cover table top with moderate dusting of flour.
7.
Place dough on table and form into general shape of a rectangle.
8.
Roll dough until fairly thin.
Prepare filling
9.
Pour the melted margarine evenly over the dough.
10.
Cover evenly with the sugar (trying to get as close to the edges as possible).
11.
Generously sprinkle cinnamon over the sugar.
To form roll
12.
Roll dough (tightly) towards you.
13.
Cut dough roll into 1-inch slices.
14.
Place in 2 greased/buttered 9×13 pans, allowing space in between rolls.
15.
Let rolls rise for 30 minutes.
16.
Bake at 400°F for 15 minutes or until golden brown.
17.
While baking, make frosting (if desired) by mixing all ingredients together.
18.
You can use any flavor of Silk almondmilk or soymilk. Also consider adding extracts like maple, almond, coffee or espresso. Add extra Silk or powdered sugar until icing reaches desired consistency.
19.
Pour icing over rolls or serve alongside.

In a separate bowl, mix flour, protein powder, Stevia, baking soda, salt and cocoa together and then combine with wet ingredients.

Pour mixture into a greased 8" x 8" glass dish and bake for 25 minutes or until a toothpick comes out clean.

Ok, so I changed it a little..
Ok, I admit I changed the recipe a bit - I don't have an ice cream maker, so I improvised. Basically, I caramelized the bananas as the recipe dictates using coconut sugar and coconut oil (and a pinch each of cinnamon and salt), but then I FROZE the caramelized bananas. After they were frozen, (I just did overnight) I threw them into my food processor with the Silk, vanilla and mini chocolate chips, processed until smooth and creamy like soft serve. DELISH!!!!!

This ice cream is absolutely amazing! I used the Silk Unsweetened cashew milk for this recipe (very creamy texture) and substituted the brown sugar for truvia. It came out so amazing. My dad who recently had quadruple bypass surgery thought he would never be able to eat ice cream again but was even able to enjoy this nutritious and delicious dessert. Thank you Silk!

Preparation
1.
Melt margarine in a large nonstick sauté pan over medium heat.
2.
Peel and cut bananas lengthwise.
3.
Place bananas, cut side down, in hot pan and sear for 1 minute. Turn bananas over and sear the other side.
4.
Cook for another 5 minutes, stirring (bananas will start to fall apart).
5.
Add brown sugar and cook until sugar is dissolved, stirring constantly.
6.
Remove from heat and puree in a blender or food processor.
7.
Add Silk and vanilla, stirring to combine. Chill mixture for 1 hour.
8.
Process in ice cream machine according to directions.
9.
Add chocolate chips in during the last 5 minutes of processing.
10.
Serve immediately or store in freezer. If freeing, place in refrigerator for 10 minutes before serving to soften.

The perfect cupcake!
My family can be pretty picky and everyone has different tastes, but this was the perfect dessert that everyone loved! The cupcake was perfectly moist and full of flavor. They tasted the best after they were chilled in the refrigerator for a couple of hours and would be perfect on a hot summer day!

Not Very Healthy
I use Silk's Cashew Milk regularly and think it's one of the best non-dairy milks available! However, this cupcake recipe isn't really "healthy." The recipe could be improved by substituting sugar with a sweetener that has a lower-glycemic index and oat flour instead of white flour. I would use coconut oil instead of margarine or butter, especially in replacement of the cream cheese. Also, in reference to one of the previous comments about having an "all you can eat contest," and someone eating 32 cupcakes... that sounds a little unbelievable to me, but also very unhealthy. Ultimately, the idea for strawberry cupcakes here is great! I just would tweak the recipe. :)

Ive loved using Silk milk to bake, but ive always only baked boxed cakes. This was my first attempt baking from scratch, and im so glad I was using Silk Almond Milk. The cupcakes were fluffy, and moist, sweet, and flavorful. Wish i'd thought to take pictures before my brother ate them all. Be careful veganizing
Replacing butter with coconut oil and eggs with commercial egg replacer left me with a squidgy, bland cake. Creaming the butter, then the additional beating of the eggs, aerates the batter in a way that doesn't hold up with vegan replacements. They're completely fine veganized, edible, but not particularly better than fine.

Better Than Martha Stewart's Recipe
I've wanted to make this kind of cupcake since I saw Mrs. Stewart make her version on TV. But her recipe makes 40: I'm not a football mom, so that is WayTooMuch! Tried making 1/4 of recipe, but came out dense. So, I was very glad to see your (much more healthful) version with a manageable yield. I did use flax seed to substitute for the eggs, but the results were still tender & light. Very flavorful; despite the sweetness, I ended up with an overall impression of freshness. The cupcakes were a SMASH at the monthly office coffee break potluck. There were only 8 eaters this month, but the 11 I brought were taken before we even had all our mugs filled! I didn't get one at work, which made me sad, but I did get to "taste test" at home, so I can say for sure that I'll be making these again! Maybe I'll try raspberries!

Beyond Delicous
I wanted to make something different for my daughter's 6th birthday. She does not tolerate milk well so it had to be something she could eat yet sweet at the same time. Surprisingly Tasty!
I got this recipe in the mail and with Easter coming up I figured it would be a nice spring treat to try out. I am always hesitant to try new recipes, because when they fail it is a waste of ingredients and time. If I don't like the recipe, it goes directly into the trash. If I do like it, then it has the honor of being typed up and put into my recipe box (which only contains tried and true recipes). This one made the cut! It was relatively straight forward but packed amazing flavor. The cakes themselves turned out really light and fluffy--very cake like (you would never know it wasn't real milk!). The frosting was delicious too! Great job Silk!

I used my cup 4 cup gluten free flour and these still turned out great! Nice and moist. I made a different frosting because I don't like the dairy free cream cheese I can get at my local store. Super impressed with how well the cashew milk works in recipes, I like it a lot better than soy milk.

adding fruit to your diet
This recipe is delicious and a wonderful way to get the kids and husband to eat more fruit! For a switch, I added blueberries..making a beautiful purplish color frosting...next time I'm planning on adding banana...and I know with the Silk and cream cheese...my family is getting wonderful protein too! Just remember to dip banana in a bit of lemon juice so they won't discolor before serving!

Extra boost tweaks..
Yummy recipe! I like to tweak recipes and make them extra healthy, so I made some substitutions to this recipe to add a few extra health kicks to it! Here's what I did: 1. I reduced the sugar by 25% and added a bit of stevia to make up for it. 2. Used almond flour in place of some of the flour (again, about 25%). I often add a bit of protein powder as well. Just as yummy and healthier!!

Fabulous, can't get any better –– just add some sprinkles on top
I made these with my little brothers a few weeks ago, and holy cow, was it ever delicious! The Silk original cashew milk added a delicious richness that I'd never experienced before, and I loved eating these cupcakes so, so much. We added a bunch of sprinkles on top and had fun. My family can be pretty picky and everyone has different tastes, but this was the perfect dessert that everyone loved! The cupcake was perfectly moist and full of flavor. They tasted the best after they were chilled in the refrigerator for a couple of hours and would be perfect on a hot summer day!

Preparation
1.
Preheat oven to 350ºF. Line a cupcake pan with paper liners.
Prepare cupcakes
2.
Cream margarine, sugar and vanilla in an electric mixer. Add eggs, one at a time, beating after each addition.
3.
In a separate bowl, sift flour, baking powder, soda and salt.
4.
Add flour mixture to batter alternately with Silk, beginning and ending with flour. Gently fold in strawberries.
5.
Fill cupcake liners ¾ full.
6.
Bake for 15-20 minutes, or until tops spring back. Cool completely, then frost.
Prepare frosting
7.
Puree strawberries in a blender or food processor.
8.
Cream together cream cheese and margarine until light and fluffy. Add strawberry puree and vanilla.
9.
Slowly add powdered sugar.
10.
Add small amounts of Silk until frosting reaches desired spreading consistency.
11.
Frost cupcakes and top with fresh strawberries.

Preparation
Make cupcakes
1.
Preheat oven to 350°F.
2.
In a large bowl, beat the margarine (or butter) until creamy, about 1 minute. Add the sugars and molasses and beat an additional 3-4 minutes, until light and fluffy. Add the pumpkin and vanilla and beat 30 seconds more.
3.
Sift the pre-sifted flour, baking powder, salt, cinnamon, ginger, cardamom and nutmeg into a medium-sized bowl. Add the flour mixture and the Silk to the pumpkin mixture in several alternating additions, beginning and ending with the dry ingredients. Mix gently with a rubber spatula after each addition; do not overmix.
4.
Scoop batter into paper-lined muffin tins and bake for 20 minutes.
5.
Cool completely before frosting.
Make old-fashioned frosting
6.
Beat the powdered sugar, butter, vanilla and 2 Tbsp of Silk together in a bowl until creamy and spreadable. Add additional Silk if needed.
7.
Spread on cooled cupcakes.

Preparation

Combine chocolate, Silk, and margarine (or butter) in a pan. Heat over simmering water until chocolate melts. Stir to smooth the mixture. Add vanilla.
2.
Pour into a shallow dish and chill until set, approximately 1 hour.
3.
Scoop by rounded teaspoon and roll between palms to form balls.
4.
Roll in cocoa, sprinkles or candy, and chill.

1 ripe banana, divided in half
1 Tbsp chopped walnuts
1 Tbsp ground flax seeds

1/2 tsp vanilla extract
1/2 tsp cinnamon
3/4 tsp (2 packets) Stevia extract (or sweetener of choice, such as 2 Tbsp Agave nectar)

Preparation
1.
Preheat oven to 375°F.
2.
Cut bread into small cubes (about 1”) and place in a medium-sized bowl.
3.
Slice one half of the ripe banana into small pieces and add to the bowl along with the walnuts and ground flax seeds. Set aside.
4.
Place the almondmilk, silken tofu, vanilla extract, cinnamon, sweetener and remaining half of the ripe banana in a blender and blend on low speed for a few seconds. Stop when ingredients are mixed together and tofu is smooth. (Be careful not to overmix—you don’t want the liquid to be too thin.)
5.
Pour the mixture from the blender into the bowl.
6.
Mix together well, so that the bread is completely coated with the liquid.
7.
Transfer the mixture to a small baking dish that has been coated with nonstick cooking spray.
8.
Bake on the middle rack in the oven for 30 minutes.
9.
Remove and let cool for a few minutes before serving.

Don't Waste the coconut milk
You can buy coconut cream, it comes in a block and is cheaper than the coconut milk. I just have to figure out how much to use. You can usually find the product in the Latin section of the grocery store. I will definitely be making this in a couple days, sans peanut butter cups. :)

Preparation

Open chilled cans of coconut milk and scoop the white coconut cream from the top of each can.
NOTE: Reserve coconut liquid for smoothies!
2.
Add coconut cream and remaining ingredients to blender and puree until smooth. Chill for at least 1 hour.
3.
Pour into ice cream maker and process according to machine’s instructions.
4.
In the last few minutes of processing, add chopped peanut butter cups, if using.
5.
Serve immediately or store in freezer. If freezing, place in refrigerator for 10 minutes before serving to soften.

Ingredients
3/4 cup brown sugar or raw cane sugar
3 cups Silk Original or Vanilla Soy, Almond, or Coconutmilk
4 eggs (or equivalent in egg substitute)
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp salt
2 tbsp coconut extract
1/4 cup coconut or dark rum, optional
2 cups flaked coconut (sweetened or unsweetened), divided
1 (1-pound) loaf whole grain bread, cut into 1-inch cubes

I have to say the coconut milk is to die for on its own so anything with that in it is amazing!!!! I used the coconut milk and it I loved it!!! I did not have the coconut rum but did have another type of rum .... heavenly!!!! it was an easy recipe to follow and surprisingly I had every ingredients already at home!!!! ummm because I love coconuts! ;) add ice cream to the side and its a complete dessert ... warm and yummy in the tummy!!!!

Preparation
1.
Preheat oven to 325°F.
2.
Coat a 9x13 pan with cooking spray.
3.
In a large bowl, whisk together sugar, Silk, eggs, (or egg substitute), spices, salt, coconut extract and rum, if using.
4.
Stir in 1 1/2 cups flaked coconut.
5.
Gently stir in bread cubes until evenly coated.
6.
Spoon mixture into prepared pan, cover with plastic wrap and let sit for 30 minutes.
7.
Place pan on a cookie sheet and bake for 25 minutes.
8.
Sprinkle with remaining 1/2 cup flaked coconut and bake for an additional 25 minutes, or until center springs back.
9.
Serve warm.

Great Birthday Cupcakes!
Wow! I made these for a friend's child's 8th birthday party... they were a hit! Nobody could tell I used all soymilk instead of regular milk, and the kids came back for seconds and thirds! Way to go, Silk! Great recipe!

The cupcake texture is awesome! It was moist and held together without crumbling. I used the silk vanilla almond milk (in the cupcakes and the frosting). The frosting wasn't my favorite, but my kids loved it. I'm pretty picky about frosting and I think I will try a different dairy-free margarine next time. I did like the frosting a little more with a little almond extract added. Either way, it was great to see the smile on my son's face that he could have a cupcake! (He's lactose intolerant.)

Preparation
Make cupcakes
1.
Preheat oven to 350°F.
2.
Line a 16-cup muffin tin with paper liners.
3.
Sift together flour, baking powder, baking soda and salt in a medium bowl. Set aside.
4.
In a large mixing bowl, beat margarine (or butter) and sugar with an electric mixer until pale and fluffy, then beat in vanilla. Add eggs 1 at a time, beating well and scraping bowl after each addition.
5.
At low speed, beat in flour mixture alternating with Silk in three batches.
6.
Spread batter evenly in muffin cups, filling each cup 2/3 full. Reserve any leftover batter for additional cupcakes.
7.
Bake until golden and a wooden pick inserted in center of cupcake comes out clean, 15-18 minutes.
8.
Cool completely.
Make frosting
9.
Beat margarine (or butter) with an electric mixer until pale and creamy, about 2 minutes.
10.
With speed on low, slowly add powdered sugar. Add vanilla, Silk and food coloring, if using, and beat until light and fluffy, about 3 minutes.
11.
Frost cupcakes and decorate with sprinkles, if desired.
12.
Refrigerate.

6 Tbsp Silk Original or Dark Chocolate Almondmilk
3 cups powdered sugar, sifted
1 tsp vanilla
1 cup toasted, chopped pecans or walnuts, if desired
Cake
2 cups flour
1 1/2 cups sugar
1 tsp cinnamon
1 cup margarine (or butter)
4 Tbsp cocoa
1 1/2 cups Silk Soy, Almond or Coconutmilk, any flavor
1 tsp baking soda
1 tsp vinegar
2 eggs, beaten

Preparation
Make frosting
1.
Melt margarine (or butter) in a medium saucepan. Add cocoa and Silk, bringing to a boil.
2.
Remove from heat and add powdered sugar, vanilla and nuts. Keep warm.
Make cake
3.
Preheat oven to 400°F.
4.
Spray or grease a 9x13-inch baking pan.
5.
Whisk together flour, sugar and cinnamon in a large bowl; set aside.
6.
In a medium saucepan, melt margarine (or butter). Add cocoa and Silk and bring to a rapid boil.
7.
Remove from heat and pour over dry ingredients, mixing well. Stir in baking soda, vinegar and eggs. Mix well and pour into prepared pan.
8.
Bake on the top rack of the oven for 20-25 minutes.
9.
While cake is still warm, prick thoroughly with a fork and pour frosting over cake.

Preparation

Rinse quinoa thoroughly, then drain and set aside.
2.
Mix Silk, vanilla, maple syrup and salt in a saucepan and set on simmer.
3.
Add quinoa to milk mixture and cook for 30 minutes, stirring frequently (but not constantly).
4.
Once thickened, remove from heat and allow to cool.
5.
Serve warm, or refrigerate and serve cold if desired. Can be served with your favorite toppings as well (brown sugar, fresh or dried berries or other fruit, nuts, etc.).Refrigerate any leftovers.

The perfect cupcake!
My family can be pretty picky and everyone has different tastes, but this was the perfect dessert that everyone loved! The cupcake was perfectly moist and full of flavor. They tasted the best after they were chilled in the refrigerator for a couple of hours and would be perfect on a hot summer day!

Not Very Healthy
I use Silk's Cashew Milk regularly and think it's one of the best non-dairy milks available! However, this cupcake recipe isn't really "healthy." The recipe could be improved by substituting sugar with a sweetener that has a lower-glycemic index and oat flour instead of white flour. I would use coconut oil instead of margarine or butter, especially in replacement of the cream cheese. Also, in reference to one of the previous comments about having an "all you can eat contest," and someone eating 32 cupcakes... that sounds a little unbelievable to me, but also very unhealthy. Ultimately, the idea for strawberry cupcakes here is great! I just would tweak the recipe. :)

Ive loved using Silk milk to bake, but ive always only baked boxed cakes. This was my first attempt baking from scratch, and im so glad I was using Silk Almond Milk. Be careful veganizing
Replacing butter with coconut oil and eggs with commercial egg replacer left me with a squidgy, bland cake. Creaming the butter, then the additional beating of the eggs, aerates the batter in a way that doesn't hold up with vegan replacements. They're completely fine veganized, edible, but not particularly better than fine.

Better Than Martha Stewart's Recipe
I've wanted to make this kind of cupcake since I saw Mrs. Stewart make her version on TV. But her recipe makes 40: I'm not a football mom, so that is WayTooMuch! Tried making 1/4 of recipe, but came out dense. So, I was very glad to see your (much more healthful) version with a manageable yield. I did use flax seed to substitute for the eggs, but the results were still tender & light. Very flavorful; despite the sweetness, I ended up with an overall impression of freshness. The cupcakes were a SMASH at the monthly office coffee break potluck. There were only 8 eaters this month, but the 11 I brought were taken before we even had all our mugs filled! I didn't get one at work, which made me sad, but I did get to "taste test" at home, so I can say for sure that I'll be making these again! Maybe I'll try raspberries!

Beyond Delicous
I wanted to make something different for my daughter's 6th birthday. She does not tolerate milk well so it had to be something she could eat yet sweet at the same time. Surprisingly Tasty!
I got this recipe in the mail and with Easter coming up I figured it would be a nice spring treat to try out. I am always hesitant to try new recipes, because when they fail it is a waste of ingredients and time. If I don't like the recipe, it goes directly into the trash. If I do like it, then it has the honor of being typed up and put into my recipe box (which only contains tried and true recipes). This one made the cut! It was relatively straight forward but packed amazing flavor. The cakes themselves turned out really light and fluffy--very cake like (you would never know it wasn't real milk!). I used my cup 4 cup gluten free flour and these still turned out great! Nice and moist. I made a different frosting because I don't like the dairy free cream cheese I can get at my local store. Super impressed with how well the cashew milk works in recipes, I like it a lot better than soy milk.

This recipe is delicious and a wonderful way to get the kids and husband to eat more fruit! For a switch, I added blueberries..making a beautiful purplish color frosting...next time I'm planning on adding banana...and I know with the Silk and cream cheese...my family is getting wonderful protein too! Yummy recipe! I like to tweak recipes and make them extra healthy, so I made some substitutions to this recipe to add a few extra health kicks to it! Here's what I did: 1. I reduced the sugar by 25% and added a bit of stevia to make up for it. 2. Used almond flour in place of some of the flour (again, about 25%). I often add a bit of protein powder as well. Just as yummy and healthier!!

Preparation
1.
Preheat oven to 350ºF. Line a cupcake pan with paper liners.
Prepare cupcakes
2.
Cream margarine, sugar and vanilla in an electric mixer. Add eggs, one at a time, beating after each addition.
3.
In a separate bowl, sift flour, baking powder, soda and salt.
4.
Add flour mixture to batter alternately with Silk, beginning and ending with flour. Gently fold in strawberries.
5.
Fill cupcake liners ¾ full.
6.
Bake for 15-20 minutes, or until tops spring back. Cool completely, then frost.
Prepare frosting
7.
Puree strawberries in a blender or food processor.
8.
Cream together cream cheese and margarine until light and fluffy. Add strawberry puree and vanilla.
9.
Slowly add powdered sugar.
10.
Add small amounts of Silk until frosting reaches desired spreading consistency.
11.
Frost cupcakes and top with fresh strawberries.

Add vanilla, salt and coconut, stirring until well combined.

Bake for 20-25 minutes or until golden brown.

My Son can Be a Kid!
I was so worried my son would miss out on the traditional cake and ice cream birthday party experience when we realized his lactose-allergy was not going away as he grew. I made this recipe with him in mind, and he loved it! But, the rest of the family, the cousins, the grandparents, everyone else loved it too! Did not work for me
I followed the recipe exactly using almond milk but the mixture did not freeze in my Cuisanart ice cream maker so I can't recommend this recipe.

Not quite what I expected
I was so excited after reading the recipe and some reviews that I would be able to make ice cream for my grandbabies. I followed the recipe exactly. Unfortunately, it did not turn out smooth and creamy. I
didn't like the flavor (neither did my girls) or the texture. Don't think I will try this again. Please make us another recipe.

I hate not being able to have ice cream being severely lactose intolerant. However I was slightly apprehensive to try any milk free recipes afraid that it just wouldn't be the same but i finally tried it and the results were wonderful! Will definitely be making this very often

Delicious!
This was creamy and delicious! I used french vanilla creamer and it gave the ice cream a strong vanilla taste, which my family loved. You could probably leave out the vanilla bean/extract it you prefer a subtler flavor. It's the only kind of ice cream we will make from now on.

Chunky and icy
Five star taste, three star execution. Followed the directions and ingredients exactly, chilled it for two days in the fridge before popping it into the ice cream maker. Instead of smoothy and creamy, I got chunky and icy. Popped it into a container in the freezer and hoping it sets up semi-nice. Overall, I'm not so impressed.

Just Like SoDelicious!
I've read the reviews about this not being creamy. No, it isn't as creamy as dairy ice cream, but it is the same consistency as the SoDelicious brand Soy ice cream. It's just as good if not better because there is no cardboard taste. My Oster ice cream maker worked perfectly in making this. I did use corn starch instead of arrowroot and liquid vanilla. Thanks so much for giving us a recipe that is delicious!! Our biggest treat these days is root beer floats!!!

l've made it with different flavors
This recipe is the best one l've found for "ice cream" and it's so easy to make. Besides the vanilla, I've made coffee ice cream and chocolate ice cream. My favorite is the coffee with cacao nibs added.

I can eat ice cream again!!
I had to give up ice cream about 5 years ago because I have some lactose issues. Then I found this recipe. This recipe makes the best ice cream! I no longer have to go without, and actually prefer this to "traditional cow ice cream". Thank you for sharing this recipe. I am one happy lady!!!

Dairy Free!
I thought I was going to cry when I found that I was allergic to dairy, but i made this ice cream and my worry that I could not have ice cream floated away. It really depends on the type of milk,I've tried all three and coconut is the best.

Preparation
1.
Place Silk and Silk Creamer in a medium saucepan and whisk in honey, agave or sugar.
2.
Slice vanilla bean in half lengthwise, and use the tip of a knife to scrape the seeds from the bean into the saucepan. Add bean pod as well.
3.
Bring mixture to a simmer over medium heat and simmer for 5 minutes.
4.
Remove from heat and remove about 1/4 cup from the pan and whisk it together with the arrowroot in a small bowl. Whisk the arrowroot mixture back into the pan, cover and let the mixture infuse for 20 minutes.
5.
Cool completely and process in an ice cream maker according to manufacturer’s instructions.
NOTE: If you don’t have a vanilla bean, add 2 tsp vanilla extract when removing mixture from heat. You may also add fresh fruit or any other flavorings you desire.
Looking to cook?
Just sub Silk for dairy milk, cup for cup. Mmm!

Ingredients
1 cup flour
3/4 cup sugar
1/3 cup cocoa powder
1 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
1/2 cup Silk Soy, Almond or Coconutmilk, any flavor
2 tsp vinegar
1/4 cup vegetable oil
1 egg, beaten
1 tsp vanilla
3/4 cup grated zucchini
1/2 cup boiling water
1/2 cup chocolate chips

I tried these with the chocolate almond Silk and they were wonderful! Very moist and tasty. A good way to have something chocolate without any guilt.

What a great muffin ! I used Silk Chocolate of course and used applesauce instead of oil and the cinnamon just gives them a great chocolate flavor. My son is extremely picky and will avoid any vegetable at any cost. I had to really grate the zucchini fine and they turned out wonderful. You cannot even see the zucchini and that's enough to fool the pickiest of eaters. I would recommend cooking the full 17 minutes. Definitely adding to the book of favorites !

Holy bananas are these good.
I had to substitute carrots for the zucchini and I used gluten-free flour, but these muffins were absolutely fabulous. I agree with the other reviewer that you'll likely need to bake the entire 17 minutes. But, they are SO moist and tasty. High five to you, Silk.

Loved these Chocolate Zucchini Muffins. With the grated zucchini it made the muffins very moist. Using the Almond milk gave it a great nutty, cinnamon, chocolate taste. This is one recipe I am adding to my many great Muffins, I make.

Delish!
I usually stick with tried-and-true recipes when i have company coming, but I couldn't resist trying these as one of the offerings at our neighborhood gathering. Oh my goodness, these are so moist and yummy! The zucchini makes them moist and Silk Dark Chocolate made them delicious. Will definitely make these again.

Great chocolate flavor
I have made these several times, always using Silk Chocolate Almond for added flavor. I recently started eating gluten-free and was delighted to find I could use my gluten-free flour mix with xanthan gum to get the same results. I love that I can use up zucchini in these and that keeps them moist. Always a hit at my gatherings.

I've made these several times , I use half chocolate silk and half coconut and add some fresh coconut and chopped almonds and use banana instead of zucchini. They never seem to last long as they are good to the last bite. I also use almond flour and instead of oil I use apple sauce.

Preparation
1.
Preheat oven to 350°F.
2.
Line a muffin tin with 12 paper liners.
3.
In a medium bowl, whisk together flour, sugar, cocoa, cinnamon, baking soda and salt.
4.
In another bowl, whisk together Silk, vinegar, vegetable oil, beaten egg and vanilla until combined.
5.
Pour Silk mixture over dry cocoa mixture and stir by hand until all the flour is incorporated. Stir in the zucchini followed by boiling water. The mixture will be thin.
6.
Fill muffin liners 3/4 of the way full, sprinkle with chocolate chips and bake for 13-17 minutes until tops spring back and a tester inserted in the center of a muffin comes out clean.

2 cups Silk Original or Unsweetened Cashewmilk
1/2 cup unsweetened cocoa powder
1/2 cup peanut butter

Seriously amazing
I can't get over how using Silk Almond Milk makes recipes seem richer and more decadent, especially desserts! Dr Approved, Tummy Happy Treat!

We just made this tonight and OMG how delicious it was. I have always loved Ice Cream but it didn't love me.Now with Silk I can enjoy all my favorites without the problems.It was creamy, smooth and chocolatey and really delicious. Don't Waste the coconut milk
You can buy coconut cream, it comes in a block and is cheaper than the coconut milk. I just have to figure out how much to use. You can usually find the product in the Latin section of the grocery store. I will definitely be making this in a couple days, sans peanut butter cups. :)

Preparation
1.
Open chilled cans of coconut milk and scoop the white coconut cream from the top of each can.
NOTE: Reserve coconut liquid for smoothies!
2.
Add coconut cream and remaining ingredients to blender and puree until smooth. Chill for at least 1 hour.
3.
Pour into ice cream maker and process according to machine’s instructions.
4.
In the last few minutes of processing, add chopped peanut butter cups, if using.
5.
Serve immediately or store in freezer. If freezing, place in refrigerator for 10 minutes before serving to soften.
