Welcome to the 25th Annual Stockton Asparagus Festival!
ThiS yeAr’S FeSTivAl brings 36,000 pounds (you heard us right!) of the best locally-grown asparagus to be served at Asparagus Alley, in our famous deep-fried asparagus, steak and asparagus sandwiches, asparagus pasta, and the delicious asparagus burritos. New this year is the asparagus ice cream—be sure to try it out. Wash it all down with an asparagus margarita we call the “Aspara-rita,” or try the new “AsparaMary”—tomato beer with an asparagus spear! remember, by purchasing your Beverage/Asparagus Alley food tickets in the many locations throughout the festival (see map on page 16 of the pocket guide), all proceeds benefit over 100 local non-profits. To date, over $4.7 million has been donated to these charities. Many people do not realize that we work all year to create the largest charitable festival in California. And by that, we mean we give more “green” away! On behalf of the City of Stockton, our sponsors, committees, and volunteers—Welcome to the “Best of The West Food Fest.”

25 years and over $4.6 million has been contributed back to local charities.
We All KNOW The ANNUAl Stockton Asparagus Festival is the not-to-be-missed event of the San Joaquin valley, named in 2000 by Sunset magazine as the “Best of the West Food Fest.” What you might not know is how much of the money raised by the festival actually goes back into the community each year. here’s how it works: volunteers facilitate much of the work needed at the event, and then their donated time is converted into an hourly wage. At the end of it all, the earnings are donated to the organization each volunteer represents. The idea started twenty-five years ago, when festival co-founder and Stockton resident Joe Travale wanted to create an annual event to promote tourism throughout the entire county, and to bring money to the countless local non-profit organizations doing such great things in the community. The Asparagus Festival’s important role as a local fundraiser has only grown since then. The more hours volunteers work, the more money they earn for their respective organizations. in the past 25 years, over $4.6 million has been contributed back to local charities directly from the Stockton Asparagus Festival. 1-1/2 pounds jumbo or extra-large Californiaasparagus, trimmed
2-1/4 tablespoons butter, melted, divided
2 ounces fresh white goat cheese, crumbledinto bits (about 1/2-cup)
1/2-cup fresh, white breadcrumbsCoat asparagus spears with
1-1/2 tablespoons melted butter, then salt lightly.
Arrange in an oven-to-table shallow baking dish large enough to hold theasparagus in 1 layer.
evenly distribute cheese bits over asparagus, then sprinklewith breadcrumbs.
Drizzle remaining 1 tablespoon melted butter over breadcrumbs.
Bake at 400º F. until asparagus is tender-crisp and the breadcrumbs lightly browned, about 10 minutes.

36 California asparagus spears4 sheets of phyllo dough, thawed4 oz. Parmesan cheese, grated¼ cup butter, meltedsalt and pepper to sprinkle on top
Preheat oven to 425° FTrim ends of asparagus. Blanche asparagus in boiling salted water until lightly tender to the bite, about 3 minutes.Place one sheet of phyllo on a cutting board. Set aside the remaining sheets, cover with a damp towel. Brush the phyllo sheet with melted butter. Cut the sheet into nine
rectangles, two cuts down from the top, two cuts across. Place an asparagus spear at the bottom of the short side of the rectangle with the tip sticking out from the dough by 2 inches. Sprinkle on a teaspoon of cheese. roll up spear and seal with butter. Finish with remaining spears.Place on cookie sheet lined with parchment paper. Sprinkle with remaining cheese, salt and pepper. Cover the exposed asparagus tips with foil. Bake until golden brown and crispy 10 to 12 minutes. Serve warm.Makes 36 single asparagus straws.

tangy lamb and asparagus lettuce cups
Dressing;1/4 cup ginger, peeled andsliced1/4 cup lemon grass, sliced1/4 cup lime juice2 tablespoons fish sauce2 tablespoons water3 tablespoons sweet chili sauce
Filling;2 tablespoons sesame oil1 lb. ground lambsalt and pepper to taste1 lb Asparagus, trimmed and cut on diagonal into 1 inch pieces1 small red bell pepper, diced12 iceberg or butter lettuce leaves
For dressing, puree first 5 ingredients in blender. let stand 15 minutes to 1 hour.Strain mixture into a small
bowl. Squeeze liquid from solids and discard solids.Add sweet chili sauce.heat 1 tablespoon sesame oil in large skillet over medium heat. Add seasonedground lamb. Sautee until cooked through. Drain off fat. remove from pan andtransfer to mixing bowl. Add remaining tablespoon oil to sauté pan. Sauté Asparagus and red pepper until tender. Add to lamb. reserve ¼ cup dressing and add the remaining dressing to coat mixture well. Arrange lettuce cups on a platter. Trimming edges on any oversized leaves. Spoon approximately 2 heaping tablespoons lamb-Asparagus mixture into lettuce cups. Serve remaining sauce along side.Serve at room temperature.

SJ Mag: Are you a native of San Joaquin County—homegrown, so to speak?EZ: I am homegrown. I took a brief hiatus for college. I went to University of Nevada, Reno (UNR) for two years, during which I had a very successful ski-racing career, then came home to Stockton and finished up my degree at Pacific.
SJ Mag: From the fields to the slopes, huh? Seems like an unlikely trajectory. EZ: Not really. My family had a house in the mountains, so I was around snow quite a bit growing up. It was a natural progression for me, I think.
SJ Mag: The return to your roots is a welcome one, we assure you. What is it like to be a modern-day asparagus grower in San Joaquin County? EZ: Great. California has seen a decline in overall crop production actually, but asparagus is truly a global vegetable in terms of growth and consumption. Central Valley soils are known for producing juicy, larger-sized spears. Thicker spears are more flavorful in general.
SJ Mag: So size really does matter?EZ: Of course it does.
SJ Mag: How do you know when it’s love at first bite?EZ: There’s nothing worse than overcooked asparagus, so for me love at first bite is asparagus al dente.
SJ Mag: Every man has his breaking point, even farmers, so between you, me, and thousands of readers, do you ever get sick of asparagus? EZ: Not me. I slam it down every chance I get.
SJ Mag: How do you like it served?EZ: With a little olive oil, salt, and pepper.
SJ Mag: What are the perks of buying local?EZ: You get more flavorful asparagus, make a significant contribution to the local economy, and are more assured of the highest quality. Also, food safety is a huge issue that everyone should give consideration to.
SJ Mag: And lastly, how do local asparagus growers get down and dirty?EZ: A lot of us are hands-on bosses, so I’d definitely say on the job.
